Apple Crisp Cookies with a pie crust bottom, sweetened spiced apples and brown sugar oat topping. Mini apple crumbles perfect for sharing!

1 Pie Crust (, (you can make half that recipe))
5 Granny Smith apples (, peeled and diced)
1/4 cup granulated sugar
1 teaspoon cinnamon
2 tablespoons lemon juice
1 tablespoon cornstarch
1 cup flour
1/2 cup granulated sugar
1/2 cup light brown sugar (, packed)
1/2 teaspoon kosher salt
2/3 cup rolled oats (, (not instant))
10 tablespoons cold unsalted butter (, diced)

Steps:

  • Preheat oven to 350 degrees.
  • Add baking spray or grease regular muffin tin (you'll use it twice or spray two muffin tins).
  • Cut 24 two inch circles out of your pie crust.
  • If you need to, gather your scraps and re-roll them to 1/4 inch thickness.
  • Add the pie crust to the muffin tins.
  • In a small saucepan add the apples, sugar, cinnamon, lemon juice and cornstarch.
  • Cook for 5-7 minutesuntil the apples are softened and thickened.
  • To make the crisp topping, add the flour, 1/2 cup sugar, 1/2 cup brown sugar, salt, oats and butter to a bowl and combine with either a hand mixer or pastry cutter.
  • Add one tablespoon of apple filling to each muffin well.
  • Add two tablespoons of the crumble topping on top.
  • I give the tops a quick spray with canola oil, but it is totally up to you. I find it helps hold the topping together.
  • Bake for 18-20 minutes.
  • Let cool completely before carefully removing.

¼ cup brown sugar
¼ cup white sugar
¼ cup all-purpose flour
¾ teaspoon ground cinnamon
¾ cup all-purpose flour
¾ cup quick-cooking oats
⅔ cup brown sugar
2 tablespoons brown sugar
⅓ cup butter, melted
1 (9 inch) deep-dish pie shell

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix apples, 1/4 cup brown sugar, white sugar, 1/4 cup flour, and cinnamon together in a bowl.
  • Combine 3/4 cup flour, oats, and 2/3 cup plus 2 tablespoons brown sugar in a bowl. Drizzle melted butter over flour mixture; stir until crumbly.
  • Pile apple mixture into the pie shell. Scatter crumbly topping over apples.
  • Bake in the preheated oven until apples start to soften, about 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C). Continue baking until apples are soft and topping is browned, about 40 minutes more.

From my mother's collection of favorite recipes comes a delicious raspberry crisp, akin to the Dutch apple pie baking style. Serve with whipped cream.

4 cups fresh raspberries, divided
¼ cup water, or as needed
¾ cup white sugar
2 tablespoons cornstarch
1 ¾ cups quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
½ teaspoon baking soda
½ cup butter, softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch baking dish.
  • Crush 1 cup raspberries with a fork. Place crushed berries in a 1-cup liquid measuring cup and add enough water to bring back to 1 full cup.
  • Combine sugar and cornstarch in a saucepan. Stir in raspberry-water mixture and bring to a boil. Cook, stirring occasionally, until thick, about 2 minutes. Reduce heat to a simmer. Stir in remaining 3 cups raspberries; remove from heat and allow to cool.
  • Meanwhile, combine oats, flour, brown sugar, and baking soda in a bowl. Cut in butter with 2 knives or a pastry blender until the mixture resembles coarse crumbs.
  • Press 1/2 of the crumb mixture into the bottom of the prepared baking dish. Spread the raspberry mixture on top and sprinkle with the remaining crumb mixture.

