These easy oatmeal bars are just 3 ingredients and take minutes to make. They are a great healthy snack.

1 cup creamy natural peanut butter (unsweetened)
1/2 cup honey
3 cups rolled oats

Steps:

  • Line the bottom of an 8 inch by 8 inch (can also use a 9 x 9) baking pan with parchment paper.
  • Add peanut butter and honey into a large bowl. Place into microwave and heat at 30 second intervals, stirring in between, until the two ingredients are melted and smoothly blended together. You can also do this on the stove using the double boiler method.
  • Add rolled oats. Stir until evenly combined.
  • Spread evenly into prepared pan. Apply some light pressure across the surface. Place bars into fridge to set (at least 1 hour). Cut into bars with a sharp knife. Store uneaten bars at room temperature or in the fridge.

1/4 cup chopped dried apple
1 tablespoon chopped pecans (or walnuts)
2 teaspoons coconut sugar (or maple sugar/brown sugar)
2/3 cup milk or water
1/2 cup quick-cooking oats
1 teaspoon ground flax seed
2 tablespoon crushed freeze-dried blueberries
1 tablespoon chopped slivered almonds
3 teaspoons coconut sugar (or maple sugar/brown sugar)

1 tablespoon peanut flour
1 tablespoon mini chocolate chips
pinch of salt
2/3 cup milk or water

Steps:

  • First, decide which flavor you are going to make. Then, mix together the dry ingredients in a microwave-safe single serving container such as a jar or zip-top sillicone bags (like we used). If you'd like to prep multiple servings, now is the time to do that!
  • Then, add 2/3 cup of liquid (water, or any kind of milk will work) to each serving, stirring dry and wet ingredients together.
  • Microwave on high for 90 seconds. Alternatively, you can stir in boiling water and skip the microwave.
  • Remove from microwave and stir. Serve, and enjoy.

½ cup milk
½ cup butter
3 cups quick cooking oats
½ cup crunchy peanut butter
1 tablespoon vanilla extract

Steps:

  • Heat cocoa, sugar, milk and butter over medium heat. Boil these verrrrry slowly (they will turn out better) when they reach the boiling point boil them for no longer than 90-120 seconds.
  • Stir together oats, peanut butter and vanilla with a big wooden spoon or Kitchen Aid. Pour the hot mix over the oatmeal mix and drop on wax paper.

These cookies are known through town. They take a while to make but are well worth it. Be sure to use instant oats. I have tried updating the recipe numerous times to state that, but it defaults to "Quicker Quaker Oats". It helps to stir them in a bit at a time so they cook and you can gauge the dryness of the mixture.

1/2 cup butter
2 cups sugar
1/2 cup milk
1/4 cup cocoa
1 teaspoon vanilla extract
1/2 cup peanut butter
3 cups Quicker Quaker Oats (INSTANT OATS)

Steps:

  • Bring butter, sugar, cocoa, and milk to a hard boil over low heat, stirring constantly in a heavy sauce pan.
  • Boil for just over 1 minute. Remove from heat, stir in vanilla extract and peanut butter until all is melted.
  • Add oats.
  • Work quickly dropping by spoonfuls onto wax paper.
  • Let sit until hard.
  • If the cookies are too dry, try boiling for less time or adding less oats.
  • If they are too runny boil longer or add more oats.

1 1/2 c sugar (1/2 c brown sugar if useing maple and brown sugar oatmeal)
1/2 c milk
1/2 c butter or margarine
1 tsp vanilla
3 c any flavor instant oatmeal

Steps:

  • 1. in sauce pan melt butter, milk and sugar till boiling. boil at roiling boil for 1 1/2 min. remove from heat
  • 2. in large bowl add oatmeal.
  • 3. pour sugar mixture into oatmeal and stir with wooden spoon to mix thoroughly.
  • 4. quickly spoon tablespoon size spoonful's on to wax paper or parchment covered sheet pans
  • 5. set aside and let cool completely. store in air tight container. if theres any left after they've cooled LOL
