Ice Cream Truck Style Strawberry Shortcake Cupcakes Recipes
STRAWBERRY SHORTCAKE ICE CREAM BARS
There's no need to run after the ice cream truck when you can make this classic treat at home with just four ingredients. These brightly hued pops pack a double dose of berry flavor from their creamy centers and buttery crumb coatings.
Yield 6 pops
Number Of Ingredients 6
Steps:
- Divide ice cream among ice-pop molds, insert sticks, and freeze until firm, at least 4 hours.
- Meanwhile, pulse cookies in a food processor until fine crumbs form. Transfer half of crumbs to a plate. Add strawberries to remaining crumbs in food processor and drizzle with butter. Pulse a few times to create strawberry crumbs. Stir strawberry crumbs into plain crumbs on plate.
- Line a large plate or rimmed baking sheet with parchment paper. Dip molds briefly into hot water. Working one at a time, remove ice pop from mold and thaw 1 minute. Dip in crumbs, turning to coat and pressing to adhere. Transfer pops to prepared plate and freeze again at least 15 minutes before serving.
- Do Ahead
- Ice pops can be made 7 days ahead; freeze in an airtight container.

- Place the cream cheese, powdered sugar, and vanilla extract in a large mixing bowl. Using a stand mixer or hand mixer with the whisk attachment, beat the mixture on medium speed until smooth, scraping the sides and bottom of the bowl as needed. While the mixer is still whipping, slowly pour the heavy cream down the side of the bowl. Stop and scrape the bottom and sides of the bowl periodically. Increase the speed to high and whip until the cream holds a stiff peak.
- Use a piping bag and pastry tip (I recommend an open star tip) to swirl some frosting onto the top of each cupcake. I like to make a couple of circles around the perimeter of the cupcake, leaving the middle open for adding more strawberries.

- Place the strawberries in a small saucepan over medium heat. Stir constantly for about 4 full minutes until the strawberry juices have been released. Add the sugar and cornstarch/water liquid and continue to stir for another 2 minutes. The mixture will be much thicker. Remove from heat and allow to cool as you prepare the cupcakes.
- In a medium bowl, whisk flour, baking powder, baking soda, and salt together. Set aside. In a large bowl, whisk the melted butter and sugar together – mixture will be gritty. Whisk in egg whites, sour cream/yogurt, milk, vanilla extract, and vanilla bean seeds (if using) until combined.
