BROCCOLI CASSEROLE (JANE AND MICHAEL STERN)

Steps:

• Preheat the oven to 350° and butter an 8-inch square baking dish. Cover the bottom of the dish generously with the torn bread.
• Combine the eggs, milk, melted butter, cheese, salt, and sugar in a bowl. Mix until combined. Stir in the broccoli and pour the mixture over the bread.
• Cover with aluminum foil and bake for 35 minutes. For a chewier top, remove the foil during the last 10 minutes of baking time.

BROCCOLI CASSEROLE

Steps:

• Preheat oven to 400 degrees. In two batches, cook broccoli in a large pot of salted boiling water until slightly tender, about 3 minutes. Drain and rinse with cold water to cool. Drain well.
• Melt 2 tablespoons butter in a large straight-sided skillet over medium-high. Add onion and mushrooms; season with salt and pepper. Cook, stirring occasionally, until tender and starting to brown, about 7 minutes. Add flour and cook, stirring constantly, 1 minute. Stir in milk in a slow, steady stream. Steps:

• Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
• Put broccoli in a large microwave-safe bowl with a small amount of water in the bottom; cook in microwave until tender, about 5 minutes. Drain liquid from bowl. Stir mushroom soup, Cheddar cheese, and mayonnaise with the broccoli until evenly mixed; pour into prepared casserole dish.
• Mix bread crumbs and melted butter together in a separate bowl; spread evenly over the broccoli mixture.
• Bake in preheated oven until the surface is bubbling, 20 to 30 minutes.
