JALAPENO MARGARITAS
This jalapeño margarita is my favorite summer cocktail. It's so simple to make - be sure to adjust your drink to suit your tastes, and enjoy!

- Pour the tequila into a mixing glass or small pitcher. Add the sliced jalapeño, ¼ to ½ of it, depending on how spicy you want your margaritas. Set aside at room temperature for 15 minutes (the longer you let the jalapeños infuse, the spicier it will be).
- Make the margaritas by mixing together the jalapeño-infused tequila, Grand Marnier, lime juice and ¼ cup simple syrup or orange juice. Taste. If you'd like a spicier margarita, add more jalapeño and let it it sit a little longer. Pour into glasses and add lime slices and jalapeños for garnish. For a lighter margarita, fill the glasses ½ full and top with sparkling water.

Steps:
- Rim 2 margarita glasses by coating the rim in lemon juice and then dipping the glass in a plate of course salt. Drop tequila infused jalapeno rings into the glasses for garnish; set aside.
- In a blender combine tequila, triple sec, lemon juice, simple syrup and ice. Blend until mixture is blended until desire consistency. Pour and serve immediately.
- To make jalapeno infused tequila: Slice 1 jalapeno into discs and place into a glass jar. Add 4 ounces tequila. Seal and set aside for 4 - 24 hours. A four hour infusion will slightly infuse the tequila, longer produces a stronger end product.

- Pour 1/4 to 1/2 inch of salt onto a small, shallow plate. Moisten the rim of two margarita glasses with water and dip into the salt. Fill with ice, and set aside.
- Pour the tequila, triple sec, lime juice, agave nectar, and jalapeno into a cocktail shaker over ice. Cover, and shake vigorously until the outside of the shaker has frosted. Strain into the prepared glasses, and garnish with lime wedges to serve.

JALAPENO MARGARITAS

- Pulse the lime juice, confectioners' sugar, celery leaves and jalapeno in a blender. Mix with the tequila and orange liqueur in a pitcher and refrigerate until chilled, at least 2 hours.
- To serve, put some kosher salt on a small plate. Rub the rims of 8 cocktail glasses with the lime wedge and dip the rims in the salt. Add ice to the glasses and pour in the margarita.
JALAPENO MARGARITAS
Steps:
- Pierce the jalapeno pepper in 8 to 10 places with the tip of a sharp paring knife and cut it in half lengthwise, leaving the seeds and the ribs. Place the pepper in a 4-cup liquid measuring cup, pour in the tequila, cover with plastic wrap, and allow to sit at room temperature for 24 hours.
- Discard the jalapeno and pour the tequila into a pitcher through a sieve to remove the seeds. Add the Triple Sec, lime juice, lemon juice, honey, and salt and stir. Use immediately or cover and refrigerate for up to 6 hours.
- When ready to serve, fill 6 margarita glasses with ice and pour over the margarita mixture; or fill a cocktail shaker with ice and some of the mixture, shake vigorously for 30 seconds, and pour into glasses. Serve ice cold.

- Dissolve 1/2 cup granulated sugar (100g) with 1/2 cup of water (120 ml) in a saucepan over medium heat. Chill in the freezer or fridge until needed.
- Slice 7-8 limes in half, then microwave them on a plate for 30-45 seconds. Squeeze the juice from them with a wooden citrus reamer.
- Stir together 3/4 cup of simple syrup with the freshly squeezed lime juice, orange juice, and the kosher salt. This part can be made ahead and refrigerated until later.
