RUSTIC TOMATO TOAST

This traditional Spanish snack couldn't be easier to make. Aside from good toasted bread, it requires very few ingredients: a garlic clove, a ripe tomato, some olive oil and flaky sea salt. In fact, the ingredient list is actually the recipe in shorthand. If you want a slightly more elaborate toast, garnish with anchovy fillets, slices of avocado or grilled shrimp. But even in its simplest form, this rustic toast is always satisfying.

2 slices of bread from a plain rustic loaf, about 1/2-inch thick
1 garlic clove, peeled
1 small ripe red tomato, halved, seeds squeezed out
1 tablespoon extra-virgin olive oil
Flaky sea salt or fleur de sel

Steps:

  • Toast the bread on both sides under the broiler, on a stovetop grill or over coals, until it is perfectly browned, with a bit of give in the center, about 1 minute per side.
  • Pressing down firmly, rub the top of each toast with the garlic. Press the tomato, cut side down, against the toast. Rub to moisten the toast and give it a juicy red color.
  • Drizzle with olive oil and finish with a tiny sprinkle of sea salt. Serve immediately.

Hot Liverwurst Toast with Tomatoes image

In my quest to find recipes to use up liverwurst, I was directed to a very nice German language website called wurstladen.de where I happily found this delicious sounding recipe for open face sandwiches. I translated it directly from the German to share will you all. I would recommend a good quality bread for the toast - such as a deli cut rye. Cooking time allows for the sauteeing of the apple rings and the leeks, as well as about 10 minutes in the oven to cook the sandwiches.

200 g liverwurst (such as calve's liverwurst)
1 tablespoon freshly cracked green peppercorn (or other freshly cracked peppercorns)
1 egg yolk
2 tablespoons brandy
1 dash marjoram, to taste
fresh parsley, finely chopped,to taste
1 large apple
1 stalk leek, washed well and very thinly sliced
4 tablespoons swiss cheese, shredded (plus a little extra)
2 tablespoons butter
2 tomatoes, halved
4 leaves lettuce
4 slices toasted bread
1 teaspoon olive oil (optional)
sea salt (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Remove the liverwurst from its casing and place into a large mixing bowl.
  • Mix together well with the cracked peppercorns, a little marjoram,chopped parlsey to taste,the egg yolk,and the brandy; set aside.
  • Core the apple, then slice into 4 thick apple rings (NOT wedges!)- they should resemble canned pineapple rings.
  • Heat butter in a skillet and first brown the apple slices on both sides, then add the leek and saute until lightly browned.
  • Spread each slice of toast with even amounts of the liverwurst mixture, then top each with a sauteed apple ring.
  • Scatter the sauteed leeks on top, followed by the shredded cheese.
  • Place all four toasts onto a foil lined baking sheet, along with the tomato halves cut sides up, seasoned with a little salt if desired-if you wish, you may brush tomato halves with a little olive oil and sprinkle with a little extra Swiss cheese, or leave them plain.
  • Place in the preheated oven for about 10 minutes or until nicely browned.
  • Serve each slice of toast with a grilled tomato set atop a lettuce leaf on the side and sprinkled with some more freshly chopped parsley.
  • Serve immediately.
  • NOTE: 200 grams is a little less than 1/2 pound.

Some version of tomatoes on toast - a juicy American B.L.T. or Italian tomato-topped bruschetta - is always a good idea, but that's especially true during high summer, when tomatoes are at their peak. One superior combination comes from Barcelona, where a slice of toast is rubbed with garlic and juicy ripe tomatoes, then anointed with olive oil. Most Catalan cooks simply cut the tomato crosswise and vigorously massage the toasted bread with the cut side. Others grate the tomato flesh and spoon it over the bread. This version adds tomato slices and a scattering of cherry tomatoes for a substantial first course.

3 or 4 very ripe medium tomatoes (about 1 1/2 pounds)
1 pint cherry tomatoes (about 12 ounces)
4 to 6 large slices sturdy sourdough bread, about 1/2-inch thick
4 to 6 garlic cloves, peeled
Salt and pepper
Extra-virgin olive oil
Basil leaves, for garnish (optional)

Steps:

  • Cut 2 tomatoes in half crosswise. Place a box grater in a shallow bowl and grate the tomato flesh from the cut sides, pushing through the large holes. You should have 1 cup or so of coarse tomato purée. Set purée aside, and discard tomato skins.
  • Cut remaining large tomatoes into 1/4-inch slices. Cut cherry tomatoes in half. Set aside.
  • Toast the bread until nicely browned and crisp. (Toasting over a charcoal grill yields a rich, smoky flavor, but a toaster, toaster oven or broiler works just as well.)
  • With your fingers, rub the top of each toast with a garlic clove. You will see the cloves get smaller as the garlic is dispersed, pushed into the bread. (For a less garlicky toast, press lightly when rubbing.)
  • Place toasts on a platter or individual plates. Spoon and spread a heaping tablespoon of tomato purée over each toast. Then arrange tomato slices and cherry tomatoes randomly on top.
  • Sprinkle generously with salt, pepper and a tablespoon of extra-virgin olive oil per toast. Garnish with whole or torn basil leaves, if using.
