2 pounds elk roast
Pinch salt and pepper
1/2 cup duck fat, rendered

Steps:

  • Rub the elk roast with salt and pepper. Roast in a preheated 400-degree F oven for about 25 minutes per pound, or until the thermometer registers 140 degrees. While the elk is roasting, periodically, baste the roast with the rendered duck fat to maintain the moisture. Let roast cook until an inserted meat thermometer reads 155 degrees. Let the roast rest for 10 minutes before slicing and serving.

1 elk roast
1 medium onion
1 tablespoon salt
5 peppercorns
2 cloves garlic
1 medium carrot, sliced
2 stalks celery, sliced
1 cup cider vinegar, mild
1 cup beef bouillon
1 cup dry vermouth
12 juniper berries

Steps:

  • Combine all the marinade ingredients.
  • Boil about 5 minutes, remove
  • from flame and cool.
  • Place roast in marinade to cover.
  • Let stand in refrigerator overnight. Remove from marinade and place on roasting rack in preheated 250 degree F. oven with a blanket of beef suet. Roast at this low temp for 50 minutes per pound.

I found this while researching PNW foods/recipes. It can be found in 'Where People Feast - An Indigenous Peoples' Cookbook'. By Dolly and Annie Watts. Published by Arsenal Pulp Press, Vancouver (www.arsenalpulp.com). Juniper berries have a bittersweet pine flavor with a peppery aftertaste.

1 Tbsp dried juniper berries
1 clove garlic
1 tsp cayenne pepper
1 tsp cumin seeds
1 tsp onion flakes, dehydrated
1 lb venison rump roast
1 Tbsp grapeseed oil
1 c boiling water

Steps:

  • 1. Preheat oven to 350°F (180° C). Crush the berries, garlic, cayenne pepper, cumin seeds, and onion flakes in a mortar.
  • 2. Rub the crushed spices onto the roast and then pan-sear the roast in a hot frying pan with the oil to lock in the juices.
  • 3. Put roast in a roasting pan and add the boiling water, then roast for 1 hour, basting at least 4 times.

1 onion, sliced
1/2 cup chili sauce
2 tablespoons brown sugar
1 clove garlic
12 -24 ounces beer

Steps:

  • Preheat oven to 350.
  • Place meat in a 9x13 inch pan or roasting pan.
  • Cover with onion slices.
  • In a bowl, combine the chili sauce, brown sugar, garlic, and beer.
  • Pour over the meat.
  • Bake for 3½-4 hours.
  • Add barbecue sauce to any leftover meat, sliced, and serve on crusty rolls!
