- Fill a large bowl halfway with water. Add lemon juice and mix. Peel, core, and slice apples and pears, putting them in the lemon water to prevent browning.
- Drain fruit; do not rinse. Place drained fruit, 1/4 cup water, and cinnamon stick in a multi-functional electric pressure cooker (such as Instant Pot®). Set the Manual mode to high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, up to 15 minutes. Unlock lid. Remove and discard cinnamon stick. Pass the cooked fruit through a food mill; sauce will be slightly coarse. Blend fruit with an immersion blender for a smoother sauce.

Steps:
- Use a vegetable peeler to remove 2 thick strips of lemon peel, being careful to avoid the bitter pith. Tie up lemon peel, cinnamon stick, ginger, star anise, and cloves in cheesecloth for easy retrieval after cooking.
- Place apples in a multi-functional pressure cooker (such as Instant Pot®). Add cheesecloth bundle, water, and salt. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 15 to 20 minutes. Avoid releasing pressure manually as hot applesauce may splutter up through the vent. Remove the cheesecloth bundle with a slotted spoon and discard.
- Mix brown sugar into the applesauce until dissolved. Taste and adjust the level of sweetness if needed.

- Wash and prep all of your apples and pears. I peel the fruit because that is my family's preference. If you don't mind the skin, by all means leave it on. Core and quarter all apples and pears and toss them into the Instant Pot stainless steel bowl.
- Add healthy choice of fat, cinnamon, lemon juice, sea salt and water into the Instant Pot stainless steel bowl with the fruit.
- Put the Instant Pot lid on and secure it in the locked position. Plug in your Instant Pot. Make sure the vent on top of the lid is in the sealed/closed position. The Instant Pot should be turned on, you'll hear a little sound that it makes. Press the MANUAL button. The high pressure light should be red, if not, press manual again to get it to switch from low pressure to high pressure. Then press the "-" sign to decrease the time to say 3.
- Walk away from your Instant Pot. Don't worry, it will do it's work. It will end up saying "On" for a while during the "pressure" increasing and heating process. You might see a little steam escape through the top vent area, that's okay. It will only release a little bit. Once it has started to cook, you'll see the number 3 on the screen and it will decrease as it cooks.
