OKASAN'S JAPANESE STEAMED SALMON



Okasan's Japanese Steamed Salmon image

This recipe is easy to put together and very healthy! Be sure to cook the liquid long enough to reduce it and spoon it on top.

1 (1 pound) salmon side, bones removed with pliers
1 cup chicken broth
2 tablespoons minced fresh ginger root
1 tablespoon dried minced onion
2 tablespoons soy sauce
1 tablespoon mirin (Japanese sweet wine)
1 tablespoon sesame oil

Steps:

  • Quarter or halve salmon side. Set aside.
  • Combine chicken broth, ginger, minced onion, soy sauce, mirin, and sesame oil in a large, heavy pot. Bring liquid to a boil over medium-high heat, then reduce heat to a simmer.
  • Place a steamer basket into the pot. Lay salmon in the steamer basket in a single layer. Cover pot and steam, 5 to 7 minutes, checking salmon for desired doneness. Remove salmon and keep warm.
  • Boil liquid until it has reduced into a sauce, 2 to 4 minutes. Spoon over steamed salmon.

Mother Kossman's recipe. It's very old donald was 91 and this was his mothers recipe which is very good still yet

1 1/2 cups sugar
1/2 cup butter
1 cup mashed banana, which was 2 bananas for me
1/2 teaspoon salt
1 teaspoon vanilla
2 egg whites, beaten i used the yolks also i think so did she
4 tablespoons buttermilk, i used 6 tablespoons
2 cups flour
1 teaspoon baking soda

Steps:

  • Cream butter and sugar. add bananas and yolks
  • Beat egg whites until stiff.
  • Combine dry ingredients.
  • Add vanilla and milk to creamed mixture.( i also added teaspoon of lemon juice for baking soda).
  • Add dry mixture.
  • Fold in whites.
  • Pour into greased cake pan.
  • Bake in 350 degree oven until the cake springs back when touched. i used bundt pan and it took 40 minutes but 9x13 is 30 minutes.

1 1/2 cups sour cream
2 tablespoons butter, melted
2 eggs, beaten
1 3/4 cups flour
4 tablespoons cocoa
1/4 teaspoon salt
1 tablespoon vanilla
2 teaspoons baking soda

Steps:

  • mix wet ingredients add dry mix.
  • pour into greased floured 9x13 pan
  • Bake at 350°F for 30 minutes.

old recipe again darlene kossman ann prauerer this is really good i also added some french fried onions with this and instead of milk i dusted the fish with powdered milk as my cheap fish has alot of added water ,if thats not a concern for you do add the liquid milk .

1 lb fish fillet
1 tablespoon onion, minced
4 tablespoons butter
1/2 teaspoon salt
1 1/2 cups breadcrumbs
1/4 cup American cheese, grated
1/2 cup milk

Steps:

  • thaw the fillets really do this i just put the fillets whole
  • cut into serving size.
  • place in a shallow baking dish.
  • saute the onions in the butter til browned i.
  • salt and pepper.
  • add bread crumbs and cheese.
  • toss.with fork until well mixed.
  • spread over fillets.
  • and press down firmly.
  • pour the milk around the fish bake in a 350 degree oven for about 45 minutes. i did this uncovered worked fine baked potatoes at same time.
