Hot Feta-and-Tomato Spread image

Number Of Ingredients 6

6 ounces feta (preferably French)
2 plum tomatoes
2 tablespoons extra-virgin olive oil
2 teaspoons finely chopped fresh oregano leaves or 1 teaspoon dried oregano, crumbled
freshly ground black pepper
Accompaniment: pita toasts

Steps:

  • Preheat broiler.
  • Crumble enough feta to measure 1 cup and spread evenly in a shallow 2-cup flameproof baking dish (roughly 9- by 6- by 1-inch) or a small deep flameproof platter. Thinly slice tomatoes crosswise and arrange, overlapping if necessary, on feta. Drizzle oil over tomatoes and sprinkle with oregano and pepper. Broil mixture 2 to 3 inches from heat until cheese is bubbling, 5 to 8 minutes.
  • Serve spread with pita toasts.

1 (14 ounce) can artichoke hearts, drained, chopped
8 ounces feta cheese, crumbled
1 cup mayonnaise
1/2 cup parmesan cheese, shredded
1 (2 ounce) jar diced pimentos, drained
1 garlic clove, minced
chopped tomato, garnish (optional)
chopped green onion, garnish (optional)

Steps:

  • Preheat oven to 350°.
  • Mix all ingredients together.
  • Place mixture in a pie pan.
  • Bake 20- 25 minutes or until slightly browned.
  • If you like top with tomatoes and green onions.
  • Serve with pita bread, bagel toast, crackers or even tortilla chips.

300 g piece feta cheese
2 tablespoons lemon thyme leaves (or use herbs of your choice)
1 tablespoon olive oil
olive, and crackers to serve

Steps:

  • Preheat oven to 180 C.
  • Cut two 40cms lengths of foil and layer on top of each other.
  • Top with a piece of baking paper.
  • Place feta in middle of baking paper.
  • Sprinkle with thyme or other herbs.
  • Season with salt and pepper.
  • Drizzle with oil.
  • Fold paper and foil edges and turn upwards to seal and form a parcel.
  • Place parcel on a baking tray.
  • Bake 20 minutes till feta is heated through and slightly soft.
  • Serve warm with crackers and olives.

1 package (8 ounces) cream cheese, softened
1-1/2 cups (6 ounces) crumbled feta cheese
1/2 cup chopped roasted sweet red peppers
3 tablespoons minced fresh basil or 2 teaspoons dried basil
Sliced French bread baguette or tortilla chips

Steps:

  • Preheat oven to 400°. In a small bowl, beat cream cheese, feta cheese, peppers and basil until blended. Transfer to a greased 3-cup baking dish. Bake until bubbly, 25-30 minutes. Serve with baguette slices or chips., Editor's Note: To prepare in a slow cooker, mix ingredients as directed. Pour into a greased 1-1/2-qt. slow cooker; cook, covered, on low until heated through, 2-3 hours.
