KUNG PAO CHICKEN
Spicy chicken with peanuts, similar to what is served in Chinese restaurants. It is easy to make, and you can be as sloppy with the measurements as you want. They reduce to a nice, thick sauce. Substitute cashews for peanuts, or bamboo shoots for the water chestnuts. You can't go wrong! Enjoy!

Steps:
- To Make Marinade: Combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil and 1 tablespoon cornstarch/water mixture and mix together. Place chicken pieces in a glass dish or bowl and add marinade. Toss to coat. Cover dish and place in refrigerator for about 30 minutes.
- To Make Sauce: In a small bowl combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil, 1 tablespoon cornstarch/water mixture, chili paste, vinegar and sugar. Mix together and add green onion, garlic, water chestnuts and peanuts. In a medium skillet, heat sauce slowly until aromatic.
- Meanwhile, remove chicken from marinade and saute in a large skillet until meat is white and juices run clear. When sauce is aromatic, add sauteed chicken to it and let simmer together until sauce thickens.

MARINATED ITALIAN CHICKEN
It doesn't get much easier than this. This is a quick, flavorful chicken dish that I like to serve with baby carrots and garden peas, or sometimes corn. Some garlic and/or cheese biscuits also go well with this. Also great grilled (or broiled), along with marinated vegetables. Note: I have skipped the marinating process before and it is still very tasty.

Steps:
- In a shallow dish (or ziplock bag), pour 1/2 cup of Italian dressing over chicken.
- Cover and marinate in refrigerator for up to 3 hours.
- Pre-heat oven to 425.
- Remove chicken and discard marinade.
- Add remaining 1/2 cup Italian dressing to chicken.
- Bake at 425 for 20 minutes or until chicken is no longer pink.
KING MIDAS CHICKEN
This is an easy to fix, flavorful chicken dish. I am not ordinarily fond of recipes with canned pineapple, but the chutney & mustard combine well with the pineapple.

- Mix together all other ingredients& spoonover chicken.
- Bake uncovered at 350F for one hour and 15 minutes.
