COLD POACHED TROUT WITH HORSERADISH SAUCE



Cold Poached Trout With Horseradish Sauce image

Number Of Ingredients 6

Dry vermouth or white wine
2 whole trout, dressed, with or without heads
1/2 cup sour cream
1 to 2 tablespoons drained white horseradish
1 tablespoon minced dillweed
2 small Kirby cucumbers, sliced as garnish, if desired

Steps:

  • Bring enough vermouth or wine to rolling boil to cover trout halfway. Add trout and return to rolling boil. Turn off heat; cover pan and allow trout to cook in hot liquid 12 to 14 minutes. Remove from pan and cool. When cool enough to handle remove skin of the fish.
  • Combine sour cream, horseradish and dill weed for dressing.
  • Trout may be served cool or cold with sour cream dressing. Garnish with cucumber slices, if desired.

3 lbs lake trout or 3 lbs salmon, cleaned and scaled
1 teaspoon salt
1/4 cup butter, melted
2 tablespoons parsley, minced (fresh is best)
cheesecloth
1/4 cup grated horseradish
1 1/2 tablespoons vinegar
1/3 teaspoon salt
1/8 teaspoon cayenne
1/3 cup heavy cream, whipped

Steps:

  • Tie trout up in cheesecloth and lower into salted, simmering water; cook for 30 minutes.
  • Lift out carefully, remove cheesecloth, dress fish with melted butter and parsley.
  • For the horseradish sauce: Combine first four ingredients and chill. Just before serving, whip cream and fold in horseradish mixture.

Simple herb-baked trout & horseradish image

A super-simple whole baked fish with hot horseradish, zesty lemon and herbs - parsley, dill and thyme all work well

2 whole rainbow trout , gutted and cleaned
1 tbsp olive oil
1 lemon , thinly sliced
sprigs of various herbs (parsley, thyme and dill would all work well)
fresh horseradish , grated, to serve (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Lay the trout over a lightly oiled baking tray and stuff the fish cavity with slices of lemon and herbs. Season generously all over and drizzle with the remaining oil.
  • Bake in the oven for 20 mins until the fish is cooked through - the eyes will have turned white and the flesh will be soft to touch. The trout can be served as they are with your favourite seasonal vegetables, but for an added extra touch, peel away the top layer of skin and grate over fresh horseradish before serving.

7 1/2 ounces rye bread, sliced
3 tablespoons dill weed
3 tablespoons horseradish, prepared
4 ounces salmon, smoked
48 ounces rainbow trout
1/2 cup butter, melted
black pepper, to taste
1/8 teaspoon saffron, for garnish
3 cups fish stock
3 cups heavy cream
1/4 teaspoon saffron
salt and pepper

Steps:

  • Note: The time is commercial broiler. This is a resturant recipe. This makes 12 four oz servings. The saffron called for in the garnish is 2 pinches. The sauce starts with the fish stock ingredients.
  • Finely chop the rye bread. Mix all fish ingedients but the trout and set aside.
  • Use 1/2 cup of this per trout portion. Broil until trout turns opaque and crust is a golden brown. Using a commercial broiler five minutes. Top with the saffron sauce.
  • Sauce: Reduce the stock, cream and saffron together until half by cooking. Season with salt and pepper.
  • Note the time in this is a guestimate. The only time specified is commerical.

1 1/2 cups flaked smoked trout or smoked whitefish
2 tablespoons chopped green onion
2 teaspoons drained capers
1/2 teaspoon grated lemon peel
1/4 teaspoon ground pepper
1 large egg, beaten to blend
1/4 cup whipping cream
1 cup fresh breadcrumbs from French bread
2 tablespoons (about) vegetable oil
Horseradish Cream

Steps:

  • Combine trout, green onion, capers, lemon peel and pepper in medium bowl. Season with salt. Stir in egg, cream and 1/2 cup breadcrumbs to blend. Form mixture by 1/4 cupfuls into eight 1/2-inch-thick fish cakes.
  • Place remaining 1/2 cup breadcrumbs in shallow dish. Roll fish cakes in breadcrumbs, coating completely. Heat 2 tablespoons oil in large skillet over medium heat. Working in batches and adding more oil as necessary, cook fish cakes until golden brown, about 3 minutes per side. Serve with Horseradish Cream.

1 fillet wild lake trout
3 tablespoons olive oil
1 lemons or 2 tablespoons lemon juice
2 -4 shallots, minced
1 tablespoon black peppercorns, cracked
2 teaspoons salt, Herbamare or 2 teaspoons salt substitute
thyme, tarragon, dill, chives, garlic chives

Steps:

  • Preheat oven to 400°F.
  • Line baking pan with aluminum foil or parchment paper.
  • Wash fish fillet and pat dry.
  • Finely mince shallots.
  • Slice lemon.
  • Pour olive oil over both sides of fillet. (i put the oil on the paper or foil and coat one side then the other.).
  • Place lemon slices on top of oiled paper or foil. Top with shallots, herbs and half of cracked peppercorns and salt.
  • Bake for 20 minutes.

3/4 cup mayonnaise
1/2 cup sour cream
3 tablespoons chopped fresh dill leaves
2 tablespoons drained bottled horseradish, or to taste

Steps:

  • Discard skin and bones from trout and break into pieces. In a food processor pulse trout until finely chopped. Stir in remaining ingredients and salt and pepper to taste. Serve dip with pumpernickel toasts. Makes about 2 cups.

Just made this tonight and it was a huge hit, even with DH and ALL my boys! (No small trick) Appropriate for people on gluten free diets, no carb diets, and also for Passover. You can substitute other mild fish, and experiment with different types of nuts.

1 medium lake trout, skinned and filleted (Feel free to substitute other types of mild fish)
1/2-1 cup ground almonds (Feel free to substitute other types of nuts)
1 teaspoon paprika
1/2 teaspoon salt
1 garlic clove, minced (optional)
dried herbs (optional)

Steps:

  • Preheat oven to 415°F.
  • Mix together nuts, paprika, salt, and garlic and/or herbs if you choose to use them.
  • Spread on a plate.
  • Wash and pat dry fish fillets.
  • Press each fillet into the nut mixture, coating both sides.
  • Bake in ungreased baking pan (the oil content in the nuts is sufficient to keep fish from sticking) until coating is crispy-ish and fish flakes (about 15 minutes or so).