1/4 cup granulated sugar
1 teaspoon kosher salt
2 1/2 cups all-purpose flour, plus more for surface
1 cup (2 sticks) unsalted butter, cut into small pieces, frozen 15 minutes
1 tablespoon chilled apple cider vinegar
For the filling:
2 medium Honeycrisp, Braeburn, and/or Golden Delicious apples (about 1 pound total)
1/4 cup light brown sugar
2 teaspoons fresh lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons all-purpose flour, plus more for surface
For assembly:
1 large egg
1 tablespoon milk
Demerara or raw sugar (for sprinkling; optional)
Special Equipment
A 3" round cookie or biscuit cutter; a small (about 1 1/2") leaf-shaped or round cookie cutter

Steps:

  • Make the pie dough:
  • Pulse sugar, salt, and 2 1/2 cups flour in a food processor to combine. Add butter and pulse until coarse, pea-sized crumbs form, about 10 seconds. With the motor running, add vinegar and 1/4 cup ice water and process until dough just comes together, about 30 seconds. Squeeze a small amount of dough between your fingertips; if it's very crumbly, add more ice water, 1 Tbsp. at a time (2 Tbsp. maximum). Do not overprocess.
  • Turn out dough onto a lightly floured surface and form into a rough ball. Knead a few times to combine, then divide into 2 equal balls. Flatten each ball into a disc with smooth edges and no cracks. Cover with plastic wrap and chill at least 1 hour or up to overnight.
  • Make the filling:
  • Peel, core, and slice apples into 1/4"-thick slices. Coarsely chop slices. Transfer to a large pot and add brown sugar, lemon juice, cinnamon, salt, 2 tsp. flour, and 2 Tbsp. water; stir to combine. Cook over medium heat, stirring occasionally and adding water 1 Tbsp. at a time if bottom starts to brown, until apples are softened but still have a little bite, about 10 minutes. Let cool to room temperature.
  • Bake the cookies:
  • Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper. Beat egg and milk in a small bowl.
  • Roll 1 disc of dough to an 1/8"-thick round about 13" in diameter. Using 3" cutter, cut dough into 12 rounds. Transfer rounds to prepared baking sheet. Spoon 1 heaping Tbsp. filling onto each round (do not overfill). Chill on sheet until ready to use.
  • Roll second disc of dough to an 1/8"-thick round about 13" in diameter. Using 3" cutter, cut into 12 more rounds. Using leaf-shaped cutter, cut a hole in center of each round.
  • Brush edges of rounds with apple filling with egg wash. Place cut-out rounds over filled rounds to create sandwiches, then press down lightly around edges to seal completely. Gently press down in center to even out filling.
  • Brush top of sandwiches with egg wash and sprinkle with demerara sugar, if using.
  • Bake cookies until golden brown and crisp on the bottom, 30-35 minutes. Let cool on baking sheet 5 minutes, then transfer to a wire rack and let cool completely.
  • Do Ahead
  • Cookies can be baked 2 days ahead. Loosely cover with foil and store at room temperature. Do not store in a sealed container or they will become too soft.

Flour, butter and egg called for on cookie mix pouch for cutout cookies
1 1/2 cups apple pie filling with more fruit (from 21-oz can)
1 teaspoon sugar
1/8 teaspoon ground cinnamon

Steps:

  • Heat oven to 375°F. Grease 24 regular-size muffin cups with shortening; lightly flour.
  • In large bowl, mix cookie mix, flour, butter and egg with spoon until soft dough forms. Measure 2 cups of the dough, and set aside remaining dough. Using the 2 cups of dough, firmly press a heaping tablespoon of dough into bottom of each muffin cup.
  • Chop apple pie filling into small pieces; place a generous 2 teaspoons pie filling in center of each cookie cup. On floured surface, roll remaining dough 1/8 inch thick. Using small 1 to 1 1/2-inch cookie cutter, cut small shapes of your choice. If necessary, press any leftover scraps together, and reroll on floured surface to make total of 24 cutouts. Place one cutout on top of apple pie filling in each cookie cup.
  • In small bowl, mix sugar and cinnamon; sprinkle on tops of cutouts. Bake 14 to 17 minutes or until edges of cookies are deep golden brown. Cool 10 minutes in pan on cooling rack. Run metal spatula around edge of each cookie cup to loosen; cool in pan 20 minutes. Remove cookies from muffin cups to cooling rack to cool completely.

