This White Pizza Sauce is essentially an easy garlic alfredo. It has simple ingredients and comes together in about 5 minutes. It is a family favorite and so much better than the white sauce in pizza chains.

2 Tbsp unsalted butter
2 Tbsp all-purpose flour
1 1/4 cup milk ((2% or whole milk))
1/4 tsp sea salt
1/8 tsp black pepper
2 garlic cloves (pressed or finely grated)
1/4 cup parmesan cheese (shredded)

Steps:

  • Melt butter in a small saucepan over medium heat. Whisk in flour and continue whisking for 1-2 minutes (do not let it brown).
  • Slowly add milk, whisking constantly until smooth, thickened, and bubbly.
  • Whisk in 1/4 tsp salt, 1/8 tsp black pepper, and pressed garlic.
  • Add parmesan cheese and whisk another 30 seconds. Remove from heat and continue whisking just until cheese is melted and sauce is smooth then set aside to cool before using for pizza. Do not boil after adding cheese or sauce may curdle. Once cooled, cover and refrigerate up to 5 days.

Use this seasoned sauce to top pizza or pasta. This is a simple white sauce made with the addition of Italian seasonings and Parmesan cheese.

1 tablespoon butter
3 tablespoons flour
1 1/4 cup cup milk
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning (or a blend of basil and oregano)
1 dash sea salt (or Kosher salt)
1 dash freshly ground black pepper (to taste)
1/3 cup fresh Parmesan cheese (grated)

Steps:

  • Gather the ingredients.
  • Melt the butter in a medium saucepan over low heat. Add the flour, stirring with a fork until the mixture is thick and pasty.
  • Turn up the heat to medium-low and then slowly add in the milk, whisking it all together and stirring constantly to avoid lumps.
  • Add the Italian seasoning (or basil and oregano), garlic powder, salt, and pepper. Allow your sauce to simmer for 3 to 4 minutes, or until it has thickened.
  • Stir in the freshly grated Parmesan cheese until the cheese has melted and is well incorporated. Your white sauce will thicken further as it cools, so add a bit more milk if needed and, conversely, don't worry if it seems too thin while on the stovetop over the heat.
  • Use to top your favorite pizza crust or pasta.

This White Pizza Recipe also known as Pizza Bianca, an easy tasty pizza made with pancetta, mozzarella, parmesan flakes and arugula.

1 pizza crust (homemade or store bought)
3/4 cup pancetta (chopped)
1 cup firm mozzarella (shredded)
1-2 tablespoons flaked fresh parmesan cheese (flake with a potato peeler)
1 cup fresh arugula ( if the leaves are large cut in half)
1-2 tablespoons olive oil

Steps:

  • Pre-heat oven to 425-450F (225-250C). Lightly oil a 12 inch pizza pan (30 cm).
  • Prepare your pizza dough, whether you are making Homemade or store bought. Place the dough on a pizza pan or even a cookie sheet will work, stretch the dough to form your desired shape, top with the cubed pancetta and a drizzle of olive oil, and bake for approximately 10-12 minutes or until crust is golden and baked.
  • Remove the pizza from the oven and top with the shredded mozzarella cheese, bake for approximately 3 minutes or until the cheese has melted. Remove from the oven, top with arugula (rocket) and sprinkle with flakes of parmesan. Serve while hot. Enjoy!

This is a simple sauce with a minimum of ingredients, and about a 1-hour cook time. My favorite way to use this sauce is making a Sardinian pizza, on Sardinian flatbread. But this sauce would work great on any pizza, calzones, lasagna, and more. So, you ready... Let's get into the kitchen.

2 clove(s) garlic, minced
1 tablespoon(s) olive oil, extra virgin variety
28 ounce(s) crushed, fire roasted, tomatoes, with sauce, 1 can
1 teaspoon(s) dried basil
1 teaspoon(s) fennel seeds
1/4 cup(s) parmesan cheese, freshly grated
salt, kosher variety, to taste
black pepper, freshly ground, to taste

Steps:

  • PREP/PREPARE
  • This is a one-pot recipe. Choose a sturdy pot with a lid that will hold all of the ingredients.
  • Tomatoes are one of the few items that I do not worry about buying in a can. There are a lot of good canned tomatoes out there. Here are some of my favorites: Carmelina San Marzano Whole Peeled Tomatoes are perfect Italian tomatoes that will help you make authentic Italian recipes. Muir Glen has been ranked consistently as one of the best diced canned tomato brands available in the market today. Sclafani Whole Peeled Tomatoes are made from the best tomatoes grown in the United States. It consists of fresh Jersey tomatoes grown near southern New Jersey.
  • Gather your ingredients (mise en place).
  • Add 1 tablespoon of oil to a saucepan, over medium heat.
  • Add the garlic, and cook until it begins to sizzle, but not brown. About 2 - 3 minutes.
  • Add the tomatoes, basil, and fennel seeds, then a pinch or two of salt, and pepper.
  • Bring up to a light simmer, and cover. Allow to lightly simmer for 50 minutes.
  • Chef's Note: As it is simmering, check for proper seasoning.
  • After 50 minutes, add the parmesan cheese, and stir until incorporated, about 1 - 2 minutes.
  • Remove from heat and keep warm, until needed.
  • Chef's Note: This sauce will last 4 - 6 days in the fridge, and several months, if frozen.
  • PLATE/PRESENT
  • Use to make a yummy pizza, or any Italian recipes that calls for a good tomato sauce. Enjoy.

2 Tbsp sweet butter, unsalted
2 Tbsp yellow onion, finely chopped
2 Tbsp flour, all-purpose variety
4 clove baked garlic, smashed
1/4 tsp dried parsley
1/4 tsp dried oregano
1/8 tsp black pepper, freshly ground
1//8 tsp white pepper, freshly ground
1 c whole milk
1/4 c parmesan cheese
1/4 c pecorino romano
1 - 2 dash(es) truffle oil (optional)

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your Ingredients (mise en place).
  • 3. Add a bit of salt to the baked garlic, and then smash it smooth with the flat end of your kitchen knife. You want it like a paste.

  • 5. Add the butter to a saucepan over medium heat.
  • 6. When the butter melts, add the onion, and sauté in the butter for 1 minute.
  • 7. Add the flour, baked garlic, black and white pepper, parsley and oregano to the saucepan, and whisk until completely combined, and beginning to bubble, about 2 - 3 minutes.
  • 8. Add the milk and whisk to combine.
  • 9. When the mixture begins to simmer, add the cheeses, and stir until the mixture begins to thicken, about 4 - 6 minutes.
  • 10. Chef's Note: At this point remove from the heat, and add the truffle oil, if using.
  • 11. Chef's Tip: If the mixture become too thick, add a bit of milk, a tablespoon at a time, until you have the right consistency. It should be thick enough to easily coat the back of a spoon, and leave a trail when you run your finger across it.
  • 12. PLATE/PRESENT
  • 13. Use it on your next pizza.
  • 14. Use it over a plate of pasta. Enjoy
