SUNNY'S MEAT AND POTATOES BUNDT LOAF

Sunny's Meat and Potatoes Bundt Loaf image

Provided by Sunny Anderson

Categories     main-dish

Time 2h5m

Yield 6 to 8 servings

Number Of Ingredients 15

1 large russet potato, peeled and sliced on a mandoline into paper-thin, lengthwise slices
4 tablespoons salted butter, melted
Kosher salt and freshly ground black pepper
Nonstick cooking spray, for the bundt pan
3/4 cup Italian seasoning breadcrumbs
1/2 cup finely chopped white onion
1/2 cup basil pesto
1/2 cup ketchup
Kosher salt and freshly ground black pepper
2 large eggs, beaten
2 pounds meatloaf blend (ground beef, pork, veal)
1 cup ketchup
Kosher salt and freshly ground black pepper
2 tablespoons hot sauce
1/2 cup chopped fresh parsley

Steps:

  • For the potatoes: In a large bowl of cold water, add the potato slices and rest at room temperature, draining, rinsing and changing the water halfway through, for 30 minutes.
  • For the loaf: Preheat the oven to 350 degrees F. Spray the inside bottom and sides of a nonstick bundt pan with cooking spray.
  • In a large bowl, add the breadcrumbs, onion, pesto, ketchup, 2 teaspoons salt and plenty of black pepper. Stir to combine and whisk in the eggs. Add the meatloaf blend and gently mix to distribute the ingredients. Press the meatloaf into the prepared bundt pan and bake for 30 minutes.
  • Line a baking sheet with aluminum foil. Remove the bundt pan and, using a medium bowl or liquid measure cup, gently tilt the pan and drain out the juices, reserving 1/2 cup. Place the foil-lined baking sheet on top of the bundt and, holding them together, flip them to unmold the loaf onto the baking sheet. Turn the oven up to 375 degrees F.
  • Drain, rinse and dry the potatoes on a paper towel-lined plate. Wipe out the bowl and place the potatoes back in along with the melted butter, a pinch of salt and a few grinds of pepper. Gently mix to coat. Begin to layer the curved top of the loaf with the potato slices, overlapping them slightly around the loaf, covering the top and about one-third of the way down the side of the loaf all around. Return to the oven and continue to bake until the potatoes begin to curl and become slightly golden on the edges, about 30 minutes more. Rest 10 minutes, then transfer to a serving dish.
  • For the glaze: In a medium saucepot on medium-high heat, add the 1/2 cup pan drippings, the ketchup, a pinch of salt and a few grinds of pepper. Bring to a simmer, lower the heat to medium and cook until the sauce thickens and reduces, 8 to 10 minutes. Remove from the heat, add the hot sauce and stir in the parsley. Pour over the loaf and serve.

THE BEST MEATLOAF I'VE EVER MADE

The Best Meatloaf I've Ever Made image

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

Time 1h25m

Yield 12

Number Of Ingredients 14

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

Time 2h

Yield 6-8 serving(s)

Number Of Ingredients 17

1 1/2 lbs lean ground chuck
1/2 lb hot Italian sausage, removed from its casing and crumbled
1 cup coarse breadcrumbs, preferably from toasted rye bread
2 eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon freshly grated nutmeg
1 pinch fresh ground black pepper
pesto sauce (recipe follows)
1 1/2 cups grated cheddar cheese
6 slices bacon, cooked until crisp, drained, and crumbled
2 hard-boiled eggs, chopped
pesto sauce
2 cloves garlic
1/3 cup olive oil
2 cups tightly packed fresh basil leaves
1/4 cup pine nuts
3/4 cup freshly grated parmesan cheese

Steps:

  • Preheat the oven to 350 degrees.
  • Cover the inside of a 13x9x2-inch baking pan with aluminum foil.
  • In a mixing bowl, thoroughly combine the ground chuck, sausage, bread crumbs, beaten eggs, salt, nutmeg, and pepper.
  • In a separate bowl, combine the pesto, 1 cup of the Cheddar cheese, the crumbled bacon,a nd the hard-cooked eggs.
  • Place the meat mixture between 2 sheets of waxed paper and roll into a rectangular shape about 1/3 inch thick.
  • Remove the top sheet of waxed paper and spread the pesto mixture all over the top of the flattened meat.
  • Roll up the meat like a jelly roll, peeling back the remaining waxed paper as you go.
  • Shape the ends of the roll, as needed, with your hands to form a neat cylindrical shape, entirely enclosing the pesto.
  • Place the meat loaf, seam side down, in the prepared baking pan.
  • Sprinkle the meat loaf with the remaining 1/2 cup Cheddar cheese.
  • Bake until cooked through and browned, 1 hour.
  • Pesto: Place the garlic and half of the olive oil in a food processor.
  • Process until the garlic is pureed.
  • Add the remaining oil, the basil, pine nuts, and Parmesan.
  • Process to a smooth paste.
  • The pesto should be fairly dry for the meat loaf.
  • If the puree is too wet, blot it with paper towels to remove excess oil.

  • Pre-heat your oven to 350 degrees. Making meat loaf is pretty simple, everything goes in the bowl and you mix it up. Use half the pesto and half the Parmesan in the loaf the rest is going on top. Some people like the veggies diced really small and will use the food processor; I just give a good chop with the knife. Don’t over work the meat when you are mixing.
  • Next get your baking sheet ready by lining it with parchment paper, be sure to us a pan with an edge all the way around like a jelly roll pan so you don’t have any liquid dripping into your oven. Using the pesto in this recipe will result in quite a bit of olive oil rendering out of the loaf as it bakes, so an edge on the pan is important. Form the meat into a loaf either with your hands or using a loaf pan as a mold.
  • Place the meat on the baking sheet and into the oven for 35-40 minutes, then top the loaf with the reaming pesto and Parmesan. Then return to the oven for about 20 minutes or until internal temperature is a least 155 degrees.
