KELSEY'S CHOCOLATE POPCORN BRITTLE

Kelsey's Chocolate Popcorn Brittle image

Provided by Kelsey Nixon

Time 35m

Yield 8 to 10 servings

Number Of Ingredients 9

1/2 cup sugar
1/2 cup honey
1/2 cup crunchy peanut butter
1/2 teaspoon pure vanilla extract
10 cups popped popcorn
Salt, optional
6 ounces semisweet chocolate, melted
6 ounces white chocolate, melted
1 cup salted pretzels, crushed

Steps:

  • Mix the sugar and honey in a small saucepan and bring to a boil. Let simmer for 2 minutes. Remove from the heat and mix in the crunchy peanut butter. Continue to stir until the peanut butter is smooth, and then add the vanilla.
  • In a large mixing bowl, add the popped popcorn. If desired, lightly salt the popcorn. Pour the warm peanut butter mixture over the popcorn and stir with a long-handled wooden spoon until completely coated.
  • On a baking sheet lined with wax paper, pour the coated popcorn and distribute evenly. Drizzle with the melted semisweet chocolate, and then drizzle with the white chocolate. Sprinkle the crushed pretzels over the warm popcorn. Allow the chocolate to set about 20 minutes (or speed up the process by placing the baking sheet in the refrigerator). Once the popcorn is set, serve in a large serving bowl. Store tightly covered.

Categories     condiment

Time 40m

Yield 6 servings

Number Of Ingredients 11

4 large or 6 small tomatillos, husked (about 8 ounces)
4 plum tomatoes (about 12 ounces)
3 cloves garlic
1 jalapeno
1/2 white onion, halved
Vegetable oil, for brushing
2 tablespoons fresh cilantro leaves, chopped
1 teaspoon sugar
Kosher salt and cracked black pepper
2 canned chipotle chiles en adobo
Corn tortilla chips, or twelve 6-inch corn tortillas, quartered, for serving

Steps:

  • Cook's Note: If making corn tortilla chips with fresh tortillas, heat 1 inch of vegetable oil in a large cast-iron skillet over medium-high heat until the temperature registers 350 degrees F. Using tongs, work in batches to fry the tortilla quarters until golden brown and crisp, about 30 seconds. Transfer to a wire rack over a rimmed baking sheet and sprinkle with salt immediately. Repeat until all the tortillas have been fried. Prepare a grill to medium-high heat. Brush the tomatillos, tomatoes, garlic, jalapeno and onions with some oil and grill over direct heat until char marks appear. Remove from the grill and let cool. To control the spice in your salsa, stem and remove the seeds and ribs from the jalapeno for a milder flavor. Combine the tomatillos, tomatoes, garlic, jalapeno and onions in a food processor and pulse until mostly pureed, but slightly chunky. Add the cilantro and sugar and sprinkle with salt and black pepper. Continue to pulse until pureed. Taste and add more salt and black pepper if desired. Set half of the salsa aside in a serving dish. Add the chipotles to the food processor and pulse with the remaining salsa until combined. Add to the serving dish. Serve with tortilla chips.

Grilled Shrimp Tacos with Tropical Salsa image

Provided by Kelsey Nixon

Categories     main-dish

Time 1h40m

Yield 6 servings (12 tacos); 3 cups salsa

Number Of Ingredients 21

2 pounds medium (21-25 count) shrimp, peeled, deveined, tails off
2 limes, sliced, plus the juice of 2 limes (about 2 tablespoons)
1 medium red onion, sliced
1/2 cup vegetable oil
2 teaspoons kosher salt
1/8 teaspoon ground cloves
1 chipotle chile in adobo, minced
1 cup diced fresh pineapple, 1/2-inch dice
1 medium ripe avocado, diced
One 15-ounce jar cactus, rinsed, patted dry and diced (about 1 cup), such as Dona Maria Nopalitos Tender Cactus
1 red jalapeno, minced, seeds optional
1 medium ripe mango, 1/2-inch dice
1/4 cup fresh cilantro leaves, plus more for serving
1 tablespoon apple cider vinegar
2 teaspoons vegetable oil
1/2 teaspoon dried epazote
Salt
3/4 cup Mexican crema
1 teaspoon adobo sauce
Zest and juice of 2 limes
12 corn tortillas, warmed

Steps:

  • For the shrimp: Place the shrimp, limes and onions in a resealable plastic bag. Whisk together the oil, salt, cloves, lime juice and chipotle in a small bowl. Pour over the shrimp in the bag and seal the bag, squeezing out as much air as possible. Marinate in the refrigerator for 1 to 2 hours.
  • For the tropical salsa: Meanwhile, combine the pineapple, avocado, cactus, jalapenos and mangoes in a medium bowl. Add the cilantro, vinegar, oil and epazote and toss to combine. Keep refrigerated until ready to serve.
  • For assembly: Preheat a grill to medium-high heat. Remove the shrimp from the marinade and sprinkle with salt. Place the shrimp on the grill over direct heat and cook, turning once, until they are charred and the flesh is pink, 2 to 3 minutes per side. Add the cooked shrimp to the salsa and toss to combine. Sprinkle with salt. To serve, whisk together the crema, adobo, lime zest and lime juice in a small bowl. Build the tacos starting with a corn tortilla, add 4 to 5 shrimp, 1/4 cup tropical salsa, a drizzle of the crema mixture and some cilantro leaves.
