A Swedish speciality of shrimp on toast. From Jamie Oliver who says: "To all intents and purposes, this dish is the Swedish equivalent of our prawn cocktail. As much as I love that when it's done properly, the flavour combo of ketchup and mayo isn't the biggest turn-on in the world. This, on the other hand, uses generous amounts of lemon and dill in the mayonnaise and the result is clean, zingy and zippy in flavour - I'd expect nothing less from the Swedes. It involves hardly any work, but if you pile a spoonful of these dressed prawns on a toasted piece of brioche or sourdough bread you'll have a really confident little light lunch or starter."

1 lb cooked peeled shrimp
1/2 red onion, peeled and very finely chopped
1 tablespoon fresh dill, very finely chopped
3 tablespoons extra virgin olive oil
1/2 lemon, zest and juice
4 tablespoons sour cream
sea salt
fresh ground black pepper
1 loaf soft white bread (or brioche)
1 ounce butter, diced
fish roe, to serve (optional)

Steps:

  • Put the shrimp into a bowl with the finely chopped onion, most of the dill, the extra virgin olive oil, lemon zest and juice and soured cream. Season with a couple of good pinches of salt and pepper and gently mix together. Have a taste and check that you've got the right balance of acidity and salt, then put to one side.
  • Put a large frying pan on a high heat. Cut four thick slices of brioche or bread and put them into the hot pan, dropping the cubes of butter in and around the bread so it can soak inches Turn the heat down to medium and continue to cook until the slices are toasted on both sides. Put a slice on each plate and spoon over your shrimp.
  • If you've got some good fish roe, add a little spoonful of that on top, then sprinkle over the rest of your dill and serve right away.

Often, when you least expect it, Swedish dishes get spanked by the use of really interesting spices. Cardamom is the sort of flavour you'd expect to taste in Indian food, but they love it in Sweden, too. Swedes add eggs and butter to lots of pastries to enrich them, so they've often got a sort of brioche vibe going on, which is a really lovely thing that I've incorporated here. The sourness of the berries really brings out the sweetness of the bread, and on top of that it looks bloody gorgeous. 1 (.25 ounce/7 g) packet of yeast
1 1/2 cups/375 ml warm milk
1 heaped teaspoon ground cardamom (or about 20 cardamom pods)
2 large eggs, preferably free-range or organic
A pinch of sea salt
7 ounces/200 g caster sugar (superfine)
3 1/2 tablespoons/50 g melted butter
1 3/4 pounds (28 ounces)/800 g plain flour, plus extra for dusting
1 tablespoon/15 g unsalted butter
2 1/2 ounces/75 g demerara sugar (raw sugar)
For the filling
14 ounces/400 g blueberries
2 1/2 ounces/75 g caster sugar (superfine)

