A true southern specialty, this pie takes on a Kentucky accent with the addition of a splash of bourbon and a handful of chocolate chips.

1/2 cup sugar
3/4 cup light corn syrup
3 tablespoons butter, melted
2 tablespoons bourbon, if desired
1/8 teaspoon salt
3 eggs
1 cup broken walnuts
3/4 cup miniature semisweet chocolate chips
1 crust from 1 package (12 oz) frozen Pillsbury™ Deep Dish Pie Crusts (2 Count)
1 cup sweetened whipped cream, if desired

Steps:

  • Place cookie sheet on oven rack. Heat oven to 375°F. In large bowl, beat sugar, corn syrup, butter, bourbon, salt and eggs with whisk or electric mixer until well blended. Stir in walnuts and chocolate chips. Pour into frozen pie crust.
  • Bake on cookie sheet 35 to 40 minutes or until center is set. Cool completely, about 3 hours.
  • Just before serving, top with whipped cream.

1 unbaked [pie crust]
1 1/4 cups walnuts
1 cup semisweet chocolate chips
1/2 cup granulated sugar
1/2 cup brown sugar (packed)
1/2 cup all-purpose flour
1/2 cup salted butter (melted and cooled)
2 eggs (lightly beaten)
2 Tablespoons vanilla extract
Pinch of salt

Steps:

  • Preheat oven to 325 degrees F. Prepare and roll out a pie crust, then transfer it to a 9-inch pie plate. Trim and crimp the edges of the crust.
  • Add the chopped walnuts and chocolate chips to the pie shell.
  • In a large bowl, whisk the granulated sugar, brown sugar, flour, melted butter, eggs, vanilla, and salt, then pour into the pie crust over the chocolate chips and nuts.
  • Bake for 50 to 60 minutes until the pie is looking set and doesn't jiggle on top. You may need to cover the edges of the crust with a pie guard or foil if it is browning too much before the middle looks done.
  • Cool for 2 hours before slicing and serving.

1 1/4 cups all-purpose flour
1 teaspoon sugar
1/2 teaspoon kosher salt
1/4 teaspoon baking powder
8 tablespoons (1 stick) cold unsalted butter, cut into small pieces
2 tablespoons bourbon
Ice water, as needed
1 cup coarsely chopped walnut halves
1/2 cup semisweet chocolate chips
3/4 cup packed dark brown sugar
1/2 cup all-purpose flour
6 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
1/3 cup light corn syrup2 tablespoons bourbon
1 teaspoon vanilla extract
2 large eggs
1/2 cup hot water
1 teaspoon baking soda
Whipped cream, for serving, optional

Steps:

  • 1. Pulse the flour, sugar, salt and baking powder in the bowl of a food processor until combined. Add half of the butter and pulse until the mixture resembles fine cornmeal. Add the remaining butter and continue pulsing until it is the size of small peas. Add the bourbon and pulse until moistened. Pour in 1 to 2 tablespoons ice water, a bit at a time, until the dough just comes together and holds its shape when squeezed. Turn the dough out onto a large sheet of plastic wrap, gather into a disc and wrap well. Chill until firm, at least 1 hour or overnight.
  • 2. Preheat the oven to 350 degrees F. Roll out the dough on a lightly-floured surface to an 11-inch circle and fit into a 9-inch pie plate, crimping the edges. Chill to set the crust, 20 minutes.
  • 3. Prick the bottom and sides of the crust with a fork. Fit the crust with aluminum foil and weigh it down with pie weights or dry beans. Bake until the edge of the crust is just golden, 20 to 25 minutes. Remove the foil and weights and continue to bake until the bottom of the crust is lightly golden and no longer shiny, 10 to 15 minutes longer. Cool completely.
  • 1. Pour the walnuts and chocolate into the bottom of the cooled crust. Combine the sugar, flour, butter and salt in a small bowl until smooth and set aside. Lightly whisk together the corn syrup, bourbon, vanilla and eggs in a large bowl. Stir together the hot water and baking soda before whisking into the egg mixture. Stir in the flour mixture and then pour over the nuts and chocolate. Bake until the crust is golden and the filling is just set, about 45 minutes. Cool completely on a rack. Serve with whipped cream if desired.

