Savory ground lamb cooks in minutes and gets a cooling, creamy topping full of Indian flavors.

Rosemary-Mint Sauce
1 1/2 pounds lean ground lamb
1 small onion, finely chopped (1/4 cup)
1 tablespoon chopped fresh mint leaves
1/2 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, finely chopped

Steps:

  • Make Rosemary-Mint Sauce.
  • Mix remaining ingredients. Shape mixture into 6 patties.
  • Spray 12-inch skillet with cooking spray; heat over medium heat. Cook patties in skillet 5 minutes; turn. Cook 3 to 5 minutes longer or until no longer pink in center. Serve with sauce.

A wonderful recipe I found in a Betty Crocker low-fat and low-cholesterol cookbook. When my market doesn't have ground lamb, I ask the butcher to grind some; just make sure it's from the shoulder. If it's from the dark meat section, the meat will have too much fat and will not taste as good.

1 1/2 lbs lean ground lamb
1/4 cup finely chopped onion (about 1 small)
1 tablespoon chopped fresh mint leaves (I usually use 1/2 - 1 tsp. of dried mint)
3/4 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, finely chopped
1 cup plain nonfat yogurt
2 tablespoons chopped fresh mint leaves (I use1 tsp. dried mint)
2 tablespoons cider vinegar (can use red wine vinegar in a pinch)
1 teaspoon fresh rosemary leaves, crushed and finely chopped or 1/2 teaspoon dried rosemary
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cumin

Steps:

  • TO MAKE AHEAD OF TIME: Prepare lamburgers as directed; shaped into 6 patties and store them, covered, in the refrigerator until ready to cook.
  • Prepare sauce and cover, refrigerated, until ready to cook patties.
  • REGULAR DIRECTIONS: Make rosemary-mint sauce and set aside. Spray a 12-inch skillet with nonstick cooking spray. Mix all other ingredients except Rosemary-Mint Sauce. Heat skillet over medium heat.
  • Shape meat mixture into 6 patties. Cook patties in skillet 5 minutes; turn. Cook 3-5 minutes longer until no longer pink in center. Serve with sauce. Cooked noodles and carrots taste good as sides.

These are so juicy and delicious, and the feta and green olives are a perfect little surprise with every bite! They're great on a grill or even on the stove top. Toast some buns, pile on the tzatziki sauce, lettuce, tomatoes, and maybe some extra crumbled feta and chow down!

2 lbs ground lamb
8 ounces feta cheese
1 cup Greek olive, pitted, chopped
1 tablespoon oregano
1 tablespoon parsley
1 teaspoon salt
1 teaspoon pepper
2 garlic cloves, finely chopped
8 hamburger buns
1/2 cup yogurt
1 cucumber, peeled, grated, and drained
1 garlic clove, finely chopped
1 tablespoon lemon juice
salt, to taste
pepper, to taste

Steps:

  • Tzatziki Sauce: Mix together yogurt, cucumber (make sure that this is well drained, or your sauce will be watery), 1 clove chopped garlic, lemon juice. Add salt and pepper to taste. Place in the refrigerator. This should ideally sit for a few hours.
  • Place ground lamb in large bowl and mix in oregano, parsley, 1 tsp salt, 1 tsp pepper, and 2 cloves chopped garlic until evenly distributed.
  • Pour in feta and chopped green olives and mix gently.
  • Form patties, trying to tuck as much of the cheese and green olives inside.
  • Grill for 4-5 minutes per side for medium rare. If using a stove top, cook on medium high heat.
  • Lightly toast buns.
  • Serve burgers with tzatziki sauce, lettuce, and sliced tomatoes.

1/4 cup wine balsamic vinegar

Steps:

  • In a food processor chop mint and rosemary leaves with sugar finely.
  • Put in a bowl.
  • Heat the vinegar and pour it over the mint.
  • Adding more sugar if you if you want it sweeter.
  • Serve hot or cold with roasted lamb or other meat.