  • For the dough:;
  • Stir the yeast into the warm milk in a bowl, then put it aside.;
  • If using cardamom pods, lightly bash them in a pestle and mortar, then pick out the husks and pound the seeds to a fine powder.
  • Beat the eggs and salt in a large bowl, then add the cardamom, sugar, melted butter,
  • 18 ounces/500 g flour, and the milk and yeast mixture. Whisk constantly as you add everything so you end up with quite a thick, gluey consistency. Mix in the remaining
  • 10 ounces/300 g flour until you have a dough. Use clean, floured hands to bring the dough together, then dust the top with flour.
  • Cover the bowl with plastic wrap or clingfilm and leave in a warm place to prove or rise for 1 hour, or until the dough has doubled in size and is full of air pockets.
  • For the filling:
  • Meanwhile, put the blueberries and caster sugar (superfine) into a bowl. Finely grate the orange zest and add most of it to the bowl, along with a good squeeze of orange juice, then mash together with a potato masher.
  • Line a large baking tray with greaseproof paper, then dot the paper with a few knobs of the butter and sprinkle over 1/2 the demerara sugar (raw sugar).
  • Dust a clean surface and your hands with flour and gently stretch and pull the risen dough out until it's a bit bigger than a 8 1/2 by 11-inch letter-size/A4 (210 mm by 297 mm) piece of paper.
  • Cook's Note: This next bit is pretty messy, so have a bowl of flour on hand to help you handle the dough and don't be alarmed if it seems quite wet.
  • Use a slotted spoon to move 1/2 the mashed blueberries onto the dough. Try not to include too much juice. Use the back of the spoon to spread the blueberries around the dough. Pull the sides of the dough up and into the middle like an envelope, and keep turning and pushing the dough together.
  • Cut the dough into 8 equal portions, then pull and stretch each one into a long, thin sausage shape, twisting them around on themselves so you get a sort of rough knot. Arrange them on the tray, leaving enough room between for them to spread as they cook. Push your fingers into the top of each one to make a little well, then spoon in a few of the remaining mashed berries and gently push them down.
  • Spoon over a little of the blueberry juice from the bowl, then sprinkle with the rest of your demerara sugar (raw sugar) and the reserved orange zest. Cover with a damp tea towel and leave to prove or rise for about 20 minutes in a warm place.
  • Preheat your oven to 350 degrees F/180 degrees C/gas 4. Once the buns have risen, put them into the oven and cook for 25 minutes, until golden and crispy. Serve them, hot and delicious, by themselves or with warm custard.

1 tablespoon mixed fresh herbs, such as dill, flat-leaf parsley or 1 tablespoon chives, roughly chopped
300 g ground pork, the best quality you can afford
300 g minced beef
1 large egg
100 ml milk
75 g dried breadcrumbs
1 teaspoon ground allspice
sea salt & freshly ground black pepper
olive oil
1/2 lemon, juice of
300 ml beef stock, preferably organic (if using a stock cube, 1/2 is enough)
1 tablespoon plain flour
60 ml double cream
1 (200 g) jar of lingon berries, cranberry, blackberry or 1 (200 g) blackcurrant jam, to serve

Steps:

  • Set aside a few of the herbs, then put the rest into a large bowl with the pork, beef, egg, milk, breadcrumbs and allspice. Add a good pinch of salt and pepper, then get your clean hands in there and scrunch and mix it well.
  • Divide the mixture in half, then pat and roll each half into a sausage shape. Cut each one into 15 equal pieces, then wet your hands and roll 30 little balls. Keep wetting your hands as you go so you get nice round elegant meatballs. Put them on a large oiled tray, then cover with clingfilm and pop into the fridge for 1 hour to firm up.
  • When you're ready to cook, put your largest pan on a medium heat and add a glug of olive oil. Once hot, add the meatballs and fry gently for 10 to 15 minutes, tossing occasionally, until they are golden brown.
  • Transfer the meatballs to a large plate. Spoon away any excess fat from the pan, then add the lemon juice, a splash of stock, the flour, the cream, a heaped tablespoon of lingon berry or berry jam and a good pinch of salt and pepper. Bring to the boil, then turn the heat down and reduce until you have a nice consistency that will cling to the meatballs. Taste it, then season with a pinch of salt and pepper. Return the meatballs to the pan and move them around so they get coated in the sauce.
  • Serve your meatballs - eight per person is about right - drizzled with any lovely sauce left in the pan and with a few spoonfuls of warmed-up jam on top.

  • Finely chop tender sprigs from ¼ small bunch dill to yield ¼ cup.; place in a large bowl. Set some larger sprigs aside for serving.
  • Thoroughly pat dry one 12-oz. bag frozen cooked small shrimp, thawed, with a kitchen towel or paper towels. Coarsely chop half of the shrimp. Place all shrimp in bowl with onion and dill.
  • Using a Microplane, finely grate zest of 1 lemon into bowl, then cut lemon in half and squeeze juice of one half through your hand or a fine-mesh sieve into a small bowl; you should have 1 Tbsp. Add lemon juice to bowl with shrimp and mix gently with a rubber spatula to combine. Cut remaining lemon half into 4 wedges and set aside for serving.
