- Preheat the oven to 375 degrees F.
- Tip the almonds, sunflower seeds and pumpkin seeds onto a baking sheet. Toast until they begin to color, 10 to 12 minutes. Allow to cool.
- Melt the chocolate in a glass bowl over a pan of simmering water (or in the microwave for 1 to 2 minutes) and stir until smooth and glossy. Set aside.
- Spray a 9-by-12-inch baking sheet with nonstick cooking spray.
- Add the granulated sugar, butter, brown sugar, kosher salt and 2 tablespoons of water to a heavy-bottomed saucepan fitted with a candy thermometer. Cook over medium-high heat, swirling the pan occasionally, until the thermometer registers 300 degrees F, 5 to 8 minutes. Remove from the heat and stir in the vanilla. Sprinkle in the baking soda and mix. Pour onto the prepared baking sheet and tip the baking sheet to spread the toffee evenly. Let it cool and set, about 6 minutes.
- Drizzle the melted chocolate over the toffee. Scatter the toasted nuts and seeds, raisins and mini chocolate candy over the melted chocolate and sprinkle with the sea salt. Let set for 2 hours, then break the toffee into shards.

ALMOND GRAHAM CRACKER TOFFEE
You can use any type of chips (milk chocolate, dark, semisweet) and can also use any type of nuts-almonds, walnuts, pecans, or no nuts at all. Sometimes I sprinkle holiday sprinkles on top of chocolate.

ALMOND TOFFEE CRACKER COOKIES
A friend makes something like these and they are addictive. We moved away and I never got her exact recipe, but these are a reasonable facsimile! Sometimes called Christmas Crack or Cracker Toffee - you'll see why!

Steps:
- 1. Spread crackers touching each other in a single layer on a rimmed baking sheet. OK to break some in order to completely fill the baking sheet.
- 2. Melt butter and sugar together in saucepan on medium-high heat until mixture comes to a full-rolling boil. Lower heat to medium and continue to cook for 3 more minutes, stirring occasionally.
- 3. Remove from heat and stir in vanilla. Stir in almonds. Pour mixture evenly over crackers. Caramel will even out completely as it bakes. Bake at 350 for about 7-8 minutes or until it looks "dry". Check often to make sure that the crackers on the edges don't burn. Cool and break apart.
SWEET CLUB CRACKER SNACKS
This is a fantastic, quick to prepare snack. You will love the combination of salty/sweet taste and the crunch of the almonds and browned crackers. I got the recipe from my friend after we tasted these snacks at her home. These crackers are really pleasing to the eye and will keep several days in a container with a tightly-fitting lid. They would also make a great Christmas gift in a decorative tin.
