Spinach with Pine Nuts and Raisins Recipe - Espinacas a la Catalana image

This classic Spanish dish of spinach with pine nuts and raisins is a delicious way to get your daily veggies! Make your own espinacas a la catalana at home in no time at all.

Number Of Ingredients 8

2.5 pounds just over 1kg fresh baby spinach leaves
1/2 teaspoon sea salt
1/2 cup water
1/3 cup golden raisins
2 tablespoons extra virgin olive oil (plus more to serve)
1/3 cup pine nuts
2 cloves of garlic (finely sliced)
Salt and pepper (to season)

Steps:

  • Place all of the raisins in a small bowl and cover with water. Put to one side and leave them to rehydrate.
  • To prepare the spinach, wash any dirt or soil off of the leaves, and trim the stalks (not necessary if using baby spinach). Once clean, place in a large pot with the salt and water over medium heat. Cook, stirring, for 3-4 minutes or until the spinach is wilted.
  • Strain through a colander and gently squeeze with your hands to remove any excess water. Leave in a colander over a bowl to continue draining.
  • Place a large skillet or frying pan over medium-low heat and add the pine nuts. Toast the pine nuts until they are lightly golden brown, about 1-2 minutes. Shake the pan quite a bit to move the nuts around and toast evenly on all sides. Remove the nuts from the pan and place on a plate to one side.
  • Put the pan back on the heat. Add the olive oil and increase the heat to medium. When the olive oil is hot, add the garlic and begin to fry until lightly golden (about 1-2 minutes).
  • Drain the raisins and add them to the pan. Also add the spinach, stirring to mix together with the raisins and garlic. Cook, stirring constantly, until any excess water has evaporated completely.
  • Add the pine nuts back into the pan and stir to combine everything.
  • Remove the pan from heat and serve immediately. Season with salt, pepper, and more olive oil.

2 tablespoons spanish extra virgin olive oil
1 gravenstein apple, peeled, cored, and cut into 1/4 inch cubes (read *NOTE)
1/4 cup pine nuts
1/4 cup seedless dark raisin
1/2 teaspoon salt, plus more to taste
10 ounces fresh Baby Spinach, washed and patted dry (I use a salad spinner)

Steps:

  • *NOTE: Original recipe specified a golden delicious apple. However any apple variety that holds its shape well for baking will work in this recipe: Rome beauty, braeburn, gala, for example.
  • Heat the olive oil in a large pan over a medium-high flame.
  • When the oil is very hot, add the apple cubes and cook until they are lightly browned; about 1-2 minutes.
  • Add the pine nuts and cook until they are lightly browned; about 20-30 seconds. Watch pan carefully as the pine nuts can burn quite easily! *Constantly stir the nuts to avoid burning.*.
  • Add the raisins and the 1/2 teaspoon salt; stir together. Add the spinach and sauté very fast until it just starts to wilt; about another 20-30 seconds.
  • Now remove the pan from the heat; the spinach will continue to wilt off the heat.
  • Add salt to taste, and serve immediately.

This recipe is from the celebrated food writer Laurie Colwin, and in some ways it is quintessentially hers. There's the delicious richness of the dish, its unfussiness and nostalgic value. There is the constant awareness of the plight of the busy home cook, those who would just as soon use a package of frozen spinach if the results are just as good as if you washed and chopped an untold number of bunches of fresh spinach yourself. And there is a twist: the jalapeños, which are a preventative measure against the gloppy blandness of steakhouse creamed spinach, adding sharpness to the dish but not too much heat. You can use either fresh or pickled jalapeños here - the latter add nice zing - and panko bread crumbs are a good substitution for fresh if you don't have them (or a few pieces of stale bread) in the pantry. 2 10-ounce packages whole-leaf frozen spinach (do not thaw)
4 tablespoons butter, additional for buttering pan
2 tablespoons all-purpose flour
2 tablespoons chopped onion
1 clove garlic, minced
1/2 cup evaporated milk
Black pepper
3/4 teaspoon celery salt
6 ounces Monterey Jack cheese, cut into cubes
1 pickled or fresh jalapeño pepper, chopped, or more to taste
1/2 cup soft buttered bread crumbs (see note)

Steps:

  • Heat oven to 300 degrees. Meanwhile, cook spinach according to package directions. Drain, reserving 1 cup of liquid, and chop finely.
  • Butter a shallow 8-inch-square casserole dish or other shallow 4- to 6-cup baking dish. Melt remaining 4 tablespoons butter in a saucepan and add flour. Blend and cook 2 to 3 minutes. Do not brown. Add onion and garlic.
  • Add the spinach liquid slowly, then add evaporated milk, some black pepper, celery salt and cheese. Mix well and add jalapeño and spinach. Cook until all is blended.
  • Turn into the casserole dish, top with buttered bread crumbs and bake until lightly browned, about 45 minutes.

