1 tablespoon oil
1 onion, finely chopped
1 garlic clove, crushed
2 teaspoons grated fresh ginger
2 tablespoons mild curry paste
1 tablespoon mango chutney
500 g minced beef
375 g ground sausage
1/2 cup stale breadcrumbs
2 tablespoons chopped fresh coriander
5 sheets frozen puff pastry, thawed
1 egg, lightly beaten
2 tablespoons sesame seeds
1/4 cup mango chutney
1 (200 g) tub natural yoghurt
1 tablespoon finely chopped fresh coriander
fresh coriander (to garnish)

Steps:

  • Heat oil in a pan. Add onion and garlic, cook, stirring until onion is soft. Add ginger and curry paste then stir for 1 minute. Remove from heat then transfer to a large bowl. Add chutney, minces, breadcrumbs and coriander. Using your hands mix until combined.
  • Cut pastry sheets in half lengthways. Place equal amounts of mince mixture lengthways down the centre of each pastry piece. Roll-up, lengthways, to enclose filling. Place seam-side down, onto a chopping board. Brush with egg then sprinkle with seeds. Cut each roll into 6 even pieces. Arrange over lightly oiled oven trays.
  • Cook in a hot oven (200C) for about 30 minutes, or until pastry is browned and crisp.
  • To make Dipping Sauce, place all ingredients in a bowl, stir until combined.
  • Serve sausage rolls with Dipping Sauce garnished with fresh coriander.

This dish went SO quickly after class that I didn't even get to take a picture! They are that good! The awesome part is, they are not that difficult to make!

Number Of Ingredients 9

1/4 cup breadcrumbs, fresh is possible
2 tablespoons milk
1/2 lb sweet Italian sausage, casings removed
1/2 onion, finely chopped
1 egg
1 large garlic clove, minced
1 1/2 teaspoons dried oregano
1 sheet frozen puff pastry (half of a 17 oz. package)
1 egg, lightly beaten

Steps:

  • Lightly grease a large baking sheet.
  • Combine the breadcrumbs and milk in a small bowl. Let stand until milk is absorbed, about 5 minute.
  • Transfer to a food processor.
  • Add the sausage, onion, 1 egg, garlic, and oregano; pulse until blended and season with salt and pepper.
  • Unfold the pastry sheet on a floured work surface and roll out into a 12x10-inch rectangle.
  • Cut the pastry crosswise into three 10x4-inch strips and brush each strip with the beaten egg.
  • Spoon 1/3 of the sausage mixture in a narrow strip lengthwise down the center of each pastry strip.
  • Fold the long sides in, covering the filling and overlapping slightly in the center.
  • Press the seam down slightly to seal.
  • Arrange rolls seam side down on the prepared baking sheet.
  • Cover and chill until rolls are firm, and least 10 min and up to 1 hour.
  • Preheat the oven to 425ºF while the rolls are chilling.
  • Cut the firm rolls crosswise into 8 pieces.
  • Separate pieces on the baking sheet and brush with some of the remaining beaten egg.
  • Bake rolls until puffed and golden, about 20 minutes.
  • Serve warm with marinara sauce.

Another freeze it recipe! Very attractive and you can do variations using your imagination. Sprinkle with Parmesan last 5 minutes or sesame seeds etc. This recipe is from Companie's Coming Christmas book (several of my appetizers are from this book with some changes by me). In the original recipe it says to spread the raw sausage meat but I like to half cook it, let it cool then spread in on. crumble it well

2 cups biscuit mix
1 teaspoon onion powder
1/2 cup water
sausage meat (mild or hot)
1 1/2 teaspoons cayenne pepper (depending on what type of sausage you choose)

Steps:

  • Stir biscuit mix and onion powder together.
  • Add water, mix until it forms a ball.
  • Turn out on a lightly floured board and knead 6-8 times.
  • Roll out into a rectangle about 15x 18".
  • Mash sausage meat and spread over the dough and roll up the dough starting at the long end.
  • Slice 3/8"thick and arrange on greased baking sheet about 1" apart in 450F oven for 15 minutes.

An Asian version of the old Aussie favorite. Lightly spiced and very nice! The quantity depends on the size you make, I made a smaller batch, by cutting pastry in 3 and this time I got about 40. Served with sweet chilli sauce they are delicious and I have also frozen these with great success.

500 g ground chicken
125 g Philadelphia Cream Cheese, softened
1 cup breadcrumbs
1 medium carrot, grated
1 medium red onion, finely chopped
2 tablespoons sweet chili sauce
1 tablespoon green curry paste
4 sheets frozen puff pastry
1 egg, beaten
2 tablespoons sesame seeds, for sprinkling
sweet chili sauce, extra, for serving

Steps:

  • Combine mince, cream cheese, breadcrumbs, carrot, onion, chilli sauce, and curry paste in a medium bowl and mix well.
  • Cut each pastry sheet in half. Spoon 4 tablespoons of mince mixture along one long edge of each pastry sheet. Brush the opposite edge with egg and fold pastry over to enclose filling. Lightly press edges together to seal. Brush with egg and sprinkle with sesame seeds.
  • Trim each end and cut into rolls. Place rolls on greased baking trays.
  • Bake at 200°C for 20 minutes or until mince is cooked and pastry is crisp and golden.
  • Serve hot with extra chilli sauce.

2 teaspoons Worcestershire sauce
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon grated nutmeg
1/2 tablespoon fresh mixed herbs, , chopped
1/2 teaspoon fresh sage, chopped
seasoning
1 egg, beaten
plain flour (for coating)
8 ounces frozen puff pastry, thawed in accordance with manufacturer's instructions
8 ounces sausage meat
plain flour
milk (to glaze)

Steps:

  • ----SAUSAGEMEAT FILLING----.
  • Put the first 13 ingredients into a large bowl and mix well.
  • Add the egg and mix again with a fork until everything is thoroughly combined.
  • ----SAUSAGE ROLLS----.
  • Roll the pastry out thinly into a rectangle approximately 9" x 9" and then cut it lengthwise into 2 strips.
  • Divide the sausage meat into 2 pieces, dust with flour, and form into 2 rolls the length of the pastry.
  • The rolls should be about ¾ inch in diameter.
  • Lay a roll of sausage meat down the center of each strip, brush down the edges of the pastry with a little milk, fold one side of the pastry over the sausage meat and press the two edges firmly together.
  • Seal the long edges (optional) together by flaking.
  • Brush the length of the two rolls with milk, then cut each into slices 1½ to 2 inches long.
  • Place on a baking sheet and bake at 400 °F to cook the meat thoroughly, and then reduce the temperature to 350 °F and cook for a further 15 minutes.
  • Can be served hot or cold, as appetizers or part of a main course.
