Steps:
- Chop the vegetables very fine: the cabbage, carrots, and onions are all chopped very fine, almost like the size of rice. You can chop them with a sharp knife, or if you have a food processor with a shredding attachment, use that and then finely chop with a sharp knife. (See note about using a pre-shredded coleslaw mix.)
- In a large bowl, combine all the ingredients for the dressing. Whisk until smooth.
- Add in cabbage, carrots, and onion; mix well until everything is thoroughly coated.
- Cover and refrigerate overnight. (If you have time - and can remember! - stir it occasionally. This will give you the absolute best results.) Stir again before serving and enjoy!

- Combine Miracle Whip with sugar in a large bowl.
- Mix well with electric beater until sugar is dissolved.
- Add the vegetables and toss well.
- Cover and chill for at least two hours before serving.
- If you want this to be really authentic you have to chop the vegetables up really, really small but I think it's just as good if they're a bit chunkier.
KFC FAT-FREE COLESLAW
This is a copycat recipe developed by Top Secret Recipes (topsecretrecipes.com). It's delicious & easy...my husband LOVES it and doesn't even know it's fat free! The trick is to chop the cabbage, carrot & onion into small, rice-sized bits if you want the texture of the original. I run all the veggies through the shredder of my food processor which does it in short order! *original* KFC cole slaw has 210 calories/10.5g of fat for the same size serving!!! ENJOY!

- In a large bowl, add the shredded cabbage, carrot, and onion. Toss them so that they get mixed.
- Take another bowl and add salt, sugar, white pepper, and mayonnaise to it. Then, pour milk, mayonnaise, buttermilk, vinegar, and lemon juice into it. Mix them until they are combined well.
- Then, pour this mixture over the vegetables and toss them so that they get coated with the creamy sauce.
- Let the coleslaw chill overnight and then your KFC coleslaw is ready!

Steps:
- Put cabbage, carrots and bell pepper through food processor. Or you can grate with a hand grater.
- Grate onion to ensure you have exactly 1/4 c onion. Any more onion and it will ruin the whole batch.
- Place in a large bowl.
- In a medium bowl, mix together miracle whip, salt, pepper, celery seed, sugar and enough milk to make mixture creamy.
- Pour over cabbage mixture.
- Best if put in fridge to allow the ingredients to mix together.
- NOTE: real mayo don't work as well with this recipe.

HEALTHIER THAN KFC'S COLE SLAW
This is a much healthier version than the KFC clone by Todd Wilbur, and still TASTES GREAT! I changed ingredients to make it more approachable on a low cal, low carb or diabetic diet. It's perfect for me! I thought I had posted this before but had not, so I am really happy I saved it! I don't want to lose this recipe!!! Cook time is time to chill, so prep is really quick. Make it early in the day and it will be ready for afternoon picnics and barbecues.
