This makes a great side dish with chicken or fish, the dried chili flakes are only optional I like to add in for a little heat you may omit if desired, use a good quality chicken broth for this, make certain to saute the orzo until just lightly browned it really improves the flavor of this dish! ;)

3 -4 tablespoons butter
1 medium onion, finely chopped
1 -2 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes (or to taste)
1 1/2 cups uncooked orzo pasta
2 -3 tablespoons fresh minced garlic
3 cups canned chicken broth
1/2 cup grated parmesan cheese
1 -2 teaspoon coarse black pepper (or to taste)
seasoning salt (to taste) or white salt (to taste)

Steps:

  • Melt butter in a medium heavy saucepan over medium heat, add in onion, thyme and red pepper flakes (if using) saute for about 3 minutes.
  • Add in orzo and cook stirring with a wooden spoon until orzo is slightly browned (about 3-4 minutes).
  • Add in garlic and cook for 2 minutes.
  • Slowly add in the chicken broth; bring to a boil, reduce heat to low.
  • Cover and simmer until the orzo is tender and the liquid is absorbed (about 20 minutes).
  • Mix in the Parmesan cheese, salt and black pepper.
  • Transfer to a serving bowl and sprinkle with more Parmesan cheese if desired.

From Cooking Light, this is a wonderful side or light main dish. It is good even without the pine nuts if you don't have them on hand, also any herb will work for the basil, you just may need a little more or less depending on the herb.

1 tablespoon butter
1 cup orzo pasta
1 1/4 cups low sodium chicken broth
1 1/4 cups water
1/4 cup parmesan cheese, fresh is better
2 tablespoons fresh basil, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
4 teaspoons pine nuts, toasted

Steps:

  • Heat butter in a medium saucepan over medium heat. Add orzo and cook 3 minutes, stirring constantly.
  • Stir in broth and water; bring to a boil. Reduce heat and simmer until liquid is absorbed, and orzo is done, about 15 minutes.
  • Remove from heat; stir in cheese, basil, salt and pepper. Sprinkle with pine nuts. Serve immediately.

For the very best results us a good-quality chicken broth for this, you can sub the same amount of uncooked rice for the orzo. I have even added some cooked cubed chicken to this soup, this is one of my family's favorite soups, you will love this!---- see my recipe#118258

8 cups chicken broth
3/4 cup uncooked orzo pasta (or use same amount uncooked rice)
salt
black pepper
2 large eggs
1 lemon, juice of
grated parmesan cheese (optional I like to sprinkle it on top!)

Steps:

  • Bring the chicken broth to a boil in a pot.
  • Add in the orzo or rice; simmer uncovered until the orzo or rice is cooked (about 10 minutes).
  • In a medium heat-proof bowl whisk together eggs and lemon juice until frothy.
  • Remove a ladle of hot broth from the pot and slowly add the broth to the egg mixture whisking vigorously; pour the mixture back into the hot soup.
  • Remove immediately from the heat (DO NOT LET BOIL!).
  • Ladle into bowls and sprinkle with Parmesan cheese.

KITTENCAL'S PARMESAN GARLIC BREAD OR GARLIC TOAST

For a nice change substitute finely shredded white cheddar cheese for the Parmesan cheese and fresh chopped chives for the parsley and also you could add in 1/4 cup mayo in with the butter mixture :)

1 loaf French bread (not the long thin kind)
1/2-3/4 cup butter, softened (no substitutes)
1 -2 tablespoon fresh minced garlic
2 teaspoons dried parsley or 2 tablespoons fresh parsley
1/3 grated parmesan cheese (you may increase slightly if desired)
1 pinch salt (or to taste)

Steps:

  • Set oven to 375°F.
  • ** FOR GARLIC BREAD; cut slices down the length of the bread about 1-inch intervals without cutting all the way through.
  • In a bowl, combine the softened butter with garlic, parsley and Parmesan cheese; mix well to combine.
  • Spread the butter/garlic mixture between bread slices, and then on the top of the loaf (you may sprinkle more Parmesan cheese on top of the loaf if desired).
  • Wrap the bread in heavy-duty foil leaving the top partially uncovered.
  • Bake until heated through (about 15 minutes).
  • ** FOR GARLIC TOAST; slice the bread into slices, then spread the garlic butter mixture over the top of each slice of bread, then sprinkle more Parmesan cheese over the top of each slice or you can sprinkle shredded cheddar cheese on top in place of the Parmesan.
  • Place onto a baking sheet and bake (350 degrees F) until lightly toasted to desired doneness.
  • Serve warm.
  • TO MAKE AHEAD: Combine all ingredients (except the bread) store covered in refrigerator for up to 3 days or freeze in a covered container ----- this bread can be made without the addition of the Parmesan cheese if desired, but of course it's better with the cheese!
