MICROWAVE CHICKEN PARMESAN

"I make this moist chicken often in summer when we want something quick and yummy," writes Roni Goodell, Spanish Fork, Utah. With its golden coating, this entree is special enough for company.

1 can (8 ounces) tomato sauce
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/2 cup cornflake crumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried parsley flakes
6 boneless skinless chicken breast halves
1 egg, beaten
2/3 cup shredded part-skim mozzarella cheese

Steps:

  • In a microwave-safe bowl, combine the tomato sauce, Italian seasoning and garlic powder. Cover and microwave on high for 2 minutes; stir. Cook at 50% power for 3-5 minutes or until mixture simmers, stirring once; set aside. , In a bowl, combine the crumbs, Parmesan cheese and parsley. Dip the chicken into egg, then roll in the crumb mixture. Place in a lightly greased shallow 3-qt. microwave-safe dish. Cover and microwave on high for 10-12 minutes, rotating a half turn after 5 minutes. , Pour tomato mixture over chicken; sprinkle with mozzarella. Cook, uncovered, at 50% power for 3-5 minutes or until meat juices run clear.

When we moved out to a friend's farm the house we were renting didn't have an oven or stovetop (bar the wood burning one that filled the kitchen with smoke). So all my cooking was restricted to an electric frying pan and a microwave oven. After experimenting for a few weeks I came up with this little number which is super easy and full of flavour

Number Of Ingredients 12

2 chicken thighs, with bones (you could use another part of the chicken if you wanted)
1/2 cup long grain rice
400 g diced tomatoes
1/2 large zucchini (diced)
1/2 large carrot (diced)
4 mushrooms (diced)
1/2 diced onion (white, red or spring)
8 olives (with pips)
1 cup water
1 teaspoon instant chicken bouillon granules
1/2 cup basil leaves
salt and pepper

Steps:

  • Put rice, water & tomatoes in a 2 or 3L microwave safe dish and mix.
  • On top of that add the zucchini, carrot, mushrooms, onion, olives and basil leaves.
  • Sit the chicken on top and sprinkle the stock powder on the vegetables and the chicken and season with salt and pepper.
  • Cover the dish with a lid (microwave safe) or cling wrap and cook for 40 minutes on 90% power. I use an 1100watt oven but I wouldn't worry about altering the time if yours is less powerful.

This is one of the few main dishes I cook completely in the microwave. It's easy, delicious and simple to adapt to ingredients on hand. If I don't have spaghetti sauce, I substitute a can of diced tomatoes, a can of tomato sauce, along with some basil, oregano, and a bay leaf. You can also cut the chicken into strips or chunks, depending on your preference.

4 boneless skinless chicken breasts
1/2 medium green pepper, thinly sliced
1/2 medium red pepper, thinly sliced
1/2 medium onion, thinly sliced
2 garlic cloves, minced
8 ounces fresh mushrooms, sliced
2 stalks celery, sliced
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon water
4 ounces of sliced black olives, drained
2 cups prepared spaghetti sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons tomato paste

Steps:

  • Combine celery, peppers, onion, garlic and mushrooms with 1 T water and 1 T butter in a 2 quart microwave-safe dish.
  • Cook uncovered on high for 3-4 minutes, stirring after every minute.
  • Drain.
  • Stir in spaghetti sauce, olives, tomato paste, salt and pepper.
  • Slice chicken breasts in half lengthwise.
  • Slide chicken into casserole dish with other ingredients, turning to coat with sauce.
  • Arrange with meatiest portions out towards the outside of the dish.
  • Cover and cook 10-12 minutes on high, or until chicken is cooked through.
  • Serve over hot pasta or rice.

4 teaspoons reduced-sodium soy sauce
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1/4 cup grated Parmesan cheese
1 teaspoon butter

Steps:

  • Place chicken in a microwave-safe dish. Top with soy sauce, garlic powder and pepper. Sprinkle with cheese and dot with butter. Cover and cook on high for 4-5 minutes or until a thermometer reads 170°.

Number Of Ingredients 10

8 ounces asparagus, trimmed, cut in half lengthwise
4 (1/4-inch-thick) chicken cutlets (about 12 ounces)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice
6 thin slices lemon
2 teaspoons drained capers
2 tablespoons chilled unsalted butter, cut into cubes
1 tablespoon coarsely chopped parsley
An 8x8-inch microwave-proof baking dish

Steps:

  • Arrange asparagus in an even layer in baking dish. Season chicken on both sides with salt and pepper, then arrange in an even layer over asparagus. Pour lemon juice over and top with lemon slices and capers.
  • Cover with plastic wrap, poke a small hole in the center, and microwave on high 2 minutes. Remove from microwave, flip and rotate chicken pieces, re-wrap, and microwave on high another 2 minutes. Pierce chicken with a paring knife; if juices don't run clear, continue microwaving at 10-second intervals.
  • Transfer chicken, asparagus, and lemon slices to a serving platter; immediately whisk butter into liquid in baking dish until melted. Stir in parsley, then pour over chicken to serve.

5 tablespoons curry powder
1 teaspoon cayenne pepper
8 chicken legs

Steps:

  • In a large, round microwave safe casserole dish combine the ketchup, curry powder and cayenne powder and mix together. Add chicken pieces and turn to coat. Arrange chicken legs in a fan, with the thin part of the legs in the center of the dish. Cover and cook in the microwave on high for 12 to 15 minutes or until chicken is cooked through and juices run clear.
