1 tsp. ground cumin
1 green pepper, chopped
1-1/2 cups TACO BELL® Thick & Chunky Salsa
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
1 can (15.5 oz.) no-salt-added black beans, rinsed
1 tomato, chopped
2 whole wheat tortillas (6 inch)
1/2 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese, divided

Steps:

  • Heat oven to 375ºF.
  • Cook and stir chicken and cumin in nonstick skillet on medium heat 2 min. Add peppers; cook 2 min., stirring occasionally. Stir in salsa; cook 2 min. Add Neufchatel; cook and stir 2 min. or until melted. Stir in beans and tomatoes.
  • Spread 1/3 of the chicken mixture onto bottom of 8-inch square baking dish sprayed with cooking spray; cover with 1 tortilla and half each of the remaining chicken mixture and shredded cheese. Top with remaining tortilla and chicken mixture; cover.
  • Bake 20 min. or until heated through. Sprinkle with remaining shredded cheese; bake, uncovered, 5 min. or until melted.

The tortilla chips on the bottom form a crispy crust, I sprinkle grated Parmesan cheese on top of the casserole before topping with the remaining shredded cheese, but that is only optional. Sour cream and chopped tomatoes are a must served with this casserole.

2 1/2 cups crushed tortilla chips
2 -3 cups cooked chicken breasts, cubed (can use cooked cubed turkey also)
1 (15 ounce) can black beans, washed and drained (can use garbonzo beans in place of black beans)
1 (15 ounce) can red kidney beans, washed and drained
2 cups canned corn kernels, drained (or use one 15 ounce)
1 (8 ounce) can tomato sauce
1 1/2 cups salsa (I use spicy!)
1 onion, chopped
1 tablespoon chopped fresh garlic
1 green bell pepper, chopped
salt and pepper
3 -4 cups monterey jack cheese, shredded (or cheddar cheese)
1 -2 large firm tomatoes, chopped
2 cups sour cream (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • Sprinkle the crushed tortilla chips evenly on the bottom of the dish.
  • In a large bowl combine the cubed cooked chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, garlic, salt and pepper; mix well to combine.
  • Spoon HALF of the mixture over top of the tortilla chips in the baking dish.
  • Sprinkle with 2 cups (or more if desired) shredded cheese.
  • Cover with remaining half of the chicken/bean mixture, then top with remaining shredded cheese.
  • Bake uncovered for 30-35 minutes.
  • Let stand for 5-6 minutes before serving.
  • Spoon onto plates and top with sour cream and chopped tomatoes.

I love this casserole. I serve it with my mexican cornbread and a salad.

2 c cooked chicken, diced
2 Tbsp fresh cilantro chopped
4 1/2 oz can diced green chilies, drained
15 oz can black beans, rinsed and drained
1/2 tsp cumin
1/2 tsp corriander
10 oz can enchilada sauce
8 6 inch tortillas
8 oz container sour cream
2 c shredded mexican cheese blend

Steps:

  • 1. Combine chicken, cilantro, black beans, chilies, and seasonings in a bowl. Blend well.
  • 2. In a lightly greased 11x4 pan, spread 1/2 of the enchilada sauce on the bottom of the pan. Top with 4 tortillas. It's okay if the tortillas overlap. Spread 1/2 of the chicken mixture over the tortillas. Top with 1 cup of the cheese and 1/2 of the sour cream. Repeat layers except for the remaining cheese and sour cream.
  • 3. Cover casserole with tin foil and bake in a preheated 350 degree oven for 30 minutes. Remove cover and top with remaining cheese and dot top of the cheese with remaining sour cream. Place back in oven for 5 to 10 minutes until the cheese has melted.
  • 4. Remove from oven and let sit 10 minutes before serving.

SOUTHWEST CHICKEN BEAN AND RICE CASSEROLE

1 -2 tablespoon butter
1/2 teaspoon salt
14 1/2 ounces diced tomatoes with green pepper and onion, undrained
2 cups shredded cheddar cheese, DIVIDED
1 tablespoon oil
1 cup chopped sweet onion
5 cups diced cooked chicken
19 ounces enchilada sauce
29 ounces black beans, rinsed and drained
1/2 teaspoon pepper
1/4 teaspoon salt
1/2 teaspoon adobo seasoning
1/2 teaspoon ground cumin
1 tablespoon cilantro
2 3/4 ounces sliced black olives (optional)
2 teaspoons cilantro

Steps:

  • Preheat oven to 350. Lightly spray a 13" x 9" baking dish with nonstick cooking spray.
  • In a large skillet over medium heat, melt butter; add rice, salt and diced tomatoes w/ pepper/onion. Heat through and pour into bottom of prepared baking pan. Sprinkle 1 cup of the cheese over top.
  • In same skillet, over med-high heat, sautee onion in the oil until translucent. Add diced cooked chicken, enchilada sauce, black beans, pepper, salt, adobo, cumin and 1 tbsp cilantro. Stir and heat through. Pour over top of mixture already in the baking pan.
  • Sprinkle remaining 1 cup cheddar cheese over top. (then scatter optional sliced black olives over cheese, if using them). Sprinkle with 2 tsp cilantro.
  • Bake at 350 for 20-25 minutes.

1 (16 ounce) can chili beans, drained
3 cups tortilla chips, crushed

Steps:

For those of you who may not know, the tortilla chips form a crispy crust on the bottom of the casserole. An easy Mexican Casserole recipe.

1 pound shredded cooked chicken meat (from a small roasted chicken)
1 can (15 1/2 ounces) garbanzo beans, drained
1 can (15 1/2 ounces) kidney beans, drained
1 can (15 1/4 ounces) corn kernels, drained
1 can (8 ounces) tomato sauce
1 cup prepared salsa
1 cup chopped red onion
1 green bell pepper, cut into 1/4-inch dice
1/4 cup chopped fresh cilantro leaves
1 tablespoon minced garlic
Salt and freshly ground black pepper, to taste
N/A freshly ground black pepper
6 ounces grated Monterey Jack cheese
6 ounces grated sharp Cheddar cheese
Garnishes:
2 cups diced (1/4-inch) ripe tomatoes
1 cup sour cream
1/2 cup chopped fresh cilantro leaves

Steps:

  • 1. Preheat oven to 350°F. Grease a 13x9-inch baking dish, then scatter the crushed tortilla chips evenly on the bottom.

1 pkg taco seasoning
1 can (15 oz.) tomato sauce
2 cups tortilla chips
1 can refried black beans
1 can mild or hot chili beans
1 small can green, mild, sliced chili peppers
1 pkg Mexican grated cheese

Steps:

  • Spray a 9" x 13" glass dish with olive oil spray. Cook chicken breasts until cooked. Chop cooked chicken and put in frying pan with taco seasoning mix and tomato sauce. Cook until tender, about 8-10 minutes.
  • Spread broken tortilla chips in glass dish. Top with chicken mixture. Mix refried beans, chili beans and chili peppers together and spread over chicken mixture.
  • Bake, uncovered for 25 minutes. Remove from oven and top with grated cheese. Bake 5 minutes more and serve with chopped tomatoes and shredded lettuce.
