COLD SPICY KIMCHI NOODLES

Cold Spicy Kimchi Noodles image

Could this be the anti-ramen? Either way, it's my new favorite cold pasta, custom-made for hot summer weather because it is refreshingly and unapologetically spicy. Make the sauce in advance, but wait to toss with the noodles until just before serving. While you could order Korean ingredients online, it's more fun to go to a Korean supermarket, if only to see all the different types of kimchi. Korean red pepper flakes are without seeds, and only medium hot, so you can use a lot.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 23

1 cup finely chopped kimchi, plus 2 tablespoons kimchi juice
1 medium garlic clove, grated
2 teaspoons grated ginger
2 tablespoons brown sugar
1 tablespoon gochujang (Korean hot pepper paste)
1 tablespoon Japanese red miso
1 tablespoon sesame oil
1 tablespoon rice vinegar
2 tablespoons lime juice
1 teaspoon orange zest
1 teaspoon fish sauce
1/2 teaspoon gochugaru (Korean red pepper flakes)
Salt
8 ounces flat rice noodles or soba noodles
1 medium cucumber, peeled, halved and sliced into half-moons (about 1 cup)
1 cup halved cherry tomatoes
3 or 4 large red radishes, sliced into thin rounds
1/2 cup scallions, slivered
1 serrano chile, thinly sliced (optional)
3 eggs, boiled for 7 minutes, cooled in ice water, peeled and halved (cook 9 minutes for a firmer yolk)
2 tablespoons toasted sesame seeds
Cilantro sprigs or chopped cilantro, for garnish
Lime wedges, for serving

Steps:

  • Make the sauce: Put the kimchi, juice, garlic, ginger, brown sugar, gochujang, miso, sesame oil, rice vinegar, lime juice, orange zest, fish sauce and gochugaru in a mixing bowl, and stir well to combine. Taste and adjust salt. Let stand at room temperature for at least 10 minutes (or you can store overnight in the fridge, covered).
  • Bring a large pot of generously salted water to a boil. Add noodles and cook for about 5 minutes, or until cooked through but still firm. Drain in a colander, transfer to a bowl of cold water to cool, then drain again and set aside, covered with a towel.
  • Just before serving, put noodles in a large mixing bowl. Add the sauce, along with cucumber, tomatoes, radishes, scallions and chile (if using) and toss gently to coat. Divide among individual serving bowls. Top each bowl with a halved egg, sesame seeds, cilantro and a squeeze of lime juice.

KIMCHI NOODLE SOUP WITH WILTED GREENS

Kimchi Noodle Soup With Wilted Greens image

Jjigae, a classic Korean kimchi stew, is the inspiration for this spicy, comforting soup. Unlike many soups, this one doesn't require a lengthy simmer on the stovetop to develop complex flavor, as its ingredients bring complexity: Soy sauce adds umami and kimchi provides pleasant funkiness. Should you want to add shrimp, toss them in with the greens in Step 4, as they only take a minute or so to cook through. While jjigae is traditionally served with white rice, here it is served with delightfully chewy Japanese udon noodles. Although garnishes are always optional, the suggested toppings really take it there, and you should.

Time 30m

Yield 4 servings

Number Of Ingredients 11

1 (10-ounce) package dried udon
2 tablespoons neutral oil
6 scallions thinly sliced, plus more for garnish
1 (3-inch) piece fresh ginger, peeled and finely chopped
3 garlic cloves, finely chopped
Kosher salt
1 cup roughly chopped kimchi, plus 1/3 cup kimchi juice
5 cups vegetable or chicken stock
1/2 cup soy sauce
4 cups roughly chopped greens, such as kale, spinach, tatsoi or bok choy
White sesame seeds, soft-boiled eggs, chile oil and roughly chopped cilantro, for serving (optional)

Steps:

  • Bring a large pot of water to a boil and cook udon according to package instructions. Drain and distribute evenly among serving bowls.
  • In a large Dutch oven or pot, heat the oil over medium heat. Add the scallions, ginger and garlic, and cook until they begin to soften and the garlic is fragrant, 2 to 3 minutes. Season well with salt.
  • Stir in the kimchi and kimchi juice and cook for 1 minute.
  • Add the stock and the soy sauce sauce and stir together to combine. Bring to a simmer and stir in your greens. Allow everything to simmer until the greens are tender and the flavors have come together, 5 to 10 minutes. Taste and adjust with salt if needed.
  • Ladle the soup over the udon and garnish with scallions and other toppings to taste.

From seonkyounglongest.com
  • Combine the Korean stock, kimchi juice, salt, sugar and vinegar and mix well. Adjust the salt, sugar and vinegar amount to your kimchi’s saltiness and sourness. To your taste, you can place in a freezer (in that case, place the stock mixture in a freezer safe airtight container) for a couple hours for a slush like soup. If you can’t wait for a couple hours (like myself), just season the soup base a bit more strongly now so we can add some ice later.
  • Combine kimchi, gochujang, sugar, sesame oil and sesame seeds in a mixing bowl and set aside. You could pass this seasoning the kimchi part, if your kimchi is already very salty and pungent.
  • Bring a pot of water to boil and cook egg about 7 to 8 minutes or until it’s hard boiled. Remove the egg from the boiling water, let it cool then peel and set aside.
  • In the same boiling water, add somyun or angel hair pasta. Cooking by following the direction of the package you are using. I like to add ice cubes while boiling, it make the noodles more elastic and chewier texture which is perfect for cold noodles.