2 tablespoons whole wheat flour
1 ½ teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon salt
½ cup butter, softened
½ cup demerara sugar
½ cup brown sugar
7 tablespoons apple butter
2 eggs
1 teaspoon vanilla extract
3 tablespoons apple juice
2 cups quick cooking oats
1 apple, finely chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). In a large bowl, mix all of the whole wheat flour together with the cinnamon, baking powder and salt.
  • In a separate bowl, mash the butter, demerara sugar, and brown sugar together until thoroughly combined, then stir in the apple butter until smooth. Stir in eggs, vanilla extract, and apple juice until well mixed; pour the liquid mixture into the flour mixture about 1/3 cup at a time, stirring after each addition. Mix in the oats and chopped apple.
  • With 2 teaspoons, form the dough into balls and place onto ungreased baking sheets about 2 inches apart.
  • Bake in the preheated oven until the cookies are lightly browned and set in the centers, about 10 minutes; allow to cool for about 2 minutes on baking sheets until removing to finish cooling on wire racks.

1 cup Butter Flavor Crisco or 1 butter-flavor Crisco stick
1 cup light brown sugar, firmly packed
1 teaspoon vanilla
2 1/2 cups old fashioned oats
2 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
6 -8 tablespoons water
1 (21 ounce) can apple pie filling, finely chopped
1/2 cup pecans or 1/2 cup walnuts, finely chopped

Steps:

  • Heat oven to 375.
  • Grease baking sheet with Butter Flavor Crisco.
  • Cookies:.
  • Combine Butter Flavor Crisco, brown sugar and vanilla in lg. bowl. Beat at medium speed of electric mixer until well blended.

Let's face it, apple crisp is great but you can't easily pack it for lunch or snack on it as easy as you may want. This was my inspiration for coming up with this cookie. If you like apple crisp you will equally like this cookie. I prefer a background nutmeg flavor, feel free to add more (or leave it out) for your taste.

1/2 teaspoon baking soda
1/2 teaspoon baking powder

  • Preheat oven to 350°F.
  • Cream butter with electric mixer; add sugar and cream together until fluffy.
  • Add vanilla, egg, salt, cinnamon, nutmeg, baking soda and baking powder. Mix until well blended.
  • Mix in 1/2 of the flour with electric mixer until well blended.
  • Stir, by hand, remaining flour and oats. Depending on the humidity you may need a little less oats or a little more.
  • Stir in the chopped apples. (I used 1 package of Del Monte dried apples that you can get in the supermarket in the same isle as the raisins, dried apricots).
  • Drop by spoonfuls onto cookie sheet. I used a soup spoon but if you like smaller cookies, use a regular spoon.
  • Bake for approximately 10 minutes. Rotate the pan if necessary after 7-8 minutes.

1 cup butter, softened
1/2 cup sugar
1/2 teaspoon salt
3 large egg yolks
1 teaspoon vanilla extract
3 tablespoons sour cream
3 cups all-purpose flour
FILLING:
1 cup sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
8 cups sliced peeled Granny Smith apples
2 tablespoons butter, cubed
TOPPING:
1 large egg white
1/4 cup finely chopped pecans

Steps:

  • Beat butter, sugar and salt until blended; beat in egg yolks and vanilla. Beat in sour cream. Gradually beat in flour. Divide dough in half. Shape each into a rectangle; wrap in plastic. Refrigerate until firm, about 1 hour., Preheat oven to 375°. On waxed paper, roll one half of dough into a 14x10-in. rectangle. Transfer to a greased 13x9-in. pan; press onto bottom and 1/2 in. up sides of pan. (Dough may crack; pinch together to patch.) , For filling, mix sugar, flour and cinnamon; toss with apples. Place in crust; dot with butter. On waxed paper, roll remaining dough into a 14x10-in. rectangle; place over filling. Pinch edges to seal., Whisk egg white until frothy; brush over top. Sprinkle with pecans. Cut slits in top crust. Bake on a lower oven rack until golden brown, 40-45 minutes. Cool on a wire rack.

I have used other pie fillings as well, but the apple is just so cozy and fitting for the coming seasons;) If you get a chance to try these, I hope you enjoy them:)
