This is my mother's apple pie. This is the recipe I use all the time and I love it. I also use a dash of nutmeg so if you wish you can put that in too.

6 cups thinly sliced apples
¾ cup white sugar
1 tablespoon butter
1 teaspoon ground cinnamon
1 recipe pastry for a 9-inch double-crust pie

Steps:

  • Prepare your pastry for a two crust pie. Wipe, quarter, core, peel, and slice apples; measure to 6 cups.
  • Combine sugar and cinnamon. The amount of sugar used depends on how tart your apples are.
  • Arrange apples in layers in pastry lined pie plate. Sprinkle each layer with sugar and cinnamon. Dot top layer with small pieces of butter or margarine. Cover with top crust.
  • Place on lowest rack in oven preheated to 450 degrees F (230 degrees C). Bake for 10 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Bake for 30 to 35 minutes longer. Serve warm or cold.

2 cups all-purpose flour
1/2 cup shortening
1 large egg
1/4 cup cold water
2 tablespoons white vinegar
FILLING:
10 cups sliced peeled tart apples (about 8 medium)
1 teaspoon lemon juice
1/4 cup sugar
1/4 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon butter
1 large egg
1 tablespoon whole milk

Steps:

  • Place flour in a large bowl; cut in shortening until crumbly. In a small bowl, whisk egg, water and vinegar; gradually add to crumb mixture, tossing with a fork until dough holds together when pressed. Shape into a rectangle. Wrap and refrigerate 30 minutes or overnight., Preheat oven to 375°. For filling, in a large bowl, toss apples with lemon juice. In a small bowl, combine sugars, flour, cinnamon and nutmeg; add to apple mixture and toss to coat. Transfer to a 13x9-in. baking dish; dot with butter., On a lightly floured surface, roll dough to fit top of pie. Place over filling. Trim and flute edges. In a small bowl, whisk egg with milk; brush over crust. Cut slits in top. Bake 40-50 minutes or until crust is golden brown and apples are tender. Cool on a wire rack.

Can't beat home-made apple pie - why it's as American as Apple Pie! One hour chill time on the crust.

Number Of Ingredients 16

2 1/2 cups flour
1/2 teaspoon salt
1 cup shortening
8 -10 tablespoons ice water
8 -10 cortland apples
1/3 cup flour
1 teaspoon cinnamon
3/4 teaspoon nutmeg
1 pinch salt
5 -6 tablespoons butter
2 cups cranberries
1 cup sugar
1/2 cup orange juice
1/2 cup water
1 orange, zest of
1 dash nutmeg

Steps:

  • Heat oven to 400°. Prepare crust in classic tradition. Cut shortening into flour and salt; add tablespoons of ice water to mixture and stir in gently and quickly. Feel often with fingers until mixture is moist and will stick together. Chill about 1 hour in damp cloth.
  • Cook cranberry base over low heat and reduce by 1/3 (approximately 1 3/4 cups). Cool. Peel apples and cut into thin slices. Mix dry ingredients and pour over apples. Gently toss apples in large mixing bowl until all slices are covered.
  • Roll out bottom half (1/2 of crust) and place into 10 inch glass pie plate. Pour 1 3/4 cups of cranberry base on crust and top with apple mixture. Top with pats of butter. Place top crust on apples. Be sure to wet edge of bottom crust with water so that seal will be firm. Press edges gently but firmly and trim excess crust. Fold crust into edge of pie plate and form edge to your design. Moisten top with milk and sprinkle with sugar. Cut slits in pie top and bake. Cook 50 minutes. When baking 2 pies, change position of pies in oven.
