PANKO FRIED GREEN TOMATOES

Panko Fried Green Tomatoes image

JAPANESE FRIED GREEN TOMATOES

Japanese Fried Green Tomatoes image

This is from a website called CHOW; I've altered it to my taste. It originally called for dried tarragon, one of my least favorite flavors. Feel free to add it back in if you like. I also used buttermilk instead of milk hoping for a better "glue" for the breadcrumbs. Hope you enjoy!

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 large egg
2 cups panko breadcrumbs

1/2 teaspoon cayenne pepper
1/4 cup Old Bay Seasoning
4 cups vegetable oil

  • Whisk the eggs and buttermilk together in a medium bowl and set aside.
  • In a shallow pan combine the lemon zest, cayenne pepper, Old Bay Seasoning and flour; set aside.

FRIED GREEN TOMATOES WITH COMEBACK SAUCE

Fried Green Tomatoes with Comeback Sauce image

Green tomatoes come in season once a year and there are so many great things about them. They're firm, crispy and perfect when soaked in brine. They have great flavor and when you fry them, you end up with this crispy, fresh, slightly oily flavor that is amazing with the famous comeback sauce.

Time 4h40m

Yield 4 servings

Number Of Ingredients 19

1 cup mayonnaise
1/3 cup ketchup
2 teaspoons fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1 cup buttermilk
1 tablespoon hot sauce
1 tablespoon fresh lemon juice
1 teaspoon granulated garlic
1 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
3 to 4 green tomatoes, cut into 1/3-inch-thick slices
Grapeseed oil, for frying
1/2 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon dried parsley

Steps:

  • For the comeback sauce: Stir together the mayonnaise, ketchup, lemon juice, mustard, hot sauce, Worcestershire sauce, paprika, 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl. Cover and refrigerate at least 30 minutes and up to 2 days.

  • Prepare three bowls (or pie plates) as follows: Bowl 1: Mix Wondra, paprika, and garlic salt. Bowl 2: Whisk together eggs and buttermilk.Bowl 3: Mix Wondra, masa harina, panko crumbs, kosher salt, white pepper, and paprika.
  • Carefully prepare the area before you begin frying the battered tomatoes. Always make sure that the work surface you are frying on is stable. Add oil to skillet until it is ⅛-¼ inch deep. Preheat oil in skillet to 340° [171°C].For crisp frying, oil must maintain a temperature of 325-340F° [162°-171°C] throughout the cooking process.I usually set the temperature of my electric skillet to 350F° [177°C] when it’s heating up, and drop it down a few degrees to about 335° when the tomatoes are actively frying.
