1 pkg. (11.9 oz.) KRAFT Deluxe White Cheddar & Garlic & Herbs Macaroni & Cheese Dinner
1 cup tightly packed chopped fresh spinach
1/4 cup chopped roasted red peppers
1/4 cup halved Kalamata olives

Steps:

  • Prepare Dinner in large saucepan as directed on package.
  • Add spinach and peppers; cook and stir on medium heat 1 min. or until heated through.
  • Top with olives.

Craftier Than Kraft Macaroni and Cheese image

This doctored up version of boxed mac and cheese is quick and easy, but good enough to pass off as home-made. RECIPE CORRECTION SUBMITTED TO CORRECT TYPO ON THE MILK. :)

1 (7 1/4 ounce) box Kraft macaroni and cheese (or any brand powdered cheese type mac and cheese)
2 ounces cream cheese, cubed
1/4 cup milk
2 tablespoons butter
2 ounces Velveeta cheese, cubed (or any brand processed cheese spread)
1/2 cup shredded sharp cheddar cheese
seasoning salt
parsley
garlic powder (optional)
shredded cheddar cheese, for topping (optional)
paprika

Steps:

  • Boil salted water and cook the macaroni.
  • In a microwaveble bowl, add cream cheese and milk.
  • Microwave the cream cheese and milk for about 20 or 30 seconds then stir well so that the cream cheese is melted.
  • Drain macaroni and put it back in the pot.
  • Add the powder cheese from the box, melted cream cheese/milk combination, butter, Velveeta and cheddar cheese.
  • Add seasoning salt, parsley and garlic powder (if you choose to use it).
  • Cook over medium heat until all cheese is melted (add small amounts of milk as needed to keep the consitency you like).
  • Sprinkle with paprika and serve -- OR top with more shredded Cheddar and bake at 350 degrees for about 5-7 minutes, then sprinkle with paprika before serving.

This Mediterranean Macaroni and Cheese is a refreshing take on the rich classic. Jim Raftus, a reader from Elkhart, Indiana, uses the sunny flavors of tomato, olives, and feta in this mac and cheese.

Coarse salt and ground pepper
1/4 cup (1/2 stick) unsalted butter, plus more for baking dish
1 can (14.5 ounces) diced tomatoes, drained
1/3 cup pitted Kalamata olives, chopped
1/2 teaspoon dried oregano
8 ounces elbow macaroni
1 garlic clove, minced
1/4 cup all-purpose flour
2 cups whole milk
8 ounces feta, crumbled

Steps:

  • Preheat oven to 400 degrees. Set a large pot of salted water to boil and butter an 8-inch square baking dish. In a small bowl, combine tomatoes, olives, and oregano.
  • Cook pasta 2 minutes less than package instructions; drain pasta and return to pot. Meanwhile, melt butter in a medium saucepan over medium. Add garlic; cook until fragrant, 1 minute. Add flour and cook, stirring constantly, 1 minute. Whisk in milk and bring to a boil. Reduce heat to medium-low; simmer, whisking constantly, until sauce thickens, 3 minutes. Remove from heat; whisk in 4 ounces feta. Stir in tomato mixture. Season with salt and pepper. Pour mixture over pasta; stir to combine.
  • Pour pasta mixture into dish and top with 4 ounces feta. Bake until sauce is bubbling and cheese begins to brown, 20 to 25 minutes.

1/2 cup cubed extra-sharp cheddar cheese
1/4 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
1 egg
1/2 cup milk
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 375. Grease a 2-qt. casserole dish. Prepare the deluxe macaroni and cheese dinner as directed on the package. Combine all the cheeses together, In a small bowl beat the egg, milk and pepper together. Spoon half the prepared macaroni in the casserole dish. Top with half the cheese. Repeat the layers. Drizzle egg mixture over the top.
  • Bake about 15 minutes until center is set and macaroni is heated through.

  • To prepare the cheese sauce, place all ingredients into a medium sauce pan and heat until the cheese is melted and the mixture blended. Remove from heat and store in refrigerator for later use or mix one cup of heated cheese sauce to three cups of cooked pasta and serve immediately.
  • Note: If you want this to look and taste just like the boxed mix, use all of the salt, butter and use orange food coloring. Otherwise, you can cut back on the salt and butter and omit the food coloring for a healthier version. This will all depend on how finicky your child is.
  • Another tip to make this extra healthy is to add cooked pureed sweet potatoes and/or cooked pureed cauliflower with a little milk to thin them down. The taste only changes a bit and you are getting a healthier version of the copycat recipe into your child. We slowly added these vegetables over time to get our daughter used to the taste and now her cheese sauce is 1/3 cheese sauce, 1/3 pureed sweet potato and 1/3 pureed cauliflower. (She knows we add in the vegetables and is fine with it!)
