1 1/2 pounds top sirloin steak
2/3 cup soy sauce
6 garlic cloves (minced)
1/4 cup sesame oil
1/4 cup olive oil
½ cup sugar
1 Tablespoon grated ginger
2 tbsp sesame seeds ((I like using the Japanese assorted sesame seeds but any will work))
1 red onion (cut into one inch pieces )
1 green bell pepper (cut into one inch pieces )
1 yellow bell pepper (cut into one inch pieces )
1 red bell pepper (cut into one inch pieces )
skewers
Sliced green onions (for garnish)

Steps:

  • Cut steak into one inch cubes.
  • In a large bowl whisk together soy sauce, garlic, sesame oil, olive oil, sugar, ginger and sesame seeds. Add the steak and toss to coat in marinade. Marinate for 3 hours or overnight.
  • Preheat the grill to medium high heat. Thread the meat, red onion, and bell pepper onto the skewers. Grill for 8-10 minutes until the meat is done to desired liking.

Yakitori is very popular in Japan: there are whole restaurants devoted to serving up variations of skewered grilled chicken. Now you can make it at home with an easy, flavorful recipe by Michael Ruhlman! Served with steamed rice, it's perfect for a satisfying weeknight dinner.

3 cloves garlic
1-inch piece ginger
1/2 cup mirin
1/2 cup soy sauce
1 tablespoon honey
1 bunch scallions
4 chicken thighs, boneless and skinless
1 tablespoon miso

Steps:

  • Marinade: Smash and peel garlic cloves, then place in a small saucepan. Slice unpeeled ginger into coins (about 5 slices); add to the saucepan, followed by the mirin, soy sauce, and honey. Over medium-high heat, bring to a gentle simmer, stirring occasionally to prevent honey from burning; allow to simmer for about 1 minute. Set aside to cool by placing into a large skillet filled with cold water.
  • Trim root ends from scallions; then cut the white and light green parts into 1-inch pieces. (Reserve green stalks for garnish.) Set aside. Slice each chicken thigh into 4 equal pieces. If using skewers, thread the chicken pieces onto the skewers, alternating with pieces of scallion.
  • Place skewers on a rimmed baking sheet and pour marinade to coat chicken and scallions. Marinate for at least 30 minutes (and up to 3-4 hours), flipping the skewers in the marinade every 5-7 minutes. (Note: Chicken can be marinated the day before and stored, covered, in the refrigerator overnight.) While chicken marinates, preheat oven to 350 degrees F.
  • Heat grill pan over high heat, 5-10 minutes (time will vary, depending on pan). Reserving the marinade, place chicken skewers on the hot grill and cook for 2-3 minutes; place a heavy plate or skillet on the chicken and press down to create grill marks. Flip skewers and repeat, 2-3 more minutes. Place the chicken, still in the grill pan, in the oven and bake, 10 minutes. Meanwhile, finish the sauce.
  • Pour the marinade back into a saucepan and add the miso. Bring to a boil (which will kill off any bacteria from the raw chicken) and reduce slightly, 15 minutes. Meanwhile, remove grill pan from oven and transfer skewers to a plate. When the sauce has reduced, brush it over the chicken. Slice reserved scallion greens and sprinkle over the skewers before serving.

Steps:

  • Whisk soy sauce, vinegar, sugar, oil, garlic, and ginger together in a bowl until marinade is smooth. Place sirloin cubes into marinade, cover bowl with plastic wrap, and marinate in refrigerator, 1 to 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove sirloin cubes from marinade, discarding marinade.
  • Thread sirloin cubes, onion, tomatoes, mushrooms, and green bell pepper onto skewers.
  • Cook skewers on grill until meat is cooked through and vegetables are tender, 10 to 15 minutes.

2 tablespoons extra-virgin olive oil
1 1/4 pounds beef sirloin, cut into 1/2-inch cubes
Salt and black pepper
1 cup mayonnaise
Zest and juice of 1 lime
1 tablespoon rice wine vinegar
1 1/2 teaspoons sesame oil
1 1/2 teaspoons sugar
1 teaspoon red pepper flakes
Salt and black pepper
Fresh cilantro leaves, for garnish

Steps:

  • For the beef: Heat the olive oil in a cast-iron skillet over medium-high heat. Sprinkle the sirloin cubes with 1 teaspoon salt and 1/2 teaspoon pepper. In batches if necessary, sear the meat on all sides and cook until medium rare, 2 to 3 minutes. Drain on paper towels and set aside to cool.
  • Meanwhile, make the dipping sauce: In a bowl, whisk together the mayonnaise, lime zest and juice, vinegar, sesame oil, sugar, red pepper flakes and some salt and pepper.
  • Thread the beef onto toothpicks (2 pieces per). Garnish with cilantro and serve with the dipping sauce.

