1 package (10.75 oz) frozen pound cake loaf, cut into fourteen 1/2-inch slices
2/3 cup soft cream cheese with strawberries, raspberries or pineapple
1 can (11 oz) mandarin orange segments, well drained
Assorted bite-size pieces fresh fruit (kiwifruit, strawberry, raspberry, pear, apple)
Chocolate-flavor syrup, if desired
Toasted coconut or sliced almonds, if desired

Steps:

  • Set oven control to broil. Place pound cake slices on rack in broiler pan. Broil with tops 4 to 5 inches from heat 3 to 5 minutes, turning once, until light golden brown.
  • Spread each slice with about 2 teaspoons cream cheese. Cut slices diagonally in half to make 28 pieces. Top with orange segments and desired fruit. Drizzle with syrup; sprinkle with coconut. Arrange on serving platter.

⅓ cup chopped fresh basil
¼ cup shredded Parmesan cheese
2 cloves garlic, minced
1 tablespoon balsamic vinegar
1 teaspoon olive oil
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 loaf French bread, toasted and sliced

Steps:

  • In a bowl, toss together the tomatoes, basil, Parmesan cheese, and garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper. Serve on toasted bread slices.

1/3 cup chopped fresh or canned (drained) peaches
1/3 cup raspberries
1/4 cup vanilla, lemon or Key lime low-fat yogurt
2 bagels, split in half, or 4 slices banana bread, 1/2 inch thick
1 tablespoon prepared cinnamon-sugar

Steps:

  • Mix banana, peaches, raspberries and yogurt. Toast bagels. Sprinkle cinnamon-sugar evenly over warm bagel halves. Top each bagel half with 1/4 cup fruit mixture.

1 lb cake, sliced 1-inch thick pieces
2 tablespoons butter
1 pint fresh strawberries, washed & quartered
1 pint fresh blueberries, washed
1 pint fresh blackberries, washed
6 ounces strawberry sauce
1 lb white chocolate
1/2 quart heavy cream
powdered sugar, for garnish

Steps:

  • Preheat griddle to 400 degrees.
  • Even coat griddle with whole butter and place pound cake on griddle to brown evenly on both sides.
  • Place individual browned pound cake slices on plates.
  • Mix fruite in small mixing bowl with strawberry sauce.
  • Place fruit mixture on each slice of browned pound cake.
  • Garnish with powdered sugar.
  • Melt white chocolate and cream together in double boiler over medium heat.
  • Drizzle over fruit bruschetta and serve.

2 tablespoons butter, melted
2 tablespoons sugar
1/2 teaspoon cinnamon
fresh diced, strawberries, pineapple & kiwi
1/2 cup sour cream
2 tablespoons honey
1 teaspoon lemon zest
2 teaspoons fresh lemon juice

Steps:

  • Slice crusty rolls into 1/2-inch thick slices. Place on a baking sheet and brush with melted butter. Combine sugar and cinnamon and sprinkle over slices. Bake at 400°F 5-10 minutes or until edges are toasted. Set aside to cool. Place strawberries, pineapple and kiwi in a bowl and toss gently to combine. Place about 1 tablespoon fruit mixture on top of each toasted roll slice. Combine sour cream, honey, lemon zest and lemon juice and mix well. Drizzle over fruit.
