HAM AND SPINACH PIE
With the exception of the phyllo dough, which I always have on hand, this ham and spinach pie recipe is made entirely from Easter dinner leftovers. One of my neighbors traded me four freshly caught trout for a slice! -Teena Petrus, Johnstown, Pennsylvania

Steps:
- Preheat oven to 350°. In a large skillet, heat 1 tablespoon butter over medium heat. Add onion; cook and stir until transparent, 6-8 minutes. Add mushrooms and garlic; cook and stir until mushrooms are browned, about 6 minutes longer. Add spinach; cook until heated through., In a microwave, melt remaining butter; stir until smooth. Place 1 sheet of phyllo dough on a work surface; brush with butter. Layer with 3 additional phyllo sheets, brushing each layer. Transfer to a lightly greased 11x7-in. baking dish, letting ends extend up sides. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.), Layer dish with ham, cheese and spinach mixture; pour eggs over filling. If desired, sprinkle with salt and pepper. Top with remaining phyllo dough. Fold dough ends over filling; pinch edges to seal. Brush with remaining butter. Cut slits in the top. Bake until browned, 40-45 minutes. Cool 20 minutes before cutting.

SPINACH, HAM, AND CHEESE PIE (PYE OF SEVERAL THINGS)
Steps:
- Make pastry dough:
- Blend together flour, butter, and salt in a bowl with your fingertips or a pastry blender until mixture resembles coarse meal, with remainder in small (pea-size) lumps. Drizzle 6 tablespoons ice water over mixture and gently stir with a fork until incorporated.
- Test mixture by gently squeezing a small handful: It should hold together. If not, add more water, 1 tablespoon at a time, stirring after each addition until incorporated. (Do not overwork.)
- Turn dough out onto a work surface and divide into 2 portions. With heel of your hand, smear each portion once in a forward motion to distribute fat. Form each portion of dough into a disk. Wrap separately in plastic wrap and chill until firm (1 hour) or up to 1 day.
- Prepare filling while dough chills:
- Squeeze spinach, 1 handful at a time, to extract as much moisture as possible.
- Cook half of ham, overlapping slices, in 1/4 tablespoon butter in a 12-inch heavy skillet over moderate heat, turning, until golden. Transfer to a plate and cook remaining ham in 1/4 tablespoon more butter in same manner.
- Cook onions in remaining 1 1/2 tablespoons butter in same skillet over moderately low heat, stirring, until softened. Add flour and cook, stirring, 2 minutes. Remove from heat, then stir in mustard and cool completely.
- Assemble and bake pie:
- Preheat oven to 400°F.
- Roll out 1 piece chilled dough into a 13-inch round on a lightly floured surface and fit into a 9-inch pie plate. Spread half of onions evenly in pie shell and season with pepper. Scatter half of spinach and then half of carrots on top and season with pepper. Top with half of ham and half of cheese, pressing down to compress layers. Repeat layering with remaining filling ingredients, seasoning with pepper.
- Roll out remaining dough into an 11-inch round on floured surface and place on top of pie. Trim edges of top and bottom crusts, leaving a 1/2-inch overhang, then seal edges and crimp.
- Beat egg and brush some over top crust. Cut several steam vents in center.
- Bake pie on a baking sheet in middle of oven until top is golden and pie is steaming, 50 to 55 minutes. Cool 15 minutes before serving.
LATTICE TOP HAM/CHEESE & SPINACH PIE
I made this for a lunch party for my girlfriends today.. It was easy because I make the dough in the bread maker. Everyone enjoyed and it looked pretty!! We also had a nice fruit salad.

- Make the dough in your bread machine.
- Combine all filling ingredients in large bowl and set aside.
- Reserve 1/3 of the dough and set aside.
- Roll out remaining dough into a 12" circle; press into a greased 9x1 1/2" springform cake pan.
- Spoon in the filling.
- Roll reserved dough& cut into 12 3/4" strips.
- Arrange 6 strips lengthwise and 6 strips crosswise and press with fork to seal to bottom dough.
- Bake for 45 minutes at 375 degrees.

