4 tablespoons butter
1 medium yellow onion, peeled and sliced
2 lbs potatoes, peeled and sliced
3 cups milk
5 1/2 cups chicken stock (or use canned)
1/4 cup chopped fresh chives
1/2 teaspoon celery seed
1/4 teaspoon dried thyme, whole
1 cup light cream
salt & freshly ground black pepper
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup chopped fresh chives
6 slices lean bacon, crisply fried and chopped

Steps:

  • Heat a 6- to 8-quart stockpot, add the butter and onion, and cook gently. Do not let the onion brown. Add the peeled and sliced potatoes, milk, and chicken stock.
  • Add 1/4 cup chives, celery seeds, and thyme. Cover and cook gently for about an hour.
  • Prepare a roux: Melt the butter in a small saucepan and whisk in the flour. Let the flour and butter mixture (roux) bubble for 2 minutes on medium-low heat, stirring constantly.
  • Thicken the soup with the roux, whisking carefully to avoid lumps. Cook for 5 to 10 minutes and then puree the soup in a food processor or food blender.
  • Add the cream and gently reheat, but do not boil. Season with the salt and pepper. Serve with additional 1/4 cup chopped fresh chives and the crisply fried bacon as garnishes.

Number Of Ingredients 13

1 teaspoon chopped fresh thyme
2 cloves garlic, finely chopped
Coarse kosher salt and freshly ground black pepper
3 tablespoons all-purpose flour
4 cups chicken stock or reduced-fat low-sodium chicken broth
3 cups whole or 2-percent milk
4 russet potatoes, peeled and cut into 1/2-inch cubes (about 1 3/4 pounds)
2 cups packed grated sharp white Cheddar (about 8 ounces)
Snipped fresh chives, for garnish
2 tablespoons canola oil
1 carrot, finely chopped
1 stalk celery, finely chopped
1 sweet onion, finely chopped

Steps:

  • Heat the oil in a large pot over medium heat. Add the carrots, celery and onions and cook until the onions are soft and translucent, 3 to 5 minutes. Add the thyme and garlic and cook until fragrant, 45 to 60 seconds. Season with salt and pepper. Sprinkle the flour over and cook, stirring, for 2 minutes. Gradually whisk in the stock, and then the milk. Add the potatoes and bring the soup to a boil over high heat. Decrease the heat to low and simmer until the potatoes are tender, about 20 minutes.
  • Using an immersion blender, puree the soup; leave it coarse and chunky if you prefer a more rustic soup, or puree until smooth for a more elegant soup. Add the cheese, about 1/3 cup at a time, stirring after each addition until melted and smooth. Taste and adjust for seasoning with salt and pepper.
  • To serve, ladle the soup into warmed bowls. Sprinkle with chives and serve immediately.

Steps:

  • Gather the ingredients.

  • Add the cream and gently reheat, but do not boil. Season with salt and pepper . Serve with remaining 1/4 cup chopped fresh chives and the crisply fried bacon as garnishes.

1 (1 pound) package bacon
1 onion, chopped
1 cup celery, chopped
6 potatoes, scrubbed and cubed
salt and pepper to taste
2 (12 fluid ounce) cans evaporated milk

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, crumble, and set aside.
  • Cook and stir onion and celery in the remaining bacon grease over medium heat until the onion is translucent and tender. Drain excess grease, then stir in potatoes. Add water to cover all but 1 inch of the potatoes. Bring to a boil over medium-high heat, then reduce to medium-low, and simmer until potatoes are tender, about 15 minutes, stirring often. Stir in the evaporated milk, and continue cooking until warmed through. Season with salt and pepper. Stir in bacon just before serving.

1 lb potato, peeled and cut into even-sized pieces
3 tablespoons butter or 3 tablespoons pure vegetable margarine
1 tablespoon olive oil
salt & freshly ground black pepper
grated nutmeg

Steps:

  • Put a quarter of the onions into a large saucepan with the potatoes and 4 cups of water.
  • Bring to a boil, then cover and let cook until the potatoes are completely tender.
  • Meanwhile melt the butter or margarine and oil in another saucepan, put in the remaining onions, cover, and cook gently for about 15 minutes, or until they are very soft.
  • Puree the potato mixture in a blender or food processor, then return it to the saucepan.
  • Add the onions to the saucepan, together with their buttery juices.
  • Season to taste with salt, pepper, and nutmeg, reheat gently, and serve.

1/2 cup sunflower kernels
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed

5 cups chicken broth
3/4 cup stout beer or additional chicken broth
2 tablespoons brown sugar
10 slices French bread baguette (1/4 inch thick)
10 slices white cheddar cheese
1 log (11 ounces) fresh goat cheese, sliced

Steps:

  • Place potatoes on a baking sheet. Drizzle with oil and sprinkle with 1/2 teaspoon salt. Bake at 425° for 20-25 minutes or until tender., Meanwhile, in a Dutch oven, saute onions in butter until tender. Reduce heat to medium-low; cook for 30 minutes or until deep golden brown, stirring occasionally. Add the mushrooms, sunflower kernels, rosemary, pepper and remaining salt.