6 tbsp. butter, separated into 1 tbsp. and 5 tbsp.
1/2 yellow onion, diced
4 c. milk
2 tsp. garlic powder
1 tsp. crushed red pepper flakes
1 tsp. mustard powder
5 packages frozen spinach, thawed (50 ounces total)
5 tbsp. flour
1 c. Velveeta cheese, cut into slices
1 c. shredded sharp Cheddar cheese
1 1/2 c. grated Monterey Jack cheese, divided into 1/2 c. and 1 c.

Steps:

  • Preheat the oven to 350°F. Place 1 tbsp. butter in a large saucepan over medium heat. Once it's melted, add the onion and cook until the onion has softened and turned lightly golden, about 4-5 minutes. Add milk, garlic powder, red pepper flakes and mustard powder into the saucepan. Bring the mixture to a boil, stirring regularly. As soon as it starts to boil, reduce the heat to simmer, leaving it there to thicken. Melt the remaining 5 tbsp. butter in a smaller saucepan, then sprinkle 5 tbsp. flour in it. Stir the flour in to form a paste, cooking over low heat for about 2-3 minutes. Add this mixture to the large saucepan filled with milk and spices. Stir to combine. Reduce the heat on the large saucepan to medium, then gradually add the Velveeta and cheddar cheese, stirring regularly so that the cheese melts, creating a thick sauce. Add in 1/2 c. Monterey Jack cheese, setting aside the other cup for topping the spinach dish. Once all of the cheese has melted, remove the saucepan from heat. Drain any excess water from the thawed spinach. Add it to the cheese sauce, mixing to combine. Pour the mixture into a large casserole dish and top with remaining Monterey Jack cheese. Cook in the oven for 15-17 minutes, or until the cheese has melted and the mixture is bubbly slightly.

1 apple, peeled and diced into half-inch cubes
1/4 cup pine nuts
1/4 cup raisins
12 oz. baby spinach

Steps:

  • Heat the olive oil in a large skillet over high heat. Add the apple cubes and let them caramelize, stirring occasionally, for 4-5 minutes. Add the pine nuts and stir them around until they turn golden brown; stay close by, as these suckers can go from toasted to burned in just a few seconds. Add the spinach and cook until fully wilted and combined with the other ingredients. Season with salt and serve!

4 jalapeno peppers, stemmed
4 cloves garlic, peeled
1 ½ teaspoons cracked black pepper
1 tablespoon coarse salt
¼ cup lime juice
1 tablespoon dried oregano
1 ½ pounds top sirloin steak

Steps:

  • Combine jalapenos, garlic, pepper, salt, lime juice and oregano in a blender. Blend until smooth.
  • Place steak in a shallow pan or large resealable plastic bag. Pour jalapeno marinade over the steak, and turn to coat. Cover pan or seal bag; marinate in the refrigerator 8 hours or overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grill grate.
  • Drain and discard marinade. Grill steak 5 minutes per side, or to desired doneness.

2 1/2 pounds spinach
2 to 3 tablespoons olive oil
2 small yellow onions or 6 green onions, minced
4 tablespoons raisins, plumped in hot water and drained
4 tablespoons pine nuts, toasted
Salt and freshly ground pepper to taste

Steps:

  • Rinse the spinach well and remove the stems. Place in a large sauté pan with only the rinsing water clinging to the leaves. Cook over medium heat, turning as needed until wilted, just a few minutes. Drain well and set aside. Add the olive oil to the now-empty pan and place over medium heat. Add the onions and sauté until tender, about 8 minutes. Add the spinach, raisins, and pine nuts and sauté briefly to warm through. Season with salt and pepper and serve warm or at room temperature.
