HOT HONEY PORK CHOPS WITH ESCAROLE AND WHITE BEANS
The spicy garlic-honey glaze for the pan-seared pork chops also forms the base of the sauce for the warm escarole-and-white bean salad in this easy one-pan dinner.

- Heat 1 Tbsp. oil in a large skillet over high. Season pork chops on both sides with 1 1/2 tsp. salt. Cook pork until underside is golden brown, about 1 minute. Turn and cook on other side about 1 minute before turning again. Repeat, turning every minute, until chops are deep golden brown and an instant-read thermometer inserted into thickest part registers 135°F, 6-8 minutes total.
- Transfer pork to a plate and let rest 5 minutes. Pour off and discard all but 1 Tbsp. fat from skillet. Add garlic to skillet, heat over medium, and cook, stirring, until fragrant and beginning to brown, about 1 minute. Add honey, red pepper flakes, and 1 Tbsp. vinegar and cook, stirring occasionally, until bubbling, about 1 minute. Remove from heat. Taste and add more red pepper flakes, if desired.
- Working one at a time, return pork chop to skillet, spooning hot sauce over, making sure to thoroughly coat both sides. Transfer to plates or a platter. Add beans, black pepper, and remaining 2 Tbsp. oil, 1 Tbsp. plus 1 tsp. vinegar, and 1 tsp. salt to sauce in skillet. Cook over medium heat, stirring occasionally, until beans are warmed through, about 4 minutes.
- Place escarole in a large bowl. Pour hot beans and sauce over escarole and toss to coat thoroughly and wilt escarole slightly. Serve alongside pork.
GARLIC-HONEY PORK CHOPS

- Combine honey, mustard, garlic, chile flakes, 3 tablespoon olive oil, apple cider vinegar, salt, and pepper in a small bowl; mix until fully combined.
- Place pork chops into a resealable zip-top bag. Pour in marinade, seal the bag, massage to coat, and marinate in the refrigerator for at least 1 hour.
- Remove pork chops from the marinade and place on paper towels. Pat chops as dry as possible with the paper towels. Set excess marinade aside.
- Heat remaining olive oil in a large cast-iron skillet over medium-high or high heat until it shimmers. Working in batches if necessary, sear the pork chops in the hot pan until the first side is a dark golden brown, 2 to 3 minutes. Turn and cook on the other side until golden brown, 2 to 3 minutes more. Turn the heat down to low and continue to cook until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), 6 to 8 minutes total. Transfer to a plate and let rest for 5 minutes.
- While pork rests, pour leftover marinade into a skillet. Bring to a boil and continue to cook until it reduces and becomes as thick as you like, 5 to 7 minutes. Pour over pork chops.

- Heat olive oil in a high-sided skillet on medium fire. Add onions and garlic. Sprinkle with a dash of salt and pepper. Sauté for about 4 minutes until they’re lightly browned and fragrant, stir occasionally to keep them from burning.
- Lightly rub the pork chops with salt and pepper, then place it on the skillet with the aromatics. Cook for about 5 minutes on each side until they form a nice brown crust.
- Gradually add the cannellini beans, oregano, and chicken broth to the pan. Readjust seasoning as needed. Cover and let it simmer on medium-low heat for the next 8 to 10 minutes. Once the pork chops reach an internal temperature of about 140° F, transfer it to a serving plate. Let it rest for 5 more minutes while covered.
- Stir in the chopped escarole to the beans while the pork chops are resting. Sauté the greens until they start to wilt then take the pan off the heat. Serve the sautéed white beans and escarole on the side with the pork chops. Bon Appetit!

- For the pork chops, dry them of any moisture with a paper towel and coat them with a little oil to help the seasoning stick.
- Make the pork chop rub by combining in a bowl 2 T steak seasoning (I used Fiesta brand), 1/4 c. grated pioncillo sugar or brown sugar, and 1 t. chili powder.
- Prepare the charcoal grill. Start the charcoal, I used 5-6 large chunks of mesquite charcoal made by barbecue and grilling favorite, BBCharcoal. You can use any blend of charcoal you like, just use plenty of it so you can get a good sear.
- When the charcoal is beginning to gray over and you can hold the palm of your hand over the coals for at least 3 seconds without pulling it away, the charcoal is ready to begin grilling. Make sure to clean your grill with a grill brush for best flavor.
