CHRISTINA'S KILLER DIP
This is my sister's dip. She got the recipe while backpacking in Europe a few years ago. She is now forced to make it at every party she has. People smell it cooking and stand drooling by the oven until it comes out! (Many have not been able to wait for the cooling part and burned their mouths to get to it first). You might have to make 2 portions. **NOTE: Please CHECK the sodium content before you choose a ranch dressing mix, because it will affect the flavor! Some people have complained it is "too salty". Please also make sure you are using only a 1 ounce packet; there are other sizes from various manufacturers. Too much mix throws off the balance of flavors. My sister and I always use the Hidden Valley Ranch Original and we do not have any problems with it :) You can also substitute half the sour cream for prepared Ranch Dressing and skip the dry mix. It will come out a bit wetter.

Steps:
- Defrost the spinach.
- Place it in a colander and press it until as much moisture as possible is removed.
- Mix all ingredients (1/2 of the cheddar), and blend well.
- Put it in a shallow baking dish (stoneware works best) in the oven for 20 minutes at 350°F.
- Remove from oven.
- While still hot top it with remaining cheese, heat in oven again for 5 minutes.
- Remove and cool below lava stage and serve.
- Goes well with tortilla chips.
KRISTI'S GF OLD FASHIONED PEANUT BUTTER COOKIES
Just like my grandmother used to make. Chewy in the middle and crunchy on the outside, would be PERFECT with a glass of milk or equivalent. :) See this site for more photos: http://crystalstair.wordpress.com/2008/08/12/recipe-kristis-gluten-free-old-fashioned-peanut-butter-cookies/

Steps:
- Preheat your lovely oven to 350 degrees F.
- Cream the butter, shortening and sugars together until fats are nice and fluffy.
- Add egg and combine.
- Switch to your paddle attachment and add flours, xanthan gum, salt, baking soda and baking powder a little at a time until combined. Dough will be thick! Add peanut butter last and beat until smooth.
- Portion out dough into 1 oz (by weight) portions. Or, if you don't want to break out the scale, make 24 portions. Roll portion dough into a ball shape.
- On a plate or in a shallow bowl pour out about 1/2 cup granulated sugar. Roll the cookie dough balls in sugar until completely coated. Add more sugar as needed.
- Put sugared dough balls on an ungreased cookie sheet, leaving ample room for expansion. I got about 12 on an AirBake sheet. Flatten balls with tines of a fork, then turn 90 degrees and do it again to form a criss-cross pattern (try not to do this too hard or you'll have very flat, but chewy cookies).
- Bake for 10 minutes, being sure to rotate the cookies at 5 minutes to minimize burning. Allow to cool for 2 or 3 minutes on cookie sheet so cookies will set properly. Cool and devour.

KRISTI'S SUGARED PECANS
This recipe was given to me by a dear friend, Kristi Olivieri. She brought me in a bag of these to the office one day during the Holiday time. I shared them with the girls at the office and brought the rest home to my husband who absolutely loved them. Kristi says: "Great paired with a glass of wine. Also great for gift giving." Happy Holidays everyone!
