When I was in the service, I decided to learn all I could about cooking from the cooks in the galley. It was quite an adventure. I still use those skills today, particulary when cooking for a large group.-Jene Cain, Northridge, California

Number Of Ingredients 10

7 pounds bacon, chopped
5 cups all-purpose flour
14 cups white vinegar
14 cups water
6 cups sugar
1 cup salt
4 teaspoons pepper
14 cups chopped onions (about 4-1/2 pounds)
6 cups chopped dill pickles
7 gallons hot cooked sliced peeled potatoes (about 45 pounds)

Steps:

  • In several large skillets, fry bacon until crisp; remove to paper towels to drain. Add flour to drippings; cook and stir until bubbly., In a large kettle, combine the vinegar, water and sugar; bring to a boil. Gradually whisk in flour mixture; cook and stir for 2 minutes or until thickened. Stir in the salt, pepper, onion and pickles., Place hot potatoes in serving pans. Divide sauce among pans and stir to coat. Sprinkle with bacon.

Hot Potato Salad is a hearty side dish with old-fashioned flavor from Alpha Wilson of Roswell, New Mexico. Your hungry bunch will think you slaved over this simple salad.

Number Of Ingredients 10

6 bacon strips
1 medium onion, chopped
2 tablespoons all-purpose flour
2 tablespoon sugar
1-1/2 teaspoons salt
1/2 teaspoon celery seed
1/8 teaspoon pepper
3/4 cup water
1/2 cup vinegar
5 medium potatoes (about 2 pounds), peeled, cooked and sliced

Steps:

  • In a skillet, cook bacon until crisp. remove to paper towel to drain; crumble and set aside. In bacon drippings, saute the onion until tender. Remove from the heat. combine flour, sugar, salt, celery seed and pepper; stir into onion mixture. Add water and vinegar. Return to heat; cook, stirring constantly, until mixture comes to a boil. Boil for 1 minute. Place potatoes and bacon in a large bowl; pour sauce over and toss gently. Serve warm.

I have helped to make and put together this recipe. Very easy, hardest part is peeling potatoes and waiting for them to cook. Other than potatoes, recipe goes together very quickly.

Number Of Ingredients 10

7 lbs - bacon, chopped
5 cups - flour
3 1/2 qt. - vinegar
3 1/2 qt. - water
6 cups - sugar
1 cup - salt
4 tsp - pepper
3 1/2 qt. - chopped onion (about 4 1/2 lb)
1 1/2 qt - chopped pickles, your choice, or sweet or dill relish
7 gal. - hot sliced, peeled and cooked potatoes ( about 45 lb)

Steps:

  • In large skillet, fry bacon till crisp; drain well. Add flour to drippings, cook and stir till bubbly.
  • In large kettle heat vinegar, water and sugar to boiling. Gradually add flour mixture, cook and stir till thickened.
  • Add salt, pepper, onion and pickles or relish. mix well. Place hot potatoes in serving pans and stir to coat. Sprinkle with bacon and serve at once.
