SPICY INDONESIAN FISH



Spicy Indonesian Fish image

Another one of my magazine clippings that is disintegrating. A wonderful spicy fish that tastes wonderful with steamed basmati or jasmine rice and a green vegetable. This is a easy microwave fish dinner. Cook time is marinating and cooking time combined.

1 medium onion, sliced
2 lbs swordfish or 2 lbs fish fillets
3 tablespoons fresh lime juice (2 limes)
2 tablespoons soy sauce
1/2 teaspoon ground coriander
1/4 teaspoon crushed red pepper flakes or 1/4 teaspoon ground turmeric
1 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Scatter 1/2 onion in 10x6 inch glass baking dish.
  • Place fish on top of onion pieces.
  • Mix soy sauce, lime juice,coriander, red pepper, turmeric, salt and pepper.
  • Pour over fish.
  • Turn fish to coat with marinade.
  • Cover with remaining onion slices.
  • Cover dish tightly with plastic wrap.
  • Refrigerate for several hours (3).
  • Turn fish over again in marinade.
  • Cover lightly with plastic wrap.
  • Microwave on high power for 6 minutes.
  • Rotate dish and microwave on high for 5-6 minutes or until fish flakes easily when tested with a fork.
  • Let stand covered for 5 minutes.
  • Remove fish to platter.
  • Serve marinade as sauce if desired.

Any kind of filleted fish can be substituted in this recipe.

1 pound halibut
1 tablespoon soy sauce
1 tablespoon all-purpose flour
2 cups oil for deep frying
1 green bell pepper, diced
1 onion, diced
1 (8 ounce) can pineapple chunks, juice reserved
1 ½ tablespoons white sugar
salt to taste
3 tablespoons ketchup
1 tablespoon water
1 teaspoon sesame oil
2 teaspoons all-purpose flour

Steps:

  • Cut halibut into bite-size pieces. Place in a mixing bowl and combine with soy sauce and 1 tablespoon of flour. Let stand for 30 minutes. Meanwhile, heat oil in deep-fryer or heavy saucepan to 375 degrees F (190 degrees C).
  • Deep fry halibut pieces until golden brown. Drain on paper towels; set aside.
  • For the Sauce, saute green pepper, onion and pineapple in a medium skillet for 1 minute. Stir in reserved pineapple juice, sugar, ketchup, water, remaining 2 teaspoons of flour, sesame oil, and salt to taste. Cook until thickened, stirring occasionally.
  • Serve, by dipping fried halibut pieces into sauce, or pour the sauce over the fish.

  • Heat the oil in a large nonstick (I always prefer nonstick when dealing with fish) skillet over medium heat. When it is shimmering, add the onion with a pinch of salt and cook for 5 minutes. Add the bell pepper, ginger and lemongrass and continue cooking, stirring occasionally. Cook until the veggies have softened and the onions are translucent.
  • Add the kaffir lime leaves and turmeric and stir in. Then add the clam juice and the tomatoes, with a pinch of salt. Bring to a simmer. Add 2 tablespoons of the lime juice.
  • Add the fish in a single layer. Adjust heat to maintain a gentle but somewhat brisk (more than just the occasional bubble) simmer. Cook each side of the fish, about 8 minutes total, until it flakes apart when pressed in the center.
  • Add the basil and remaining lime juice. Taste for salt and pepper. Serve with Jasmine rice and Sambal Oelek for anyone who wants it hot.
