SALT & PEPPER SQUID



Salt & pepper squid image

Crispy but tender squid with a hum of pepper heat, complemented by fragrant herbs, crispy garlic and a hit of vinegar - this is my evolution of the classic dish that I know you all love. Traditionally, it comes from Cantonese cuisine, where heat was achieved using finely ground peppercorns, but I couldn't resist adding a few chillies here for double pleasure.

½ a bunch of fresh mint, (15g)
4 spring onions
8 medium whole squid, (500g), gutted, cleaned, from sustainable sources
vegetable oil, for frying
white pepper
100 g plain flour
1 small handful of fresh mixed-colour chillies
4 cloves of garlic
1 tablespoon white or red wine vinegar

Steps:

  • Pick the mint leaves into a small bowl of cold water to ensure they stay super-fresh.
  • Trim the spring onions and halve across the middle, then finely slice lengthways and add to the water bowl.
  • Pat the squid dry with kitchen paper, then use a regular eating knife to lightly score the inside of the squid at ½cm intervals at an angle. Turn the squid through 90° and do the same again to create a criss-cross pattern.
  • When you're ready to cook, just under half fill a large sturdy pan with oil - the oil should be 8cm deep, but never fill your pan more than half full - and place on a medium-high heat. Use a thermometer to tell when it's ready (170°C), or add a piece of potato and wait until it turns golden - that's the sign that it's ready to go.
  • While it heats, tip 1 heaped tablespoon of white pepper and the flour into a large bowl with a pinch of sea salt. Add the squid, toss and mix together to coat, then leave in the flour for a few minutes while you prick the chillies - if some are bigger, halve and deseed them first - then peel and finely slice the garlic 1mm thick, ideally on a mandolin (use the guard!).
  • When you're ready to fry, add half the squid and chillies - it's important to cook in two batches so you don't overcrowd the pan. When it's all looking golden and lovely (after about 1½ minutes), add half the garlic for a final minute.
  • Use a slotted spoon to scoop everything into a bowl or pan lined with kitchen paper to drain while you cook the second batch.
  • Whip out the paper, then cut the squid into bite-sized pieces and return to the bowl. Drizzle with the vinegar, add a good pinch of seasoning, the drained mint leaves and spring onion curls, toss it all together and serve right away.

Inspired by the investment in flavour that Nonna Franchina made in stuffing her squid, I came up with this recipe, which uses the same principle but in reverse. We're making a mind-blowing salsa to plunge the hot grilled squid straight into, creating a wonderful harmony between flavour and texture. The salsa is also great when used to dress grilled veg, lamb or other seafood, tossed with pasta or as a topping for crostini.

2 tablespoons baby capers in brine
2 lemons
Extra-virgin olive oil
1 clove of garlic
1 fresh red chilli
4 anchovy fillets in oil, from sustainable sources
30 grams (1 ounce) shelled unsalted pistachios
1/2 a bunch of fresh mint (15 grams [0.5 ounce])
4 large squid, cleaned, gutted, from sustainable sources
500 grams (17 ounces) large ripe tomatoes

Steps:

  • Soak the capers in a bowl of water. Squeeze all the lemon juice into a large shallow bowl and add 4 tablespoons of oil. Peel the garlic and finely chop with the chilli, anchovies, pistachios, drained capers and mint leaves. Scrape it all into the bowl and mix together well.
  • Reserving the tentacles, run a sharp knife down the length of each squid tube, cutting through one side only so you can open each one out like a book. Lightly score the inside of each tube in a criss-cross fashion at 1/2-centimeter (1/4-inch) intervals. To cook the squid, follow Franchina's guidance and get the tentacles on early, then add the tubes, from largest to smallest. In a screaming hot griddle pan or on a barbecue, cook each piece for about 1 minute per side--with no oil or seasoning--until lightly charred and starting to curl. Start with the cut side when you do the tubes, and keep the squid moving for even cooking. As each piece is done, use tongs to dunk it straight into the salsa, turning and coating it in all that flavour.
  • Slice the tomatoes and lay over a serving platter. Finely slice the squid tubes, pull the tentacles apart, then arrange on top of the tomatoes. Spoon over all the remaining salsa and serve hot or at room temperature.

SALAD OF MARINATED CHARRED SQUID WITH CANNELLINI BEANS, ROCKET, AND CHILE

Number Of Ingredients 8

2 pounds 3 ounces (1 kilogram) squid, trimmed and gutted
Salt and freshly ground black pepper
1 (14-ounce or 400 gram) tin of cannellini beans, or use 6 ounces (17 grams) dried ones, soaked and cooked until tender
1 to 2 fresh red chiles, sliced
2 good handfuls rocket (arugula)
2 to 3 tablespoons lemon juice
4 tablespoons olive oil
Extra-virgin olive oil

Steps:

  • Try to get your fishmonger to skin and gut the squid for you. Score the squid lightly in a casual criss-cross fashion. Set it aside while you get a griddle pan very, very hot. You can also use a wok or the barbecue.
  • Season the squid lightly with salt and pepper just before cooking, then add it to the pan. After a minute, it should be nicely charred, so turn it over and cook for a further minute. Remove the squid from the pan and set aside.
  • Heat up the cannellini beans and sprinkle them into a bowl. Add the sliced chiles to the bowl with the rocket, lemon juice, and olive oil, and season. Cut the squid at irregular angles and toss it in with the rest of the ingredients. A good drizzle of extra-virgin olive oil over the top will finish it off nicely.

