INSTANT POT BOILED PEANUTS
Steps:
- Rinse the peanuts in cool water. Place them in the Instant Pot or electric pressure cooker.
- Add the salt and vinegar. Add enough water to just cover the peanuts. For me, that was about 10 cups. Be cautious to not exceed the max fill line on your appliance.
- Place the lid on and seal. Cook on high pressure for 60 minutes than turn the appliance off and allow the pressure to release naturally. Carefully remove the lid and enjoy!

- Rinse peanuts under running water to remove impurities.
- Pour peanuts, salt, and water in the inner pot of the Instant Pot.
- Place the trivet and a bowl (any oven safe Pyrex, glass, or ceramic) over the peanuts to keep them submerged under the water. Cover and set to sealing.
- Cook on manual high pressure for 60 minutes. Allow natural pressure release for 30 minutes.
- Remove inner pot and drain water. Cool and ENJOY!

- Rinse the raw peanuts and pick out any debris. Place the raw peanuts in a large pot.
- Top with the sea salt, star anise, ginger, and black peppercorns. Cover with water.
- If cooking with the Instant Pot/pressure cooker, use the manual setting, and cook on high pressure for 45 minutes.

Steps:
- Rinse and sort the peanuts, discarding any debris or severely cracked shells.
- In the insert pot of the Instant Pot, combine peanuts, salt, star anise, and ginger. Add enough water to cover.
- Place trivet on top of the peanuts and use a heatproof dish to weigh down the trivet. This will help the peanuts stay submerged in liquid.
- Close lid and set the vent to the sealed position. Select a cook time of 80 minutes at high pressure. Once the cook time is complete, allow a natural pressure release.
- When the pressure has released and the valve has dropped, carefully remove the lid. Use tongs to remove the dish and trivet.
- Enjoy warm or allow to cool.

Steps:
- Wash peanuts until water is clear. Add water to cover peanuts and soak overnight. Put weight on so that peanuts are soaking.
- Drain and rinse several times until water is clean.
- Add star anise; cover and boil for 30 to 45 minutes, testing to see that peanuts are cooked, but not soft. Do not overcook. Turn off heat, add salt and mix.
- Cover and let stand for approximately 30 to 45 minutes.

INSTANT POT® CAJUN BOILED PEANUTS
I love boiled peanuts but in the past they've been a bit of hassle to make. They've got to be soaked in water overnight, then you have to wait for the giant pot of water to boil, the water evaporates so you have to add more water every hour, and then every time you do that you have to wait for the water to start boiling again. I knew there had to be a way to simplify the process and the Instant Pot® is the solution. While they still take time, the method is hands-off and they are still done quicker than the 8 hours alone it takes to soak them overnight using the stovetop method.

- Place water, peanuts, salt, Creole seasoning, and liquid crab boil in a multi-functional pressure cooker (such as Instant Pot®) and stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 180 minutes. Allow 25 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 25 minutes. Unplug the cooker but keep the lid on. Let peanuts sit for 2 hours for maximum flavor.
