Hot Orange Sauce for Wild Game image

I come from a long line of hunters and this sauce is quite often served over the Christmas Duck or New Year's Goose. I've even served it with my Smothered Pheasant or wild rice.

1 cup frozen orange juice
1 -2 orange, zest of
1 tablespoon butter
1/2 cup light brown sugar

Steps:

  • Wash orange(s) and dry.
  • Remove zest from orange with microplaner.
  • Mix zest with other ingredients into a small saucepan. Heat till just comes to a boil. Turn heat down to a simmer and cook for 30 minutes. Stir after 15 minutes.
  • Serve over wild duck, goose, pheasant or wild rice. Also very good for basting duck or goose.

Cornish games with orange sauce is an elegant, but easy recipe. It is perfect for dinner parties as it allows the cook ample time to enjoy guests while preparing. Served with buttered broccoli or asparagus and sautéed onions/red pepper it is visually appealing as well.

4 Cornish hens, thawed, rinsed and patted dry
4 oranges
salt
pepper
parsley
cornstarch

Steps:

  • Preheat oven to 500°F.
  • Prepare hens by rubbing mixture of salt and pepper into skin liberally.
  • Place on cookie sheet, breast side up.
  • Roast for 15 minutes at 500°F.
  • Remove from oven and turn breast down; pour 1 1/2 cups water over hens.
  • Turn oven down to 425°F and continue to cook for 1/2 hour.
  • Meanwhile, use a zester to obtain orange peel without cutting into pith of fruit.
  • Slice oranges in half and squeeze juice.
  • Place juice in saucepan with zest and heat thoroughly (do not boil).
  • Remove hens from oven and turn breast-side up and continue cooking for additional 1/2 hour (total cooking time is 1 hour 15 minutes).
  • Blend cornstarch with orange juice/zest mixture and heat to thicken, stirring constantly.
  • To serve: Place hen on plate and pour sauce over. Sprinkle with additional orange zest and parsley.

I like this recipe because it not only tastes delicious, and makes a beautiful presentation, but is quick and easy to put together. You don't have to be an experienced gourmet chef to serve your family these special little birds.

4 Cornish hens
1 3/4 cups cooked long grain and wild rice blend
1/2 cup chopped onion
1 tablespoon butter
1/2 cup grated raw apple
1/2 cup raisins or 1/2 cup craisins
1/4 teaspoon poultry seasoning
salt and pepper
melted butter
1 (6 ounce) can frozen orange juice concentrate
1 cup light brown sugar
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F.
  • Saute the chopped onions in the tablespoon of butter until soft.
  • Mix rice, onions, apple, raisins and poultry seasoning together in a small bowl.
  • Season the cornish hens well inside and out with salt and pepper.
  • Place 1/2 cup stuffing into each hen cavity.
  • Brush hens liberally with melted butter.
  • Place hens, breast side up in a shallow baking pan.
  • Cook for about 45 minutes depending on the size of the hens, basting once during the roasting time.
  • Make Sauce: In small saucepan, cook the orange juice, brown sugar and butter until thickened, stirring frequently.
