SWEET CHERRY TOMATO AND SAUSAGE BAKE

Sweet Cherry Tomato and Sausage Bake image

There are so many things I love about this dish: it's all cooked in 1 pan; we're using more robust herbs like thyme, rosemary and bay with the tomatoes, which work really well; the half-roasted, half-stewed fresh tomatoes turn into a lovely rich and chunky sauce which is miles better than anything you can get if using canned tomatoes; and we're roasting the sausages, which I think is far better than frying or broiling them. Try to buy the best fresh coarsely ground sausages you can. PS Any leftovers can be chopped up and made into a wonderful chunky pasta dish, using penne or rigatoni, the next day.

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 8

4 1/4 pounds lovely ripe cherry tomatoes, mixed colors if you can find them
2 sprigs each fresh thyme, rosemary and bay
1 tablespoon dried oregano
3 cloves garlic, peeled and chopped
12 good-quality coarse Italian pork sausages
Extra-virgin olive oil
Balsamic vinegar
Sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Get yourself an appropriately sized roasting pan, large enough to take the tomatoes in 1 snug-fitting layer. Put in all your tomatoes, the herb sprigs, oregano, garlic and sausages. Drizzle well with extra-virgin olive oil and balsamic vinegar and season with salt and pepper. Toss together, then make sure the sausages are on top and pop the pan into the oven for half an hour. After this time, give it a shake and turn the sausages over. Put back into the oven for 15 to 30 minutes, depending on how golden and sticky you like your sausages.
  • Once cooked, you'll have an intense, tomatoey sauce. If it's a little too thin, lift out the sausages and place the pan on the stove to cook it down to the consistency you like - I tend to make mine quite thick - then put the sausages back in. Check the seasoning and serve either with a good-quality loaf of bread warmed through in a low oven for 10 minutes (great for mopping up the sauce!) or with mashed potato, rice or polenta, a green salad and a nice glass of wine.

SPICED CHERRY TOMATO CHUTNEY

Spiced Cherry Tomato Chutney image

Provided by Jamie Oliver

Time 1h5m

Number Of Ingredients 13

1 onion, finely chopped
2 cloves garlic, chopped
2 to 4 small red chilies, crumbled
Large pinch coriander seeds, pounded
2 cloves, pounded
1/2 teaspoon nutmeg, pounded
Small pinch cumin, pounded
Olive oil
4 anchovy fillets
3 ounces ripe red cherry tomatoes, washed, whole
1 pound 4 ounces brown sugar
8 good lugs vinegar (preferably red wine)
Salt and freshly ground black pepper

Steps:

  • Slowly fry the onions, garlic and spices in a little olive oil soft and translucent. Add the anchovies and cherry tomatoes (which you can blanch and remove the skins first if you like.) Shake around and add the sugar, vinegar and salt and pepper at this point. Bring to the boil, stir and simmer gently for 30 minutes before seasoning well to taste and transfer to a few small, sterilized airtight jars, rather than a large one, and seal. If unopened, the chutney will improve in flavor and last up to a year in your cupboard. Once opened, keep in your refrigerator for 1 to 2 months.;

BROKEN POTATOES

Broken Potatoes image

Provided by Jamie Oliver

Categories     side-dish

Time 1h20m

Yield 4 to 6 servings

Number Of Ingredients 5

2 pounds, 3 ounces (1-kilogram) potatoes, peeled
Olive oil
Pork fat
Salt and freshly ground black pepper
A handful of rosemary leaves

Steps:

  • Preheat oven to 425 degrees F.
  • Cook the potatoes in salted boiling water for about 15 minutes, or until your knife slides easily through them. Drain and leave for 5 minutes.
  • Drizzle a roasting tray with a little olive oil and any handy pork fat. Season, then throw in the potatoes, and push down on each of them to break them up slightly. Then pound up the rosemary in a pestle and mortar to bruise and release its flavors. Add 4 good lugs of olive oil, stir around, and drizzle over the potatoes. Roast for 40 to 50 minutes at 425 degrees F (220 degrees C/gas 7) until crisp and golden.

Yippie done and made a big hit with the hubby as I have said before he is the inspiration behind the Cherry Smashed Cake because of his love of Chocolate...

Categories     Fruit Desserts

Number Of Ingredients 8

CHERRY SMASHED CANDY
2 2 pound bags of confectioners sugar
1 can(s) bordens eagle brand sweetened condensed milk
1 Tbsp amaretto liqueur
1 Tbsp maraschino cherry juice drained from the jar
2 jar(s) 10 oz. size maraschino cherries drained from the juice no stem
1 stick butter, room temperature
CANDY BARK OF YOUR CHOICE TO MELT AND DIP BALLS IN

Steps:

  • 1. In a large mixing bowl add the 2 bags of confectioners sugar then add in the condensed milk. Also add in the butter .
  • 2. I used a hand mixer but first gave it a good stir with a spoon to mix in the sugar before using the electric mixer so the sugar would not go all over the counter and me.
  • 3. Drain the cherry well then crush in a food processor or mini chopper, add to the mixture
  • 4. Add the liquerur and cherry juice then begin to mix well and make sure it is stiff. If it is not add some more sugar till it stiffs up enough to make a ball. Place the mixture in the refrigerator till hardend enough to work with.
  • 5. Pinch off some candy mixture and roll in the palm of your hand to make a ball. Place on pan and place back in the fridge ge till good and cold a couple of hours will be necessary to be able to dip in the hot chocolate
  • 6. In a candy melt machine I melted the bark and dipped the balls one at a time placed on parchment paper and put back in the fridge and left all night. Place in a airtight container and keep refrigerated till use of them.
