JUICY GRILLED PORK CHOPS WITH SPICY PEACH GLAZE

- In a container large enough to hold your meat, dissolve the salt in water. Add pork chops. If there's not enough liquid to cover, add a solution of 1 cup of water and 1 Tablespoon of salt until the pork chops are completely submerged. Let sit for at least 30 minutes and up until 2 hours.
- Meanwhile (right before grilling), make the glaze. Add wine, jam, jalapeno and red pepper flakes to a small saucepan over low-medium heat. Bring to a boil and simmer until reduced by half and the mixture is thick and syrupy. Remove from heat and stir in butter. Set aside.
- Remove pork chops from the brining solution and pat dry. Season each side with coarse ground black pepper.
- Preheat all grill burners on high for 15 minutes. Turn all burners down to low and place the pork chops on the grill. Turn and rotate the chops every five minutes for about 15-20 minutes before starting to check the internal temperature of the pork chops. (Your grill will have its own hot spots, rotate the chops around for even cooking.)
- When chops reach an internal temperature of at least 135 degrees F, begin brushing the glaze on each side of the pork chop. Continue grilling the pork chops until they reach the desired temperature of 145 degrees F. To check doneness properly, use a digital cooking thermometer to measure the temperature at the thickest part of the cut without touching any bone. Once you have reached the desired internal temperature of 145 degrees F, remove them from heat and let the pork chops rest for three minutes.
- Serve immediately.

- 1. Cook pork chops until done in the butter and olive oil. Remove chops from pan and keep warm.
- 2. Make the hot pepper jelly by heating the marmalade or jam in a pan with the chopped jalapeno and simmer, watching carefully until the jalapeno softens. If you have Chinese chili garlic sauce (very spicy) use that, about 1 tablespoonful. That is what I used and it was great, but we like really spicy food. Add the chopped peaches.
- 3. Saute the peaches and pepper jelly until reduced and thickened. Spoon over pork chops and serve.

- 30 minutes before you're ready to start grilling take the pork chops out of the refrigerator and coat with a thin layer of olive oil and season with salt and pepper.
- In a mixing bowl, toss together the sliced peaches, tomatoes, jalapeño, cilantro, shallot, honey, olive oil, lime juice and zest. Season with salt and then set aside.
- Prepare a medium-hot fire in a grill, or preheat a cast-iron grill pan on the stovetop over medium-high heat. Grill the pork chops for 5-7 minutes on each side or until the internal temperature reads between 135-145F. Let rest for 5 minutes before serving.

- Make the pork chops: In a food processor, blitz the jalapeños, garlic, cilantro stems, rice vinegar, olive oil, salt and sugar until smooth. Place the pork chops in a large bowl or resealable container and pour the marinade over them; turn the chops to evenly coat. Cover and refrigerate for at least 30 minutes and up to 24 hours.
- While the chops marinate, prepare a charcoal grill for direct high-heat cooking, or heat a gas grill to medium-high.
- Make the relish: In a small bowl, toss the jalapeño, red onion, rice vinegar, salt, sugar and 2 tablespoons water. Set aside to quick-pickle until ready to serve, or refrigerate for up to 24 hours.
- Carefully grease the grill grate: Use tongs to grip a wadded paper towel dipped in oil and then rub the grates with the oiled towel. With the marinade clinging to them, place the pork chops on the hot greased grate. Grill until the chops are charred at the edges and no longer pink in the middle, 2 to 3 minutes per side. The meat is ready to flip when it releases easily from the grates. (If using a gas grill, close the lid between flips.) Alternatively, cook the chops on the stovetop in batches. Heat a large skillet or grill pan over medium-high. Add enough oil to lightly coat the bottom of the pan, and heat until shimmering. Add the chops, with the marinade clinging to them, to the pan. Sear until browned and caramelized at the edges and no longer pink in the middle, 3 to 4 minutes per side. Discard any remaining marinade.
- Serve the chops with the relish and cilantro on top. If you'd like, serve rice alongside.
SPICY HONEY-GLAZED GRILLED PORK CHOPS WITH PEACH PICO DE GALLO
These grilled pork chops are flavored with a spiced-honey glaze that helps them get a nice char. Serve with a chunky peach pico de gallo.

- Trim excess fat from pork chops. Pat dry and season both sides with salt. Set aside.
- Mix red pepper flakes, garlic powder, onion powder, paprika, ½ tsp. cumin seeds, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a small bowl to combine. Heat honey in a small saucepan over medium just until warm. Remove pan from heat and stir in spice mixture. Set spiced honey aside.
- Toss peaches, red onion, jalapeño, lime juice, cilantro, remaining ½ tsp. cumin seeds, and remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt in a medium bowl to combine. Chill peach pico de gallo until ready to serve.
- Prepare a grill for 2-zone heat (for a charcoal grill, bank two thirds of coals on one side of grill and scatter remaining coals on other side; for a gas grill, set one burner to high heat and remaining burners to medium-low); oil grate. Grill reserved chops on hotter side of grill, moving to cooler side as needed to control flare-ups, until lightly charred on both sides, about 3 minutes per side. Move pork chops to cooler side of grill, cover, and grill, turning often and basting with reserved spiced honey, until an instant-read thermometer inserted into the thickest part of pork chops registers 145°, about 5 minutes longer. Transfer pork chops to a platter and let rest 10 minutes.
- Spoon peach pico de gallo over pork chops just before serving.

- Pat pork chops dry with a paper towel and season generously with salt and pepper. Heat the olive oil in a large skilled over medium high heat. Sear the outside of the pork chops, about 2 minutes on each side – just enough to give them some good color.
- Transfer the chops to a foil lined baking sheet, and cover each with a heaping spoonful of glaze and one or two sage leaves. Bake for 6 minutes, then flip the chops over and cover in another spoonful of glaze and more sage leaves. Cook in intervals of 5 minutes, checking for doneness until just cooked. Properly cooked pork chops should have an internal temperature of 145°F. Mine typically take about 15 minutes total in the oven, but this can vary depending on the thickness of the cut.
- Once done, let the chops rest for 5 minutes before cutting into them. Serve with your favorite vegetables and any extra glaze you might have on the side for a delicious meal.
