Date recipes are some of my favorite desserts to cook up. These date treats are very easy to bake, and one sheet of them will yield 48 good-sized bars. I sometimes add nuts, coconut or candied fruit. -Dorothy DeLeske, Scottsdale, Arizona

2-1/2 cups pitted dates, cut up
1/4 cup sugar
1-1/2 cups water
1/3 cup coarsely chopped walnuts, optional
1-1/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1-1/2 cups quick-cooking oats
1 cup packed brown sugar
1/2 cup butter, softened
1 tablespoon water

Steps:

  • In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

3 cups chopped pitted dates (1 lb)
1 1/2 cups water
1/4 cup granulated sugar
1 cup packed brown sugar
1 cup butter or margarine, softened
1 3/4 cups all-purpose* or whole wheat flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
  • Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
  • In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
  • Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

Steps:

  • Beat eggs and sugar together.
  • Stir in flour, walnuts, dates and vanilla.
  • Press into grease lamington tin.
  • Bake in a moderate oven - 180 C for 25 minutes.
  • Cut into bars while still hot then leave to cool.

1 3/4 cups finely chopped pitted dates (around 12 oz)
3/4 cup water
1/3 cup maple syrup
1 teaspoon grated lemon rind
2/3 cup sugar
1/2 cup butter, softened
1 cup all-purpose flour, lightly spooned into a dry measuring cup
1 cup oats
1/4 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Combine dates, water, and maple syrup in a heavy saucepan on medium heat.
  • Bring to a boil and cook about 12 minutes, stirring frequently, until most of the liquid is absorbed and it looks like jam. Stir in the rind and remove from heat to cool completely.
  • Cream the sugar and butter with a mixer at medium speed until smooth. Combine flour, oats, baking soda, and salt, then stir into sugar mixture. (It will become crumbly) Press 2 cups flour mixture into bottom of a 13 x 9-inch baking pan coated with cooking spray. Spread date mixture on top, then sprinkle with remaining flour mixture. Bake 20 minutes or until golden brown. Cool completely in pan on a wire rack.

My sister got a pan of these along with her birthday cake every year. Lucky her! (I didn't have it so bad. My mom always got me a bag of chocolate covered raisins on mine.) But this recipe is so easy, you really should make it more than once a year!

1 lb dates, chopped
1 cup sugar
1 cup water
3/4 cup soft shortening
1 cup brown sugar
1 3/4 cups flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups oats

Steps:

  • Cook dates, sugar and water in heavy saucepan to the consistency of jam. Let cool.
  • Cream shortening with the brown sugar.
  • Sift flour, soda, and salt into the creamed mixture.
  • Add oats and mix until well blended.
  • Put half of oat mixture in a greased 13x9x2 pan.
  • Press and flatten to cover the bottom.
  • Spread with date filling.
  • Cover with remaining oat mixture. Pat smooth.
  • Bake for 30 minutes at 350 degrees.

Steps:

  • Stir brown sugar and eggs into the melted butter, mixing well.
  • Blend in flour, baking powder and salt.
  • Add the nuts and dates.
  • Spread in buttered 8x8 inch pan.
  • Bake for 20 min in a 350 degree oven.
  • While hot cut into squares and carefully remove from pan.
  • When they cool, roll in powdered sugar.

Date bars are so good! This recipe is from an old cookbook of my mom's,(McCall's or Betty Crocker) and is a fond memory of my childhood. The index card I'm copying it from is one of the most stained in my collection. So trust me! You'll love these!

2 cups pitted dates
1/2 cup sugar
1 grated orange, zest of
1/4 cup orange juice
1/2 cup chopped nuts (optional)
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup Quaker Oats (I never worry about whether they're quick cooking or not! I just dump 'em in!)
1 cup brown sugar
1/2 cup butter, melted

Steps:

  • For filling, combine all filling ingredients except for nuts in medium sized saucepan.
  • Cook over low heat, stirring occasionally til thickened.
  • Cool.
  • Stir in nuts.
  • For base, sift together flour, soda and salt.
  • Add oats and sugar.
  • Mix well.
  • Stir in butter.
  • Mix til crumbly.
  • Press 2/3 of mixture into greased 8" square pan.
  • Spread filling evenly over flour mixture.
  • Top with remaining mixture.
  • Pack light.
  • Bake at 350 for 30-35 minutes.
  • Cool completely!(Very important).
  • Cut into bars.

3/4 cup packed brown sugar
3/4 cup butter, melted
2 large eggs
2 cups chopped dates
2 cups chopped walnuts (optional)

Steps:

  • In a mixing bowl, combine dry cake mix and brown sugar.
  • Add butter, and eggs.
  • Beat for 2 minutes at medium speed.
  • Stir in the dates and nuts.
  • Spread into a greased 9 x 13" baking pan.
  • Bake at 350° for 35-45 minutes or until edges are golden brown and a toothpick inserted near the center comes out clean.

1 cup firmly packed brown sugar
3 large eggs
3 tablespoons milk
1 tablespoon vanilla extract
1 1/2 teaspoons baking powder
1 1/2 cups all-purpose flour
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups coarsely broken walnut meats
3 1/2 cups pitted dates, cut into small pieces
icing sugar

Steps:

  • Preheat oven to 350°F (175°C).
  • Butter and line with parchment a 9 x 13 inch baking pan.
  • Beat butter in medium bowl.
  • Gradually add sugar and beat until combined (mixture will appear grainy).
  • Add eggs, one at a time, beating well after each addition.
  • Stir in milk and vanilla.
  • Combine flour, baking powder, salt and cinnamon in small bowl.
  • Add to butter mixture and stir until just blended.
  • Mix dates and walnuts gently into batter.
  • Transfer batter to pan; smooth top.
  • Bake until top is brown and tester comes out clean (with a few moist crumbs attached), about 35 minutes.
  • Cool 10 minutes.
  • Run knife around edge of pan to loosen.
  • Reverse carefully onto cookie sheet.
  • Peel off parchment.
  • Invert again.
  • Cool. Cut into bars.
  • Sift icing sugar over.
