An easy lasagna recipe made in a skillet with bowtie pasta, Italian sausage, tomatoes and three kinds of cheese.

8 ounces dry bowtie (farfalle) pasta, uncooked
1 cup part-skim ricotta cheese
⅓ cup Kraft® Grated Parmesan Cheese
2 tablespoons water
¼ teaspoon ground black pepper
12 ounces Italian pork sausage
⅓ cup chopped yellow onion
2 (14.5 ounce) cans Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, undrained
1 (6 ounce) can Hunt's® Tomato Paste
1 ½ cups shredded part-skim mozzarella cheese, divided

Steps:

  • Cook pasta according to package directions, omitting salt. Meanwhile, combine ricotta cheese, Parmesan cheese, water and pepper in small bowl; set aside.
  • Heat large skillet over medium-high heat. Add sausage and onion; cook 3 to 5 minutes or until sausage is crumbled and onion is tender, stirring occasionally. Drain. Add undrained tomatoes, tomato paste, 3/4 cup mozzarella cheese and cooked pasta to skillet; stir to combine.
  • Dollop spoonfuls of ricotta mixture on top of pasta mixture. Sprinkle with remaining mozzarella cheese. Reduce heat to low; cover and cook 2 to 3 minutes or until ricotta mixture is hot and mozzarella cheese melts.

PAM® Original No-Stick Cooking Spray
1 ½ cups part-skim ricotta cheese
⅓ cup water, divided
3 tablespoons chopped fresh Italian (flat-leaf) parsley
½ teaspoon ground black pepper, divided
1 ½ pounds ground chuck beef (80% lean)
¾ cup chopped yellow onion
1 teaspoon dried Italian seasoning
¼ teaspoon salt
2 tablespoons finely chopped garlic
2 (14.5 ounce) cans Hunt's® Petite Diced Tomatoes, undrained
2 ½ cups Hunt's® Tomato Sauce
2 teaspoons balsamic vinegar
¼ teaspoon crushed red pepper flakes
9 dry lasagna noodles, uncooked
2 ½ cups shredded part-skim mozzarella cheese
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F. Spray a 9x13-inch glass baking dish with cooking spray.
  • Combine ricotta cheese, 2 tablespoons water, parsley, and 1/4 teaspoon black pepper in a small bowl; set aside.
  • Heat a large skillet over medium-high heat. Add beef and onion; sprinkle with remaining 1/4 teaspoon black pepper, Italian seasoning, and salt. Cook 7 minutes or until beef is crumbled and no longer pink, stirring occasionally. Add garlic; cook 1 minute more or until fragrant. Drain.
  • Add remaining water, undrained tomatoes, tomato sauce, vinegar, and red pepper flakes to the skillet. Reduce heat and simmer meat sauce 10 minutes, stirring occasionally.
  • Assemble lasagna by spreading about 1 cup meat sauce over bottom of the baking dish. Place 3 dry noodles over sauce. Top with 2 cups meat sauce, half of the ricotta mixture, 1 cup mozzarella cheese, and 1/3 cup Parmesan cheese. Repeat layers, ending with a layer of noodles. Top with remaining meat sauce and remaining mozzarella and Parmesan cheeses.
  • Spray underside of aluminum foil with cooking spray; cover dish tightly with foil. Bake 45 minutes. Remove foil and bake 15 minutes more or until cheese melts and sauce is bubbly. Let stand 15 minutes before serving.

9 noodles uncooked lasagna noodles
1 serving PAM® Olive Oil No-Stick Cooking Spray
1 pound Italian pork sausage
1 pound ground round
1 medium onion, chopped
3 cloves garlic, minced
1 (28 ounce) can Hunt's® Crushed Tomatoes
1 (14.5 ounce) can Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, undrained
4 tablespoons chopped fresh flat leaf parsley, divided
½ teaspoon fennel seeds
½ teaspoon ground black pepper, divided
¼ teaspoon salt
2 cups part-skim ricotta cheese
1 cup shredded Romano cheese, divided
2 large eggs eggs, beaten
2 tablespoons thinly sliced fresh basil
3 cups shredded part-skim mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F. Cook lasagna noodles according to package directions. Drain and rinse with cool water to stop cooking. Meanwhile, spray large saucepan with cooking spray. Heat over medium-high heat until hot; add sausage and ground chuck. Cook and stir 5 minutes to crumble meat.
  • Add onion and garlic to pan. Continue cooking 8 to 10 minutes or until meat is no longer pink and onion is tender. Drain meat mixture well. Add crushed and undrained tomatoes, 1 tablespoon parsley, fennel seeds, 1/4 teaspoon pepper and salt. Bring meat mixture to a boil. Reduce heat; cook uncovered over medium-low heat 10 minutes, stirring occasionally.
  • Place ricotta, 3/4 cup of the Romano cheese, eggs, remaining parsley, basil and remaining pepper in medium bowl; blend well. Set aside.
  • Assemble Lasagna: Spray 13x9-inch glass baking dish with cooking spray. Spread 1 cup meat sauce evenly over bottom of dish. Place 3 lasagna noodles over sauce, top with 2 cups meat sauce, half of ricotta cheese mixture and 1 cup mozzarella cheese. Repeat layers ending with a layer of noodles topped with sauce and the remaining mozzarella and Romano cheeses.
  • Spray underside of aluminum foil with cooking spray; cover dish tightly with foil. Bake 45 minutes. Remove foil and bake another 15 minutes or until cheese melts and sauce is bubbling. Let stand 10 minutes before serving.