ROASTED CONCERTINA SQUID WITH GRILLED LEEKS AND A WARM CHORIZO DRESSING

I think this is a great, robust, spicy, exciting dish. The flavors from the chorizo dressing along with the grilled leeks and fennel are just incredible.

4 medium-sized squid, skinned, cleaned and prepared (tentacles removed but reserved)
8 baby leeks, outer leaves trimmed back, washed
Olive oil
Sea salt and freshly ground black pepper
1 bulb fennel, cut into thin wedges, herby tops reserved
1 radicchio, leaves separated, washed and spun dry
2 lemons, halved
Olive oil
4 ounces chorizo sausage, chopped into small pieces
1 sprig fresh rosemary, leaves picked and chopped
2 cloves garlic, peeled and finely grated
3 tablespoons balsamic vinegar
1 lemon, juiced
Sea salt and freshly ground black pepper

Steps:

  • To achieve the beautiful concertina effect, take a squid and place a large chef's knife flat inside it. Using a second knife, slice the squid across into 1/4-inch slices, as if you're cutting it into rings. You won't be able to cut all the way because of the other knife.
  • Light your barbecue or preheat a griddle pan to hot. Preheat your oven to maximum.
  • Parboil the baby leeks for 3 minutes in a pan of boiling salted water, drain in a colander and let them steam dry. Dress them with some olive oil and a pinch of salt and pepper. Cook the leeks on the barbecue or in the griddle pan on both sides until nicely marked, then add the fennel wedges and chargrill these dry on both sides until they are also marked. Add the radicchio leaves and dry grill these on both sides to wilt them - 30 seconds on each side should do. Put the leeks, fennel and radicchio into a large bowl - they might look a bit sad, but don't worry because you're going to pep them up!
  • For the chorizo dressing: Heat a frying pan with a couple of glugs of olive oil. Fry the chorizo until the fat renders out, add the rosemary and garlic, toss and take off the heat after 30 seconds. Add the balsamic vinegar and half the lemon juice to the pan, mix and put to 1 side.
  • Drizzle some olive oil over each squid, sprinkle with salt and pepper and toss well. Preheat an ovenproof pan on the stove top, pour in some olive oil and toss the reserved tentacles in the oil for 1 minute. Add all 4 squid and whack the pan in the preheated oven for a few minutes or until cooked and lightly browned.
  • Pour the chorizo dressing over your chargrilled veggies and add a good squeeze of lemon juice. Take the squid out of the oven. Serve each of your guests a nice pile of the dressed veggies, a concertina squid, some tentacles and half a lemon. Sprinkle over some of the reserved herby fennel tops and tuck in!

STUFFED BRAISED SQUID

Salina is known for its capers, and as her family have grown them for generations, Nonna Franchina is totally in tune with how to make the most of them in her cooking. This dish is a wonderfully tasty example of that.

25 grams (1 ounce) baby capers in brine
100 grams (3.5 ounces) coarse stale breadcrumbs
1 large free-range egg
Olive oil
15 grams (0.5 ounce) pecorino or Parmesan cheese, plus extra to serve
1 clove of garlic
1/2 a bunch of fresh flat-leaf parsley (15 grams [0.5 ounce])
1 red onion
10 ripe cherry tomatoes
One 680-gram (24-ounce) jar of passata
4 medium squid, cleaned, gutted, from sustainable sources (300 grams [10 ounces] total)
300 grams (10 ounces) dried spaghetti
2 sprigs fresh basil

Steps:

  • Place half the capers in a bowl with the breadcrumbs, egg, 1 tablespoon of oil and 2 tablespoons of water. Finely grate in the pecorino, peel the garlic, finely chop with the parsley (stalks and all), then scrunch it all together.
  • Peel and finely slice the onion and place in a casserole pan on a medium heat with 2 tablespoons of oil, stirring occasionally. Now, a great nonna trick: squeeze the tomatoes while submerged in a bowl of water to remove the seeds (and prevent them going everywhere!). Add the tomatoes to the pan with the passata. Simmer on a low heat while you stuff the squid.
  • Keeping the tentacles to one side, just over half-fill each squid tube with the breadcrumb mixture, pushing it right down into the tube but being mindful not to pack it too tightly. Use a cocktail stick or toothpick to seal or, like Franchina learnt from her grandparents, use a needle and thread. Stir the remaining capers into the sauce, then add the stuffed squid and tentacles. Simmer on a low heat for 25 to 30 minutes, or until tender.
  • Meanwhile, cook the pasta in a pan of boiling salted water according to the packet instructions. Use tongs to move the squid pieces to a board. Removing the sticks or thread, slice the tubes to reveal the filling, then arrange on a platter, spoon over a little sauce and pick over the basil. Drain the pasta, reserving a mugful of starchy cooking water, then toss with the remaining sauce, loosening with a splash of cooking water, if needed. Serve with a grating of pecorino, alongside that tasty braised squid.
