BUDDY'S FLAPJACK BISCUITS

The method is super-easy, the food processor does all the hard work, and the measurements are straightforward, too. Get your kids to help with the weighing - they'll love it.

Steps:
- Preheat the oven to 180ºC/350ºF/gas 4.
- Line a deep 20cm square baking tin with greaseproof paper and rub with olive oil.
- Pulse the butter, dried fruit and nuts, oats and flour in a food processor until the mix comes together and away from the sides, then pulse in the syrup until fully combined.
- Transfer to the lined tin, flattening to the edges. Bake for 15 to 20 minutes, or until golden.
- Remove from the oven, slice into 16 squares ready to cut, and leave to cool in the tin for 5 minutes.
- Use the paper to lift out on to a wire rack, and leave to cool completely. Simple, easy, delicious - spread the word!

- Preheat the oven to 180ºC/gas 4. Grease and line a 25cm x 30cm roasting tray with non-stick paper.
- Roughly chop the chestnuts and pistachios and finely grate the orange zest.
- Remove the seeds from the cardamom pods and place in a pestle and mortar, along with the caraway seeds and ground until fine.
- Put the golden syrup, sugar and butter in a pan and place over a low heat to gently dissolve the sugar and melt the butter.
- Combine the remaining ingredients in a bowl. Stir in the wet mixture until combined.
- Pour into the tin and smooth to even the surface. Bake for 25 to 30 minutes, until golden brown.
- Remove from the oven and leave to cool for 5 minutes. Cut into squares, then leave in the tin to cool completely.

- Heat the oven to 190C/170C fan/gas 5. Line an 18cm square tin with baking parchment. Put the dates into a food processor and blitz until they are finely chopped and sticking together in clumps.
- Put the low-fat spread, agave syrup and dates into a saucepan and heat gently. Stir until the low-fat spread has melted and the dates are blended in. Add all the remaining ingredients to the pan and stir until well mixed. Spoon the mixture into the tin and spread level.
- Bake in the oven for 15-20 mins until golden brown. Remove and cut into 12 pieces. Leave in the tin until cold. Store in an airtight container.
