ITALIAN SEASONED FRIES (LOW FAT)
One of the great things about making your own fries (in addition to being much less fattening than those you eat out) is that you can tailor them to your preference using herbs and seasonings. Feeling like some garlic fries today? Simply sprinkle them with some garlic, salt (or garlic salt) and a touch of parsley. Add some Parmesan and crushed red pepper flakes and you have these Italian fries. Lake spicy Cajun fries? Hit them up with some Cajun seasoning. Or sprinkle them with some fresh garlic and rosemary and you'll be in for a different treat. The important think to remember is that you need only a touch of olive oil to create the perfect fries. Steps:
- Preheat the oven to 400°F.
- Line a medium nonstick baking sheet with parchment paper or Reynolds Release foil.
- Toss the potato sticks with the olive oil, Parmesan, parsley, garlic, red pepper flakes and salt to taste. Place them in a single layer, not touching, on the prepared baking sheet. Bake for 8 minutes, flip them, and bake for another 10 to 12 minutes, or until the potatoes are tender on the inside and have some browned spots on them, but are not completely browned. Serve immediately.

- Place potatoes on a foil-lined baking sheet. Bake at 450° for 8 minutes. Combine remaining ingredients; sprinkle over potatoes and mix gently. Bake until the potatoes are browned and crisp, 4-5 minutes longer.

- Preheat oven to 375 degrees.
- Quarter the potatoes and cut into 1/4 inch thick strips, too thin -- they will burn!

EASY FAT-FREE SEASONED FRENCH FRIES
I just started making these, and thought I'd share since I didn't see anything exactly like it. Great for a individual snack!

Steps:
- Preheat oven to 450 degrees.
- Cover an 8"x8" pan with tin foil and spray with cooking oil and sprinkle on salt.
- Cut potato to desired wedge sizes.
- Place potato pieces into quart size bag and spray in some cooking oil and add the herbs.
- Shake until the pieces are coated evenly.
- Pour into the 8"x8" pan and add some more salt on top (I like mine really saltly).
- Place in oven and bake for 15-20 minutes for softer fries and 25-30 minutes for crispier fries.
- Enjoy with sauce of your choice!
