MEXICAN FRUIT COCKTAIL WITH SWEET LIME YOGURT

Steps:
- For the sweet lime yogurt: Mix together the yogurt, sweetened condensed milk and lime zest and juice in a medium bowl. Cover and refrigerate until ready to serve.
- For the fruit cocktail: Add the lime zest and juice to a pitcher with the sugar and 1 cup water. Stir until the sugar dissolves--you'll know this has happened when the liquid turns from cloudy to clear.
- Add the mango, papaya, grapes, maraschino cherries, pineapple and melon to a large bowl. Gently mix the fruit with some of the lime syrup, adding more until it is as sweet as you would like it. (The lime syrup will keep for 1 month refrigerated.)
- Serve with the sweet lime yogurt.
QUICK-PICKLED WATERMELON

- Add the rice wine vinegar, palm sugar, fish sauce and dried chiles to a saucepan and bring to a boil. Place the watermelon into a bowl over an ice bath. Once the liquid comes to a boil, pour over the watermelon and stir to combine until the mixture has cooled.
- Add to a platter of cheeses, meats, crackers, dried fruit, etc.
SIZZLING WATERMELON
Steps:
- Combine the watermelon and one-third of the mint in an airtight container and refrigerate overnight.
- Mix together the chile de arbol, salt and sugar. Finely chop the remaining mint.
- Arrange the watermelon on a plate and sprinkle with the chile de arbol mixture. Top with the mint, orange zest and watermelon candy. Enjoy ice cold.
MARINATED WATERMELON SALAD WITH SPICY CHIPOTLE-LIME VINAIGRETTE
This is one of those salads that the longer it sits, the better it gets. The heat from the chipotle chili powder is tamed by the juicy watermelon, sweet mango and crisp cucumber.

- For the spicy chipotle-lime vinaigrette: Whisk together the honey, olive oil, vinegar, lime zest and juice and chipotle chile powder in a small bowl. Season with salt to taste.
- For the watermelon salad: Combine the watermelon, red onion, mango and cucumber in a medium bowl.
- Pour the vinaigrette over the mixture and toss to coat. Cover and refrigerate for 30 minutes or until ready to serve. Just before serving, add the mint and toss to combine.
