I have made this delicious cake recipe many times......and even for neighbors when they want a very special cake for a party. It makes a wonderful cake presentation for a St. Patrick day party! 2 - eggs....separated
1-1/4 cup(s) sugar
2-1/4 cup(s) softasilk ..cake flour
3 teaspoon(s) baking powder
1 teaspoon(s) salt
2/3 cup(s) milk
1/3 cup(s) vegetable oil
1-1/2 teaspoon(s) vanilla
1/3 cup(s) irish cream liquer ............ or for a non-alcoholic version: baileys, is a whiskey and cream drink. a suitable replacement would be heavy (double cream) mixed with a little coffee syrup used in the same amount as the alcohol.
1 - square (1oz.) semisweet chocolate, grated or finely chopped

Steps:

  • Heat oven to 350F. Grease and flour 2 round cake pans,9 or 8-1/2 inches Beat egg whites in a bowl till foamy. Gradually beat in 1/2 cup ofthe sugar. Continue beating until very stiff and glossy, reserve. Mix flour and remaining sugar,baking powder and salt in a large bowl. Beat in milk, vanilla and oil, on low spead, until moistened. Beat on high speed,scraping bowl,constantly for one minute. Add liqueur and egg yolks. Beat on high speed, scraping bowl occasionally for one minute. Fold in egg white mixture and chocolate. Pour into pre-pared pans.Bake until a wooden tooth pick, inserted in the middle ..comes out clean. About 30 minutes....COOL Fill layers,and top of cake with the Irish Cream. Garnish with chocolate curls, or grated chocolate if desired. Refrigerate cake.

1 ½ cups white sugar
2 ¼ teaspoons baking powder
½ teaspoon salt
3 (1 ounce) squares unsweetened chocolate
3 eggs
1 ⅔ cups whipping cream, chilled
2 teaspoons vanilla extract
½ cup Irish whiskey
3 tablespoons instant coffee granules
2 tablespoons white sugar
2 tablespoons Irish whiskey
1 tablespoon instant coffee granules
⅔ cup butter, softened
2 teaspoons vanilla extract
2 ⅔ cups powdered sugar
1 (6 ounce) package semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans. Place waxed paper over a large wire cooling rack. Place a 3-quart mixing bowl in the freezer.
  • Mix flour, 1 1/2 cups sugar, baking powder, and salt together in a bowl.
  • Place unsweetened chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Set aside to cool.
  • Beat eggs in a bowl until thick and lemon-colored, about 5 minutes.
  • Remove cold bowl from the freezer and pour in chilled whipping cream; beat until stiff. Fold in eggs, melted chocolate, and vanilla extract. Add flour mixture, about 1/2 cup at a time, folding gently after each addition, until blended. Pour into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pans for 10 minutes. Run a table knife around the edges to loosen. Invert layers carefully onto the prepared cooling rack and let cool completely, about 30 minutes. Poke holes in the top of the cakes with a skewer or long-tined fork.
  • Stir whiskey, coffee granules, and 2 tablespoons sugar together in a small bowl until coffee is dissolved. Pour 1/2 of the coffee-whiskey mixture over each layer. Let stand at room temperature for 30 minutes.
  • Meanwhile, combine whiskey and coffee granules for the frosting in a large bowl; stir until coffee is dissolved. Add butter and vanilla extract and beat until combined. Gradually mix in powdered sugar on medium speed until smooth. Transfer 1/2 cup of frosting to a pastry bag fitted with an open star tip (#32 or #4B); set aside. Use the remaining frosting to fill layers and frost sides and top of cake.
  • Place chocolate chips in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Allow to cool slightly, then transfer to a small pastry bag fitted with a medium-sized writing tip.
  • Pipe chocolate in a lattice design across the top of the cake. Pipe a shell border or rosettes around the top edge.

1 cup chopped pecans
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
¼ cup water
½ cup vegetable oil
¾ cup Irish cream liqueur
½ cup butter
¼ cup water
1 cup white sugar
¼ cup Irish cream liqueur

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly over bottom of pan.
  • In a large bowl, combine cake mix and pudding mix. Mix in eggs, 1/4 cup water, 1/2 cup oil and 3/4 cup Irish cream liqueur. Beat for 5 minutes at high speed. Pour batter over nuts in pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Cool for 10 minutes in the pan, then invert onto the serving dish. Prick top and sides of cake. Spoon glaze over top and brush onto sides of cake. Allow to absorb glaze repeat until all glaze is used up.
  • To make the glaze: In a saucepan, combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil and continue boiling for 5 minutes, stirring constantly. Remove from heat and stir in 1/4 cup Irish cream.

6 eggs, (separated and at room temperature)
¼ teaspoon cream of tartar
¼ cup oil
½ cup milk, room temperature
½ cup all purpose flour
½ cup sugar
3 cups heavy cream
1 cup icing sugar
2 teaspoons vanilla extract
fruit of decoration

Steps:

  • Place the oil and flour into a large mixing bowl and mix well until thick. Next, add the milk and egg yolks and mix until smooth.
  • Place egg whites into a stand mixer fitted with a whisk attachment and beat until frothy. Add cream of tartar and keep beating for 1 minute and then slowly sprinkle in the sugar. Continue beating until stiff peaks form.
  • Gently fold the meringue into the egg yolk mixture in 3 stages until fully combined and homogenized. Do not overmix.
  • Pour into 2 small ungreased pans or one 8' pan and bake at 155°C (310°F) for 40-50 mins.
  • Once done, leave to cool completely inside the pan.
  • Place heavy cream, vanilla and icing sugar into a stand mixer with a whisk attachment. Beat on medium until stiff peaks. You can adjust the amount of sugar to your liking.
  • Once the cake has completely cooled, go around the sides with a knife and carefully take it out.
  • Frost the cake with the cream and top with fresh fruits.
  • Serve.

4 ounces instant chocolate pudding mix
3/4 cup canola oil or 3/4 cup vegetable oil
1/8 cup water
1/2 cup Baileys Irish Cream (I use Emmets, which is about half the price)
1/4 cup vodka
4 eggs

Steps:

  • Preheat oven to 350°F.
  • Combine cake mix, pudding mix, oil, water, vodka, Bailey's and eggs in a bowl, beat until smooth.
  • Pour into greased and floured 10 inch bundt pan.
  • Bake 40 to 50 minutes or until done.
  • Cool completely and invert onto a serving plate.
  • Mix a little powdered sugar and a little Bailey's and drizzle over the top.
  • Enjoy.

This is the best, moistest cake I've made from scratch. It's always requested for at work and/or family gatherings.

2 cups flour
1 3/4 cups sugar
3/4 cup cocoa
1/2 teaspoon salt
1 tablespoon baking soda
1 egg
2/3 cup oil
3/4 cup buttermilk
1/4 cup bailey irish cream
1 cup strong black coffee
2 cups heavy whipping cream
1/4-1/2 cup powdered sugar
1/4 cup bailey irish cream (or more to taste - I tend to use 1/8 cup!!)

Steps:

  • Cake: Sift dry ingredients together.
  • Beat egg, oil, buttermilk, liqueur, coffee together.
  • Add to the dry ingredients; beat together for about 3 minutes.
  • Pour into greased/floured 10" springform pan or 9x13 pan.
  • Bake at 350 for 35 to 40 minutues for the springform or 25 to 30 minutes for the 9x13- or until done.
  • Cool.
  • Frosting: beat ingredients together until stiff.
  • Turn cake out onto a plate and frost with whipped cream mixture.
  • Sprinkle with chocolate curls.