The Kentucky Derby is a two-minute horse race, but its cultural impacts are long-lasting, including a rich culinary tradition of mint juleps, hot browns and Derby pie. Only Kern's Kitchen Inc. can make a true "Derby-Pie" - the creators of the dessert trademarked the term before partnering with the Kentucky Derby Festival - but while the naming practices are sticky, the concept is universal: a chocolate-chip and walnut-laden batter baked in a pie crust. This version is adapted from author ZZ Packer, who shared her great-aunt's recipe. Many versions exist - some spike the batter with bourbon; others swap in varying nuts or crown the pie with whipped cream - but Fannie Lou's is easy to assemble, and makes a lasting impression.

Steps:

  • Heat the oven to 350 degrees. Transfer the crust to a pie plate and prick the bottom with a fork. Cover lightly with a sheet of foil, pressing it gently into the crust and making sure the edges are covered. Place weights (metal pie weights or dried beans) on the foil to weigh down the bottom and hold up the sides of the crust. Bake for 10 minutes, then remove foil. Continue baking until the crust is firm and has lost its sheen but is not browned, about 5 more minutes. Set aside.
  • In a medium bowl, whisk the butter, eggs and vanilla extract. Add the brown sugar and flour and stir until thoroughly blended. Using a rubber spatula, fold in the walnuts and chocolate chips.
  • Pour the batter into the crust. Bake until puffed and golden brown, about 30 minutes. Remove from the heat and place on a rack to cool. Serve warm.

Now, this is the 1st recorded, BASIC Kentucky Derby Day Pie from Southern Indiana. Just across the river from Louisville, KY, where the Kentucky Derby made this pie famous! (We can't call it by it's original name here because of trademark/copyright issues, but this is the original Derby Day pie recipe.) I must be honest with you, that ever since this "famous 1st recipe" was used, there have been several other (MODIFIED) versions of this wonderful dessert...Most of them include some sort of Kentucky Bourbon!!! In my opinion, the ones that include that KY Bourbon are the best, but I wanted to share with you the ORIGINAL pie (from the 1920's)...Just FYI...

  • Make the Crust: Process ¾ cups of the flour, the sugar and salt together in a food processor until combined, about 2 one-second pulses. Add the butter and shortening and process until a homogenous dough just starts to collect in uneven clumps, about 7 to 10 seconds (the dough will resemble cottage cheese curds with some very small pieces of butter remaining, but there should be no uncoated flour). Scrape down the sides and bottom of the bowl with a rubber spatula and redistribute the dough evenly around the bowl. Add the remaining ½ cup flour and pulse until the mixture is evenly distributed around the bowl and the mass of dough has been broken up, 4 to 6 quick pulses. Empty the mixture into a medium bowl.
  • Sprinkle the vodka and water over the mixture. With a rubber spatula, use a folding motion to mix, pressing down on the dough until it is slightly tacky and sticks together. Flatten the dough into a 4-inch disk, wrap in plastic wrap and refrigerate at least 45 minutes, or up to 2 days.
  • Remove the dough from the refrigerator and roll out on a generously floured (up to ¼ cup) work surface to a 12-inch circle. Roll the dough loosely around a rolling pin and unroll into a 9-inch pie plate, leaving at least a 1-inch overhang on each side. Working around the circumference, ease the dough into the plate by gently lifting edge of the dough with one hand while pressing into the plate bottom with other hand. Leave the overhanging dough in place; refrigerate until the dough is firm, about 30 minutes.
  • Trim the overhanging dough to ½ inch beyond the lip of the pie plate. Fold the overhang under itself; the folded edge should be flush with edge of pie plate. Flute the dough or press the tines of a fork against dough to flatten it against the rim of pie plate. Refrigerate the dough-lined plate until firm, about 15 minutes.