HAM 'N' CHEESE PIE
Steps:
- In a greased 10-in. quiche dish or pie plate, layer the ham, Swiss cheese, bacon, cheddar cheese, onion and green pepper. Place the remaining ingredients in blender in the order given; cover and process for 35-40 seconds. Pour over the meat, cheese and vegetables; do not stir. , Bake, uncovered at 350° for 30-35 minutes or until set and lightly browned. Let stand for 5 minutes before cutting.

PEACH LATTICE PIE
Meet the star of every summer cookout or picnic: the peach pie. Ripe fruit is encased in an extra-flaky pie crust with a lattice top-you know eating this sweet treat will be the highlight of the season.

- For the Crust: In a large bowl, whisk together flour, sugar, and salt. Use your fingers to break up butter and cut it in, until mixture resembles mostly coarse meal with a bunch of hazelnut-size pieces remaining. Drizzle with ice water and stir with a fork until most of flour is moistened (mixture will still be shaggy and not at all formed into a dough). If there is dry flour remaining, add more ice water, 1 tablespoon at a time, until a piece will hold together when pressed between your fingers.
- Turn dough out onto a clean surface and gather into a mound. Using the heel of your hand, smear dough away from you, working your way down to create long layers of butter. Fold dough over onto itself, as if closing a book. Repeat twice more. (There should be plenty of large, flat pieces of butter visible in dough.)
- Divide dough into two pieces, one about 12 ounces, the other about 1 pound. Pat smaller piece into a round and larger into a rectangle. Wrap each loosely in plastic, then use a rolling pin to flatten and finish compacting (use plastic rather than your hands to maneuver dough-the less body heat transferred, the better). Refrigerate until firm, at least 1 hour and up to 1 day.
- For the Pie Filling: Prepare an ice-water bath and bring a large pot of water to a boil. Cut an X in flower (non-stem) end of each peach. Drop in boiling water and cook just until skins begin to peel back, about 30 seconds. Transfer to ice-water bath, then peel and pit peaches. Cut into 1/2-inch wedges (you should have 7 to 8 cups).
- In a large bowl, stir together sugar and vanilla seeds, then add peaches, lemon juice, and salt; stir to combine. Let stand 30 minutes, then stir in cornstarch. Set a colander over a heatproof bowl; transfer peaches to colander to drain. Transfer liquid in bowl to a small saucepan, then transfer peaches to bowl. Bring liquid to a boil over medium-high heat, then cook, whisking constantly, until thickened to the consistency of loose pudding, 1 to 2 minutes. Stir into peaches; let stand 15 minutes.
- Assembly: On a lightly floured surface, roll out smaller piece of dough into a 13-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Fill with peach mixture. Roll larger piece of dough out into an approximately 12-by-16-inch rectangle, a scant 1/8 inch thick. Using a pastry wheel or large knife, cut into 1 1/2-to-2-inch-wide strips.
- Place 6 strips atop pie, leaving a little space between them. Fold back every other strip, and lay a strip across center of pie, perpendicular to original strips. Unfold folded strips, then fold back remaining strips. Lay another horizontal strip across pie. Repeat folding and unfolding strips to weave a lattice pattern. Repeat on remaining side. Press edges together to seal. Trim dough to a 1-inch overhang, fold under, and crimp as desired. Refrigerate 15 minutes.
- Preheat oven to 400°F. Brush top of chilled pie with beaten egg. Place on middle rack of oven and slide a baking sheet or a piece of aluminum foil onto rack below to catch any overflow. Bake 15 minutes, then reduce temperature to 375°F and bake until bubbling in center and top and bottom crusts are browned, about 1 hour, 30 minutes more.
- Let cool completely on a wire rack, at least 4 hours. Pie is best eaten the day it's made, but can be stored, lightly covered, at room temperature, up to 2 days.
SPINACH AND HAM PIE

