This jalapeño margarita is my favorite summer cocktail. It's so simple to make - be sure to adjust your drink to suit your tastes, and enjoy!

¾ cup good tequila
¼ to ½ jalapeño pepper, plus extra slices for garnish
¼ cup Grand Marnier
½ cup fresh lime juice, plus lime slices for garnish
¼ cup simple syrup or fresh squeezed orange juice
a few splashes of sparkling water
handful of ice

Steps:

  • Pour the tequila into a mixing glass or small pitcher. Add the sliced jalapeño, ¼ to ½ of it, depending on how spicy you want your margaritas. Set aside at room temperature for 15 minutes (the longer you let the jalapeños infuse, the spicier it will be).
  • Make the margaritas by mixing together the jalapeño-infused tequila, Grand Marnier, lime juice and ¼ cup simple syrup or orange juice. Taste. If you'd like a spicier margarita, add more jalapeño and let it it sit a little longer. Pour into glasses and add lime slices and jalapeños for garnish. For a lighter margarita, fill the glasses ½ full and top with sparkling water.

2 ounces jalapeno infused tequila (recipe below)
2 ounces triple sec
4 ounces fresh lemon juice
1 ounce simple syrup
3 cups ice
2 tequila infused jalapeno pepper rings, garnish (rings soaked in tequila)
lemon juice (for rimming the glass)
coarse salt (for rimming the glass)
1 jalapeno pepper
4 ounces tequila

Steps:

  • Rim 2 margarita glasses by coating the rim in lemon juice and then dipping the glass in a plate of course salt. Drop tequila infused jalapeno rings into the glasses for garnish; set aside.
  • In a blender combine tequila, triple sec, lemon juice, simple syrup and ice. Blend until mixture is blended until desire consistency. Pour and serve immediately.
  • To make jalapeno infused tequila: Slice 1 jalapeno into discs and place into a glass jar. Add 4 ounces tequila. Seal and set aside for 4 - 24 hours. A four hour infusion will slightly infuse the tequila, longer produces a stronger end product.

kosher salt
ice cubes
4 fluid ounces tequila
2 fluid ounces triple sec
2 limes, juiced
1 tablespoon agave nectar
½ jalapeno pepper, seeded and diced
1 limes, cut into wedges

Steps:

  • Pour 1/4 to 1/2 inch of salt onto a small, shallow plate. Moisten the rim of two margarita glasses with water and dip into the salt. Fill with ice, and set aside.
  • Pour the tequila, triple sec, lime juice, agave nectar, and jalapeno into a cocktail shaker over ice. Cover, and shake vigorously until the outside of the shaker has frosted. Strain into the prepared glasses, and garnish with lime wedges to serve.

Our easy make-ahead cocktail has a surprising kick, thanks to the addition of a whole jalapeno. (You can seed it if you want to tone down the heat.) Celery leaves provide an unexpected but cooling contrast.

6 ounces fresh lime juice plus 1 lime wedge, for the rims
1 tablespoon confectioners' sugar
Handful celery leaves
1 jalapeno, thinly sliced
16 ounces tequila
8 ounces orange liqueur
Kosher salt, for the rims

Steps:

  • Pulse the lime juice, confectioners' sugar, celery leaves and jalapeno in a blender. Mix with the tequila and orange liqueur in a pitcher and refrigerate until chilled, at least 2 hours.
  • To serve, put some kosher salt on a small plate. Rub the rims of 8 cocktail glasses with the lime wedge and dip the rims in the salt. Add ice to the glasses and pour in the margarita.

1 small jalapeno pepper (or half a large jalapeno)
1 1/2 cups silver tequila, such as Avion
1 cup Triple Sec
1 cup freshly squeezed lime juice (8 limes)
1/4 cup freshly squeezed lemon juice (2 lemons)
2 tablespoons honey
Pinch of kosher salt
Ice

Steps:

  • Pierce the jalapeno pepper in 8 to 10 places with the tip of a sharp paring knife and cut it in half lengthwise, leaving the seeds and the ribs. Place the pepper in a 4-cup liquid measuring cup, pour in the tequila, cover with plastic wrap, and allow to sit at room temperature for 24 hours.
  • Discard the jalapeno and pour the tequila into a pitcher through a sieve to remove the seeds. Add the Triple Sec, lime juice, lemon juice, honey, and salt and stir. Use immediately or cover and refrigerate for up to 6 hours.
  • When ready to serve, fill 6 margarita glasses with ice and pour over the margarita mixture; or fill a cocktail shaker with ice and some of the mixture, shake vigorously for 30 seconds, and pour into glasses. Serve ice cold.