3 tablespoons sherry
¼ cup soy sauce
1 teaspoon barbeque sauce
2 green onions, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 ½ pounds flank steak

Steps:

  • In a small bowl, mix together hoisin sauce, sherry, soy sauce, barbeque sauce, green onions, garlic, and ginger.
  • Cut flank steak across grain on a diagonal into 1/4 inch slices. Place slices in a 1 gallon resealable plastic bag. Pour hoisin sauce mixture over slices, and mix well. Refrigerate 2 hours, or overnight.
  • Preheat an outdoor grill for high heat. Discard marinade, and thread steak on skewers.
  • Oil the grill grate. Grill skewers 3 minutes per side, or to desired doneness.

2 sirloin steaks (We choose Marble Ride Farms wagyu!)
3/4 cup brown sugar
1/2 cup soy sauce
1 tbsp ginger, grated
2 cloves garlic, crushed
1 tbsp sesame seeds
2 tbsp canola oil
Blues Hog Tennessee Red BBQ Sauce
3 green onions

Steps:

  • In a medium bowl, blend your marinade. Stir together the brown sugar, soy sauce, canola oil, grated ginger, crushed garlic, and sesame seeds. Mix that 50/50 with Blues Hog Tennessee Red Barbecue Sauce.
  • Cut the sirloin steak into 1/4 inch strips and green onions into inch-long sections. Weave the strips of beef onto skewers. Add a bit of greed onion on the skewers along with sirloin strip. 
  • In a gallon bag or large dish, cover the skewers in the marinade mixture and let soak for around two hours or more.
  • Preheat the grill. We used Blues Hog Premium Hog Logs in a cast iron tabletop grill for this. 
  • After cleaning and greasing the grill, place the skewers on the direct heat. Use tongs to flip the skewers, giving 1-2 minutes on each side.
  • The meat will cook very fast over the high heat. Once you have a nice sear on both sides, quickly remove to a serving dish to the side and season.

1 large fresh lemongrass stalk, tough outer leaves discarded
1 tablespoon coriander seeds
2 tablespoons minced peeled ginger
2 tablespoons minced garlic
1 large shallot, minced
2 fresh jalapeño chiles, minced (3 tablespoons), including seeds
2 tablespoons Asian sesame oil
2 teaspoons kosher salt
2 teaspoons white pepper
3 tablespoons vegetable oil
1 1/2 pounds sirloin tip, trimmed and cut into 1-inch chunks
an electric coffee/spice grinder or a mortar and pestle; 8 (12-inch) wooden skewers, soaked in warm water 30 minutes

Steps:

  • Mince enough lemongrass from lower 4 inches of stalk to measure 2 tablespoons.
  • Coarsely grind coriander seeds in grinder or with mortar and pestle, then stir together with lemongrass and remaining ingredients except sirloin in a bowl.
  • Prepare grill for direct-heat cooking with medium-hot charcoal.
  • Toss sirloin with 1/3 cup spice paste in a large bowl and thread chunks 1/4 inch apart onto skewers.
  • Oil grill rack, then grill kebabs, turning occasionally and moving around if flare-ups occur, 5 to 6 minutes for medium-rare.

Steps:

  • In a medium bowl, mix soy sauce, light brown sugar, distilled white vinegar, garlic powder, seasoned salt, garlic pepper seasoning, and lemon-lime flavored carbonated beverage. Reserve about 1/2 cup of this marinade for basting. Place steak in a large resealable plastic bag. Cover with the remaining marinade, and seal. Refrigerate for 8 hours, or overnight.
  • Bring a saucepan of water to a boil. Add green peppers, and cook for 1 minute, just to blanch. Drain, and set aside.
  • Preheat grill for high heat. Thread steak, green peppers, mushrooms, tomatoes, and pineapple onto skewers in an alternating fashion. Discard marinade and the bag.
  • Lightly oil the grill grate. Cook kabobs on the prepared grill for 10 minutes, or to desired doneness. Baste frequently with reserved marinade during the last 5 minutes of cooking.

400g whole piece of sirloin , trimmed of excess fat
1 tbsp sunflower oil
thumb-sized piece ginger , finely grated
¼ cucumber , peeled and cut into matchsticks
small handful mustard cress
2 tsp toasted sesame seeds
cooked sticky rice , to serve (optional)
4 tbsp soy sauce
juice 1 lime
large pinch of chilli flakes
small pinch of white sugar
1 tbsp wasabi
5 tbsp soured cream

Steps:

  • Rub the beef generously with oil and season well. Heat a heavy frying pan and sear the beef on all sides for about 8 mins in total for very rare, 10 mins for rare and 12 mins for medium-rare. Remove from the pan and set aside.
  • While the meat is resting, prepare the accompaniments. For the ponzu dipping sauce, mix all the ingredients together with a splash of water until the sugar has dissolved, then set aside. For the wasabi cream, stir the ingredients together until completely mixed, then set aside.
  • After the beef has rested for 10 mins, use your sharpest knife to carve it into thin slices. Fan the slices out on a serving platter, scatter with the cucumber, then the cress, followed by the sesame seeds. Bring to the table with the two sauces and the ginger in small serving dishes for dipping and spreading over the beef slices. Serve with chopsticks and sticky rice on the side, if you like.