- To make the pastry, combine the butter and cream cheese in a food processor or standing mixer. Process until combined. Add the cream and process until combined. Add the flour and 1 1/2 teaspoons of the salt and process until just combined and a ball forms. Turn it out onto a floured surface, divide into 2 pieces, and form into discs. Cover in plastic wrap and refrigerate for at least 30 minutes.
- Meanwhile, preheat the oven to 350 degrees.
- Place the spinach in a large pot over medium-high heat. Cover and cook, stirring occasionally, until all the leaves are wilted, 4 to 5 minutes. Remove from the pot and set in a colander to drain until cooled. Squeeze it dry and chop; you should have 2 cups.
- Meanwhile, place the olive oil and onion in a medium-size skillet over medium heat. Cook, stirring, until the onion is translucent, about 4 minutes. Cool slightly.
- In a large bowl, combine the ricotta cheese, Parmesan cheese, 2 of the eggs, 1 1/2 teaspoons of the remaining salt, and the pepper. Stir in the spinach, onion, and ham, if desired.
- On a lightly floured surface, roll out 1 piece of dough to fit a 9-inch pie plate. Trim the dough edge to hang 1/4 inch over the sides. Spread the spinach mixture evenly over dough. Roll out the second piece of dough and drape over the spinach. Trim the dough to hang over the bottom crust by 1/2 inch. Fold the top crust over and inside the bottom.
- Using your fingers, crimp the dough to seal. Cut a few vents in the top. Beat the remaining egg with a little water and brush lightly over the pie. Bake the pie for 1 hour or until it is golden brown. Let rest for 15 minutes before cutting and serving.
SPINACH, LEEK, AND CHEESE PIE

- 1. Heat the oil in a large skillet over medium-low heat. Add the onion and a pinch of salt. Cover and simmer, stirring occasionally, 6 minutes. Add the leek, season with more salt and the pepper, and continue to cook, stirring occasionally, until the vegetables are very soft and translucent, about 8 minutes. Transfer to a bowl and set in an ice bath to cool.
- 2. Meanwhile, preheat oven to 325°F.
- 3. Generously coat an 8-inch round nonstick springform pan with butter and chill.
- 4. Sift together the flour and baking powder in a medium bowl; set aside.
- 5. Combine the yogurt, feta, onion-and-leek mixture, spinach, and dill in a large bowl. Add the eggs and stir to combine. Using a rubber spatula, gently stir in the flour mixture and season with more salt and pepper. Pour into the prepared pan, gently tapping the sides to level the top.
- 6. Bake for 30 minutes. Increase heat to 425°F and bake until golden brown and set in the center, about 10 minutes more.
- 7. Transfer to a wire rack and cool for 10 minutes before unmolding.
- 8. Cut into wedges and serve.
THREE CHEESE SPINACH PIE
This was passed on to me by a friend who is a celiac sufferer. It uses rice as the crust and is great for brunch or as light summer meal...not sure where she got it but it tastes great. (I sometimes add a touch of nutmeg to the filling for a bit of variety) ETA (7/2/2014): I have seen that folks are having issues with the cooking time, so have adjusted accordingly.

- Combine rice and boiling water in a 9" plate.
- Cover and let stand 5 minutes.
- Stir in salt, mozzarella and egg and use spoon to press and form into a pie shell.
- Combine spinach, feta cheese, onion and eggs.
- Mix well.
- Pour mixture into rice shell.
- Top with tomato slices and sprinkle with parmesan.
- Bake at 400 degrees for 45-60 minutes, depending on oven.

- Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch pie pan with non-stick cooking spray.
- Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Squeeze extra water out of the spinach and add the spinach to the skillet. Continue cooking until the spinach is heated through and the extra water evaporates. Spoon mixture into pie pan.
