Number Of Ingredients 16

1 tablespoon espresso coffee beans
1 1/4 teaspoons whole allspice
3/4 teaspoon mustard seeds
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1 bunch green onions, chopped
1 cup chopped fresh parsley
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
3 garlic cloves
2 tablespoons olive oil
1 tablespoon chopped fresh oregano
2 teaspoons chopped fresh thyme
1 teaspoon grated lemon peel
1 teaspoon chopped seeded habanero chile
2 1/2 pounds pork tenderloins

Steps:

  • Stir first 5 ingredients in small skillet over medium heat until fragrant, about 30 seconds. Finely grind spice mixture in spice grinder; transfer to processor. Add all remaining ingredients except pork; blend until wet paste forms. Place pork in large glass baking dish and coat with paste. Cover; chill overnight.
  • Preheat oven to 400°F. Transfer pork coated with paste mixture to rimmed baking sheet. Roast pork until thermometer inserted into center registers 150°F for medium, about 35 minutes. Slice pork and serve.

I just made this recipe. It is sitting on the stove as we speak and it smells and tastes so good. The recipe originally called to simmer the pork, tomato sauce, water, onions and garlic for a half an hour. This really over cooked the pork in my opinion. Especially when coupled with the second simmer so I adjusted the simmer time down. You'll want to watch it so it is down to your likeing. Next time I make this recipe I will cube rather than strip the pork (what!!! Naked Pork!!!!). I love pinto beans so that's what I used. I am sure you could use any can of beans you like.

1 lb pork tenderloin, cut into strips
1 teaspoon oil
1 cup onion, chopped
1/4 teaspoon garlic powder
1 (6 ounce) can tomato paste
1 cup water
1 (15 ounce) can pinto beans
2 teaspoons salt
1/2 teaspoon cumin
1/2 teaspoon oregano
1 1/2 teaspoons chili powder
3 cups cooked brown rice

Steps:

  • Brown pork in oil.
  • Add onions and garlic.
  • Stir in tomato paste and water.
  • Cover and simmer 15 minutes.
  • Add beans and spices, simmer 5 minutes. Serve over hot rice.

2 tablespoons chopped red onions
1 tablespoon light brown sugar
2 teaspoons chopped fresh parsley
1/4 teaspoon ground red pepper
1/8 teaspoon salt
1 pork tenderloin (about 1-1/2 pounds)
1 tablespoon jerk seasoning

Steps:

  • Preheat grill to medium-high heat.
  • In a medium bowl, combine mangoes, onion, brown sugar, parsley, ground red pepper, and salt; mix well and set aside.
  • Evenly season pork with jerk seasoning. Place on grill and cook 15 minutes, or until internal temperature reaches 160 degrees F., turning halfway through cooking.
  • Slice pork, top with mango salsa, and serve immediately.

1 tbsp whole black peppercorns
2 tsp whole allspice
1 tsp coriander seed
4 cloves
2 tbsp vegtable oil
1 x 3 inch piece of ginger, peeled and cut into large chunks
4 scallions, trimmed and cut into four pieces
4 cloves garlic, peeled and cut in half
1/4 cup chopped thyme
1 scotch bonnet (optional)
1 tbsp brown sugar
1 tbsp soy sauce
1 tsp cinnamon
1 tsp salt
1 pinch nutmeg
2 x 1 lb. pork tenderloin, cleaned of sinew
Chayote Black Beans
1 tbsp butter
1 clove garlic, finely chopped
1 chayote, diced
1 bay leaf
1 can black beans, drained and rinsed
salt and pepper to taste
Pineapple Salsa
1/2 pineapple, diced
1/2 red onion, finely diced, soaked in cold water for 10 minutes and drained
1 jalapeno, seeded and finely diced
2 tbsp chopped cilantro
1 tbsp sugar
zest of 1 lime
juice of 1 lime
pinch of salt
Fried Plantains
1 cup vegatable oil
2 ripe plaintains, peeled and sliced

Steps:

  • Directions: Jerk Pork Tenderloin In a spice grinder, mix black peppercorns, allspice, coriander seeds, and cloves until finely ground. In a food processor mix olive oil, ginger, scallions, garlic, and thyme, scotch bonnet pepper, brown sugar, soy sauce, cinnamon, salt and nutmeg. Add spice mixture and blend until mixture resembles a thick paste Rub pork with jerk paste, making to sure to cover completely. Let marinate 1-2 hours at room temperature, or refrigerate overnight. Preheat outdoor grill and lightly oil. Season pork with salt Grill pork tenderloin on open BBQ, rotating frequently until lightly charred and cooked through, 15-20 minutes. Let rest 5 minutes before slicing. Chayote Black Beans In a medium skillet, melt butter over medium heat. Add garlic and sauté gently. Add chayote and bay leaf and cook slowly, over medium heat 5-8 minutes, or until slightly softened. Add black beans and mix to combine. Season with salt and pepper. Pineapple Salsa In a large bowl, toss together all ingredients. Season to taste with salt. Fried Plantains In a large skillet, heat oil over medium high heat. Place sliced plantains in oil and fry for 2-3 minutes per side or until lightly browned. Drain on paper towel.
