This recipe is taken from "Nothin' Finer", a cookbook prepared by the Chapel Hill Service League in 1993. I like Sally Lunn and muffins, so this might be a winner.

2/3 cup warm water
1/2 fresh yeast cake
2 tablespoons sugar
1 egg, beaten
2 cups flour
1 teaspoon salt
3 tablespoons shortening

Steps:

  • Combine water, yeast, and sugar. Add the egg and mix in well.
  • Combine the flour, salt, and shortening. Add to the yeast mixture and beat well. place in lightly greased muffin tins and allow to rise at room temperature for approximately one hour. Bake in a preheated 450 F oven for about 10 minutes, or until brown.

Use this master muffin recipe to make any muffin you love! They're basic, easy, delicious, and freezer friendly.

Number Of Ingredients 11

1 and 3/4 cups (219g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup (115g or 1 stick) unsalted butter, softened to room temperature
3/4 cup (150g) packed light brown sugar (or granulated)
2 large eggs, at room temperature
1/2 cup (120g) sour cream or plain yogurt, at room temperature
1 and 1/2 teaspoons pure vanilla extract
1/4 cup (60ml) milk (any kind), at room temperature

Steps:

  • Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or line with cupcake liners. Set aside.
  • In a large bowl, whisk the flour, baking powder, baking soda, cinnamon, and salt together. Set aside.
  • In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy, about 1 minute. Add the brown sugar and beat on high until creamed, about 2 full minutes. Scrape down the sides and bottom of the bowl as needed. Add the eggs, sour cream, and vanilla extract. Beat on medium speed for 1 minute, then turn up to high speed until the mixture is combined. Scrape down the sides and bottom of the bowl as needed.
  • Pour the dry ingredients into the wet ingredients and beat on low speed until just about combined. Add the milk and continue to beat on low until combined. Fold in add-ins. (See flavors/details in the notes below.)
  • Spoon the batter evenly into each cup or liner, filling each all the way to the top. Bake the muffins for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 15-18 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
  • Glazed muffins stay fresh stored in the refrigerator for 1 week, unglazed muffins stay fresh stored at room temperature for a few days- then transfer to the fridge for up to 1 week.

This is a delicious, rich Sally Lunn that does not have yeast--making it very fast and easy to make. I often make this recipe as muffins, which are fantastic for snacking!!!

3 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
1 cup milk
1/2 cup shortening
1/4 cup sugar

Steps:

  • Pre-heat oven to 375 degrees.
  • Sift flour with baking powder and salt.
  • Combine egg and milk.
  • Cream shortening and sugar together, and add flour alternately with liquid mixture.
  • Place in greased 9"x5" loaf pan or muffin pan and bake for 30 minutes or until toothpick comes out clean.

1 (1/4-ounce) package active dry yeast
1/3 cup sugar
1/2 cup warm water (110 to 115 degrees)
1/2 cup milk
1/2 cup (1 stick) unsalted butter, plus more for pan
3 1/2 to 4 cups all-purpose flour
1 teaspoon salt
3 large eggs, lightly beaten

Steps:

  • In a large liquid measuring cup, mix together yeast, sugar, and water; let stand until foamy, about 5 minutes.
  • Meanwhile, place milk and butter in a small saucepan and heat over medium heat until butter is melted. Remove from heat and let stand until mixture is lukewarm (110 to 115 degrees).
  • In a large bowl, mix together flour and salt. Add milk mixture to flour mixture. Stir eggs into yeast mixture and add to flour mixture; stir until a stiff dough forms. Cover bowl with plastic wrap and let stand in a cool place until doubled in size, about 1 1/2 hours.
  • Butter a Pullman loaf pan measuring 13 1/2 by 4 1/2 inches across the top and 12 3/4 by 3 3/4 inches across the bottom. Deflate dough by beating down with a wooden spoon for about 1 minute. Transfer dough to prepared loaf pan; cover and let rise until dough reaches top of pan, 1 1/2 to 2 hours.
  • Preheat oven to 375 degrees.
  • Uncover dough and transfer to oven; bake until bread is dark and golden on top and sounds hollow when tapped with your knuckles, 40 to 45 minutes.
  • Remove pan from oven and turn bread out onto a wire rack; serve warm or let cool, if desired.

QUICK SALLY LUNN BREAD

2 eggs, separated
1/2 cup white sugar
2 cups white flour
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup milk
2 tablespoons butter, melted
1/4 cup sugar

Steps:

  • Preheat oven to 350 degrees.
  • Beat yolks with 1/2 cup sugar. Add flour, baking powder and salt to sugar mixture alternately with milk. Add butter.
  • Beat egg whites until stiff; fold into batter.
  • Pour into greased loaf pan.
  • Sprinkle 1/4 cup sugar on top.
  • Bake 40-45 minutes.
